Girl I have a recipe that y’all would LOVE! I call it “ranch potatoes”. Peel and dice up (pretty small…like the dice of a dice) however many russet potatoes you want according to how many people you are feeding. Put them in a buttered casserole dish with some dabs of butter and salt and pepper and cover with tinfoil. Cook them on 375 until they are tender. Separately mix 16oz of sour cream with a ranch seasoning packet. Once the potatoes are tender add the sour cream mixture to the potatoes (I eye ball this part according to how many potatoes I did. Any leftover can be used for potato chips!). Just mix it with the hot potatoes. The cover generously with sharp cheddar cheese. Put back into the oven uncovered and cook until the cheese is nice and bubbly!! So dang good and goes great with bbq chicken or steak!

These all look delicious ! My family loves to cut zucchini and squash in chunks , spray with olive oil spray , and season with whatever you choose. I use Kinder “The Blend” and air fry them till they are crisp. Sooo good and so easy!

Try topping the Loaded Mashed Potatoe Casserole with a light drizzle of heavy cream in addition to the cheese or whatever. It turns into almost like a crispy souffle on top as the cream bakes, but makes the potatoes extra creamy and rich at the same time.

Hello to our favorite Bunkey couple! We went and bought the ingredients for the Loaded Potato Casserole on Friday evening. Let me just say that the first time you eat this it’s very good, but I think that it is kind of like lasagna, it just gets better the second and third times! I mean, YUM! I used to make a minestrone type soup that had both yellow squash and zucchini in it. We had my son-in-laws parents over for that and Italian sausage sandwiches at his request! Her question to me was how did I get her son to eat yellow squash! She was shocked! I chuckled and pointed out to her that while he picked out the zucchini and set it in his wife’s bowl, he blissfully ate the yellow because he didn’t recognize it in a different color! We both enjoyed a good laugh at his expense!! He never lived that down!

I've never seen the movie so have no clue what it would be?? I keep wondering why everyone keeps singling out Zucchini squash separate from any other squash? There's Yellow, Acorn, Spaghetti and a whole lot more that I love them all but they are all Squash. Including Zucchini. I'm just curious. My parents had a 3 acre garden and we grew up eating good. Where they had the 3 stolen items that looked like glowing potatoes and the witch doctor was taking people's hearts out of their chests while they were still alive and lowering them into the lava pit. I make a version of those potatoes with Mexican Velveeta and some sauted chopped green chili or bell peppers with onion. And crumbled chorizo instead of bacon. And you can steam whole potatoes in instant or boil them in skin and then peel and chop them.
