If you live anywhere near a Middle Eastern market you can get pine nuts there for way cheaper! I'm taking like a 16oz for $8. In Arizona there's an amazing place called Baiz market that I frequent. They have PRIME medjool dates too. If you're in Cali I'm sure there's a market like it! I suggest going to these markets for herbs and spices too! Super fresh quality for way cheaper in more heafty amounts! They have such unique and interesting ingredients in general, it's like a self care trip for me shopping at Middle Eastern markets because I have so much fun discovering new things, haha.

I’ve been making the first coconut lentil curry for a few years now. I add sweet potatoes to make it heartier. We aren’t vegan at all but it’s a tasty, easy and cozy meal.

Lentils & i have a love hate relationship. I love them, but uhm... once they leave my tummy it gets.. well... 😅 i've been vegan for decades & i've eaten probly half a field of lentils by now & this has never changed for me, sadly. A lot of ppl say this about black beans. If i eat them on a regular basis they don't have the negative effects, but lentils just don't give up. But these look amazing. I love garbanzo beans! And that dress is def your color! Ty for the recipes!

So we Indians use lentils almost daily in our dishes. SO to counteract the problem you mentioned, we compulsorily use a lots of garlic and ginger in any lentil dishes. Additionally, we also use a spice called as asafoetida also known as hing helps in enhancing flavour and aids digestion. You can try this.

For ginger and chilli (hot pepper for you Americans) I always keep the leftovers just whole in the freezer. And then slice or grate them when frozen for any dish I need. I’ve even managed to make the ginger milk pudding thing with the frozen ginger, which relies on the enzymes from i believe the skin of the ginger, worked out with my old frozen left over knob of ginger. If you are going to cook the chilli it works great. And even sliced or diced thinly in a salad dressing or something it works great. Though the texture of the once forzen chilli isn’t as crisp as fresh. But both chillies and knobs of ginger I don’t use that often, so it’s nice to have them ready in the freezer when I do need them, and it taste way nicer then the dried powder (though that can also be nice). Fully agree it’s easier to grate frozen or even slightly thawed ginger, then just fresh ginger.

Have you got the Ottolenghi Flavour book? There’s a one pot baking tray ragu in there (so it all goes in the oven, very lazy friendly), it’s lentil based and by far my favourite ragu recipe! 😍

If you're anemic add blackstrap molasses to anything (I like oatmeal). Molasses has an insane amount of iron in it and it's the type that's more easily absorbed by the body

On the pine nuts thing: i like to use sunflower seeds instead. It doesn't taste the same, but it does the job! Plus, you can use the raw sunflower seeds to make creamy sauces, akin to cashews :)

You should definitely try turkish lentil patties! They are delicious and it is called patties but you don’t fry them or something.you just boil lentils and that’s the only cooking part.

My supermarket sells red lentil flour penne pasta (quite dry texture though even if you boil the buggery out of them) and I make 'as good as real' sausages with soaked red lentils with a few other things added which are awesome if not exactly low fat. I tested the sausages in sausage rolls and none of my family noticed they are not pork sausages :)

Ya ever watch someones videos on x2 playback? I get a few more when I do that. Red lentils and salad are my fav, I have that for almost every meal, or other meal. Something I do like more though are beans, I think white pinto beans or navy beans are great in the meal w red lentils.

2 14 Dal is the hindi word for bean...... I think it's hindi, it might be older, but each bean has a name followed by "dal." Urad Dal, chana dal, etc.
