Just made this and it's phenomenal! Best bread. I used 2 tbsp of aluminum free baking powder from Trader Joe's and ended up with roughly 3 and 1/4 flour after grinding so I added an additional tbsp of Greek yogurt.

It's great! And from my experience, this kinds of breads are even better when you use cupcake mold pan. The crust is better, and it's a small dosages of goodness. Thank you for your recipe ❤

Just finished making this and putting it in the oven .This is my second time ,the first time I messed up on the baking powder amount and only put in 2 tsp.instead of 2 Tbsp (oops)lol but it still was edible !On this one (and the first one too as far as the yogurt)) I got the amount right for baking powder but found that though I completely stirred the yogurt up ,it still was was too thick(not enough water content)to get a consistency that was stirrablebut after adding some water it worked pretty well .Thanks for the receipe -works out well for me since I cant afford to buy eggs right now but i do have a oats and the other stuff.

I've been grinding my oatmeal for years in a blender and adding it to my whey protein powder to make my drinks more of a meal replacement shake. Have always wondered if this could also be used for baking but wasn't sure if it would all hold together. Been wanting a bread substitute without having to use flour, so I will be trying this. Do you measure out 3 cups of rolled oats & then blend that to make the flour, or do you blend rolled oats & measure the 3 cups after it's been blended? I figured you wanted 3 cups of the finished flour; mine was much thicker than yours. Too thick. I see it took almost 1& 1/4 cups of rolled oats to make the 1 cup of flour. Can you advise me?

No. You can no use yeast, because there isn't gluten In the oats. Gluten binds to yeast for raising. (I read that somewhere...)

Non dairy yogurt can be used as a substitute.

Any plant based milk (almond, rice, oat or cashew nut-based), or try using tahini paste or any nut butter as a substitute or swap. If you are concerned about sugar there are many brands of nut butter that just use nuts and nothing else as an ingredient. If so put a (strong, large) spoon right down into your jar and slowly stir the (natural) oil back into it as this oil is often present in one or two ingredient nut butters as an oil that floats on top of the jar.

Yes, or with sour cream even. If you are vegan try soya or coconut yoghurt, if available.

You could also try the same amount of any nut butter (smooth or crunchy, if not allergic to them). Some recipes even use tahini (crushed sesame seed paste) . Any of these will give it some moisture & add a nice nutty flavour. The coconut yoghurt or sour cream would add moisture. Be aware that nut butters are quite rich, so if you are trying to lose weight ( they contain a fair amount of fat, but healthy fat)may be better sticking with the yoghurt, milk or sour cream instead. Hope that helps !
