Not enough people appreciating the skill of the waitress here in the comments. I've worked in hospitality in upmarket places before (not as expensive as this though). That waitress in the first parts of the video was really good. She talks about the dishes with just the right amount of information. She's not overly stiff and not unfriendly. Opening the BBQ abalone foil like that while standing takes practice, as does the way she pours the fluid components of the dishes on the plates. Good posture too. She's also consistent with her plate grip -- not what I would use, but maybe it's the way she was trained.

I live in Chicago and putting ketchup on a Classic Chicago Hotdog is considered as an insult. There are even some hotdog spots that won't serve you ketchup just to keep the dogs safe and ketchup free. So if you want to get some ketchup for that hotdog of yours go somewhere else.

I read a book not to long ago about chef Jacques Pépin. He started his cooking career right at this very hotel. I had read that the head chef was very orderly, but Jacques did whatever he was told. He went from prepping things, to working at the stove, and making delicious meals for all the guests

Some people refer to meat as pork, beef, chicken, lamb, etc... Seafood is not considered meat per say. Tgis is the language vegetarian people use.

Joel, agree with you that seafood is also meat. What I wanted to say was that many people , who refer to themselves as vegetarian - do not consider shellfish, eggs or fish - as 'meat'. It's a ridiculous concept, but in Australia where I live, vegetarian can eat 'non meat' produce while vegans dont't eat anything that has animal protein including eggs. This is why ther term 'meat' is loosely defined to make a distinction between vegetarian and vegan.

Crazy how underappriciative most comments are, the level of craftsmanship and talent going into the conception of these dishes is incredible. Having eaten at several michelin restaurants, the food is always incredible. Some of you should visit France and see that food is a lot more than just burgers and fried chicken...

This was very inspiring and gave me kind of paradigm-shift. Ducasse basically left all the decorations away, everything is reduced to its essence. And for patisserie: Savarin et crème vanille! Words cannot discribe this beauty enougb.

At first my impression was the serving was too little, then the food just kept on coming and coming. The variety alone I think is worth it.

For all those that complain about the portion, this is a course meal, it's usually 10+ dishes of small serving. You will be somewhat full after the whole meal, at least I do. You don't have to go to a 3 star restaurant to experience a tasting course, there's a lot of cheaper options that offer just as good of an experience. Most of these michelin star restaurant's food aren't even that good anyways.

I walk past this everyday never felt the urgent to check it out, there is a kebab couple of blocks down 6 euros you get a kebab, fries and a drink. Fucking delicious!

I live in Seattle, Washington, USA. I have been to Paris , France in 2018. The next time I go ( after COVID) I will travel again and eat at this fabulous restaurant . I wonder and you would know more than me if you could have a a snack at the bar? Do they have a bar?

I've always dreamt of eating at a 3 michelin star restaurant, but this dissappointed me somewhat. It's just so pretentious to me to offer 20 gram portions of expensive ingredients and call it a meal.

I used to think that way before I tried Michelin starred restaurants myself. In reality, it’s not just the food but the experience as well. After my first time at a Michelin starred restaurant, it totally changed my view on them. I think if you have the means, try it out with someone you love and I think you’ll have a good time.

After a lot of disappointing experience from the other restaurants owned by Alain Ducasse, I thought I didn't want to go to this one. Your video just show its better side and change my mind. Maybe I will try to stay at their hotel Once, the service is just top notch.

Very impressive. But are all the food items shown in the video part of the same tasting menu selection, or are they individual a la carte items? Because many of the items (e.g. abalone, caviar, sea urchin, truffled dish) are very expensive.

These are parts of a long meal. If they brought all the food out at once, it would probably not look too bad. Besides, they want you to be hungry enough to actually want to eat the food.

There are often 8+ courses. If you're getting 8+ plates, you can't have big portions.
