I cannot have soya so I managed to find some chickpea based miso paste and am looking forward to trying out the vegan recipe using the shitake base. Can you use a different milk for it instead of soya? I primarily use rice milk or almond milk.

I like to add konjac to my tonjiru, and sometimes thinly sliced burdock root if I can find it at my local Asian market. I also like using Yu Choy for the slightly spicy flavor and various mushrooms in my miso and other Asian soups (especially hot pot). Enoki, king oyster, and shiitake are favorites.

I make “miso jars” for my husband to take to work every day. He loves aburaage , green onion, wakame and a little bit of leftover rice. I put it all in a mason jar with a tablespoon of miso paste and 1/2 a teaspoon of dashi powder. At work he just adds steaming water and mixes it all up! Homemade “instant” miso soup! (I just asked him if he would like me to put a little cabbage in this week!)

I make homemade dashi with Kombu and Shitake. Miso Soup every day too (Vegan version)! I prefer the white/yellow miso. I've never thought of adding soy milk! and am going to try that. For some of my winter miso soups I add daikon, spinach and chestnuts! I find chestnuts an amazing addition :) Thank you!!

I just made the pork and veggie soup but as I didn't have pork, I just opted for a veggie version. I'm sure the pork adds a super nice flavor and depth but it was also wonderful without. Thank you! Also, every since I discovered your channel, I've been having miso soup daily and my body loves it :)

I love the dashi packets! I've never seen them before. I usually just use the granules, but I'm going to look for them. My favorite miso has kabocha in it!

I used to use granules one too until I found out that there is so much sodium contained in that one. then, now I'm mostly using packets one without any sodium or MSG. I may have commented on this one before, but as we have been making miso soup for a solid year now I wanted to update how we do it. Especially now that we are no longer in Japan. My technique is simply to use whatever vegetables I have, so it varies in flavor a lot. However here in England we have less variety I believe, than we did in Japan. So my go to basic for miso soup is mushroom, spring onion/leek, and soft tofu. (We cannot find silken tofu in England hence far).

Made the second one with poached eggs and rice!! Glad I added the eggs, my pork wasnt the best, I cant really find any small amounts here that are any good :( but it was really tasty anyway! I have only recently begun to make miso soup. I like to use granulated dashi. I have gently simmered sweet white onion until tender in the dashi then added in wakame, tomato and chopped green onion. Very tasty with Aka miso. I really enjoy your videos and your recipes are so easy to follow. Thank you.

You Could, but not my recommendation since it's going to be too salty. You just want to make sure to reduce the amount of miso paste if you are opting for bacon^^ Good luck!

Hi! you can soak in water and drain. just repeat the same process until you don't taste any salt if you only have a salted one. Miwa-San, I used dashi-no-moto to make dashi stock, but then it got a bad, kind of metallic taste when I tried to cook the veggies (carrot and turnip). Was it mistaken to make the dashi soup first and then boil the veggies? Should I add the instant dashi powder towards the end, just before the miso paste, instead? Thank you!

If you taste it bit metallic, it's a great idea to add dashinomoto towards the end to retain the dashi aroma. kombu stock can cause the some kind of bitterness for cooking too long. I usually do just like you do though cause I'm just too lazy to have a multiple steps! haha Let me research more! Thank you for sharing!

Inspired by you I just made some miso soup for breakfast with what I had in my fridge; I used carrot, celery, leek, onion, daikon, shitake, ginger, kobu dashi bonito powder, red miso, homemade vegetable stock and a little fresh basil, I cooked some wakame rice noodles to add as well. Not very traditional but I like to mix things up and use what's on hand. Luckily I had just been to a market where you can get a few asian ingredients. It tasted great, miso soup for breakfast from now on! I'd like to get a square pan to make eggs next. I live in Maine in the U.S., happy to have found your channel for quick healthy meal ideas, thank you Miwa
