Shepherds Pie Recipe below: Since the good folks here don't do recipes and I need them, I figured I should help Make America Cook Again and share it. Easy Shepherds Pie from STCG 1 C of frozen carrots and pea in a warm cast iron pan Add a lb of Ground beef/veal/pork A little salt and pepper Add minced garlic to taste (bloom in the center of the pan before mixing) A a tbsp of tomato paste from a tube (easy to store.) Add 1-2 C beef broth Add a cornstarch slurry (Tbsp water and corn starch) Simmer til thickened Top the cast iron with store bought mashed potatoes Garnish with paprika Bake at 350 for 15 mins

Alton Brown debunked that mushroom myth back in 2000 on the Fungal Gourmet episode of Good Eats. J Kenji Lopez-Alt also did tests with it only adding about 1% water to the mushrooms, which only takes seconds to evaporate at temperature. It’s unnecessary to keep pushing out of date ideas, and with the prevalence of food-borne illness and deregulation running rampant right now, it might be a much better idea to wash and add a bit of heat time. The old ways are not always the best ways.

From what I had learned in my food safety class is that you should wash your mushrooms if they're still whole, but do it right before cooking or else they will get slimy. If they are pre sliced, do your best to wipe any dirt or grime on the mushroom and maybe do a quick sprits of water with them in a colander then quickly pat them all dry with paper towel.

Philly Spring Rolls recipe below: Since the good folks here don't do recipes and I need them, I figured I should help Make America Cook Again and share it. Philly cheese steak spring rolls from STCG 1/2 C ea Diced onion, green pepper 1 C creminis all diced. Soften in fying pan. Add a pound of ground veal, beef, or diced rib eye Add dash of salt and worchestershire. Finish cooking. Get some provolone slices, cut into strips. Spread a spring roll wrapper out. Fill with 2/3 Tbsp of meat and some cheese, roll like a firm burrito Seal edge with a wetted finger. Set on to a parchment lined sheet. Coat the prepared rolls in olive oil Bake at 350 for 20-25 mins

As a former "produce guy", almost anything can end up in the floor and into the rack, especially the freaking strawberries, those stupid containers are junk and split open every chance they get. You really should wash stuff anyways, it's probably been in dirtier places than the floor before it was even packed and delivered to the store.

The thing is, most of these farms are using some kind of illegal labor and not providing adequate, available restrooms... so... where do you think they poop on massive fruit and vegetable farms? Yep. In the middle of the field. Wash your fruits and vegetables. At least rinse them (even mushrooms - rinse gently and drain on paper towels at least).

So they would make some sort of meal out of the scraps of the Sunday joint and the vegetables they had in their kitchens. What they came up with was a minced beaf dish with mashed potato on top, and it was just called 'Cottage Pie' for ease of reference.

Easy Lobster Mac n Cheese from STCG Melt 1/2 C butter Cut the thick side of the lobster tail shell with scissors Follow by slicing down through the tail but leaving the belly plate. Split open the tail flat. Brush on butter, Salt, Pepper, old bay. Grill flesh up for several minutes, then flesh down to finish. In remaining melt butter, add 1 C panko, S&P. Set aside Drain noodles, add cheese packet, butter, milk, plus a cap of vermouth, pinch of old bay, mix. Pull Lobster meat from shell. Dice coarse chunks. Add to pasta (reserve a topper) Pour noodle mix into a cast iron pan. Top with panko mix. Garnish with lobster. Bake in the oven.

That mushroom rant Sam went on was really insightful! I had no idea you shouldn't put your mushrooms in water. And it makes sense! I always wondered where that extra water came from and I was always told to always wash your veggies in cold water. Damn I love SAM!!!!

Max is the best editor yet I've seen doing streaming. I will say Sam may seem to over exaggerate his tasting reactions. At least he actually eats the food he makes. I have tried some of his cooking at home and the food does taste amazing, making it all your own in the end. I watch him everyday and appreciate the time they ask put into making these videos. Thank you Sam and Max and Chance, please keep them coming. P.s. I'd like to see something with chicken thighs with skin on, bone-in, crispy. Thanks guys!

12:53 If you want the tail to be whole you can simply follow the steps from Sam as he was cutting the top shell with A heavy duty sharp kitchen scissors. Instead of cutting through you can use your index and middle fingers to run through from the bottom, just make sure you get under the lobster meat. Gently push your index and middle finger upward to have the lobster tail exposed out of the shell but still keeping it connected to the shell. Slap some garlic butter on top and cook them with steam. I know this was off topic however I wanted to share this. I love lobster tails.😋
