I wanted to share my families (old) recipe for a cranberry salad. It's a little work, but so worth it and can be made a day or two ahead... 2 (of the small) boxes red jello. I used to use the cranberry flavor but the last few years haven't been able to find that flavor. Now I use black cherry, but any red will work (use the flavors you like). Or use 1 red and 1 orange flavor. Next, 2 each of.. Apples Oranges Bananas All peeled and chopped, seeds removed to fit through a grinder. I've done this part with a food processer and it'll work, but I perfer grinding & makes a better texture without turning them into juice and it's how grandma did it. If you do use the processer, just pulse untill you have some pieces left without making it too watery. 1 bag of cranberries also put these through the grinder. 1 cup of rough chopped walnuts. You can grind these, but I like the bite of rough chopped. Now the families original recipe calls for 1 cup of sugar too. I completely cut that out. With the jello, apples and bananas, imo it's already plenty sweet enough and I prefer a tart salad. But feel free to add the sugar or even less sugar if you'd like. It won't ruin the outcome. Start by making the jello according to package directions, put in fridge to start jelling up. Then grind the fruit, all of it. You can just chop the bananas if you want chunks for bite, but if you grind them the flavor gets better mixed throughout, same for the walnuts. By this time your jello should be starting to thicken. You want it chilled and thickish, but not fully set. That said you dont want it too thin either because your fruit will float and not mix through as well, it will float and you'll have a inch or better of plain jello on the bottom. If you have to wait on the jello, chill your ground fruits. So once the jello is at the right consistency mix thoroughly the ground apples, oranges, bananas, raw ground cranberries and chopped nuts. Once everything is well combined put it in the fridge to fully set up. This is one of the best cranberry salads Ive ever eaten. But I am biased since I grew up eating it. There wasn't a Thanksgiving or Christmas this wasn't on the table. This recipe is very forgiving, you can change up the fruits if you like. The main goal is to balance the jello with the fruit so you don't have a inch of jello on the bottom with no fruit in it. You can also zest the oranges and add for an even more sour bite but I found just cutting out the sugar and using granny Smith apples nicely balance the sugar already in the jello and the apple pectin with the jello is enough to make a firm salad. You can even put this into a nice mold and it comes out beautifully for a pretty table service. I line my mold with plastic wrap so there's no issues. You can also set the mold in hot water to let it come free without any problem. If you do try it, I hope you like it. Like I said it is some work, but it's such a forgiving recipe and tastes so good it's well worth it in the end. If you're a small family you can cut everything in half too and it'll still come out tasty. Happy Thanksgiving Everyone🦃🍗

Yum the last one is really tasty. I did use very small onion slices. I am so glad I made both the classic one (first recipe) and tried something new. Guests arrive in 30 minutes. Perfect timing. Thanks for sharing.

I've used the 2nd recipe for years, but I add things... a lot of things. Mostly spices. Cinnamon, nutmeg, sometimes allspice, ginger, one time even cardamom. Also vanilla. In fact, my nephew jokes that I murdered Santa Claus and got his secret Christmas spice formula to put in there. Yipes! 😦

Not hard to believe...I do too and eat it throughtout the year with many meals. It goes so good with most everything. But for the holidays, I make my own.💖👍🏼🦃🎄

Sorry, I'm not a cook ☹️. I was a little frustrated and disappointed from my lack of some of this knowledge. The first recipe didn't show how to easily remove the pith from the outer orange skin, nor did it explain if some of the pith could stay on the orange. The simmer time - how long for that step? The cranberries didn't all pop. I didn't know if that's okay, or if I should press them to pop, or if it's personal preference. If anyone would like to share their suggestions, that would be appreciated. Thanks!
