Check out these 4 methods of setting up the Weber Kettle for INDIRECT Grilling.INDIRECT cooking is an essential skill you will need to learn to master and maximize the Weber Kettle. INDIRECT grilling can lift your BBQing to the next level.
Indirect cooking is essential to cooking fantastic proteins, such as
- Pork Spare Ribs at 225-275f
- Beef Ribs at 225-275f
- Chicken Wings at 325-400f to get crispy skin but not burnt
- Pork Belly Burnt Ends at 270f
- Crispy Pork Belly at 300f
- Various vegetables
So many choices :-)
It can also help with cooks that need two zones, a direct and indirect side. You can
- Reverse Sear Steak
- 2 zone veggies such as Grilled Corn
- Seafood
- A perfect way not to end up with burnt BBQ

Great, but the missing part is managing the to and bottom flue, AND where to orient the top flue with respect to the indirect zone. I have never really understood flue orientation in terms on making heat and smoke travel intentionally with respect to the food, though I can surmise. Interested to hear a discussion around managing the lower and upper shutters and orientation of the upper lid/shutter!

Very informative and useful as moving from gas to charcoal. Gotta to say though, I struggled to concentrate as fascinated by your blend of accents. Would I be right in thinking there’s a bit if north east, Humber and Yorkshire and a smattering of Aussie

Very good guess. I grew up in Hull, moved to Lancashire when I was mid 30's and have been in Australia for the past 20 years. So pretty spot on 😀😀

i think that vortex thing would be great for the wok

I don't think you'd be able to put the wok directly on top of the vortex, as it would starve the air flow but it would definitely work with the wok on the grill grate, allowing the air to flow. The wok would get super hot :-) Awesome Stir fry

It totally depends on how open your top and bottom vents are. The vents determine the temperature not the method. Set up your method and test different openings for your BBQ and your set up method.

Great videos, keep up the great work. Out of curiosity do you ever cook with a bullet smoker such as the ProQ or WSM?

Hi, unfortunately no :-( I am missing 2 weapons from the arsenal, a WSM and an offset. We have 2 kettles, Pit Barrel, Primo XL Kamado, Komodo Kamado, Yoder YS640 Pellet Grill, 2 Stumps Gravity Fed Smokers, a Weber Go Anywhere and a Traeger Pellet that I won in a Comp and is still in the box. I won a Yoder Offset, never used it and sold it, just because I thought it was too much work. I also won a Pro Q and sold it :-( I really do need to get a bullet smoker!!!!!! I intend to do classes next year and one class will be about choosing a BBQ and I do need a bullet for that, so I can show the full range, it is now officially on my list.

Hectors Smoke House you certainly have a world of BBQ Bling, Shane you had two perfect ones with the Yoder and the ProQ. While I don’t do comps I’m trying to convince the wife I need another as I have a Kamado Joe Big Joe, a Weber family Q a Bullockhead Creek 24” baby Brangus offset (currently being made hopefully ready next week) but now thinking I need a bullet too. I’ll keep showing the wife your videos that I’m not that I Cleary don’t have enough.

Your offset sounds great. There is a huge part of me that wants to cook on an offset but I am too lazy and like my sleep on a night :-) That's why I use the Stump or Yoder for overnight cooks. If I had to get rid of everything or could only take one BBQ to a Desert Island, it would be the Komodo Kamado. Perfect for Low/Slow and Hot/Fast, similar to your Big Joe. I have a new KK but it is living in the garage until we move early next year, I cannot wait to get it out and use it.

I've had a 23" for 3-4 years and recently sold it, even though its still in the garden. The new one is a 32", it looks a beast :-)
