To form the onigiri:
Wet your hands to prevent the rice from sticking to your fingers (you can use cling film if you wish).
Take a pinch of salt and rub your hands with it.
Take a good handful of rice, put your hands in a "mountain" shape and shape the onigiri into a triangle shape without changing the position of your hands (only the rice ball rotates).
If you have trouble forming them by hand, there are plastic molds that greatly facilitate shaping.
plain onigiri:
Form an onigiri and put a sheet of nori seaweed around it.
Plum onigiri:
Shape an onigiri, make a small hole in the middle then incorporate the umeboshi plum in the hole.
You can add nori seaweed around it if you wish.
Bonito onigiri (katsuobushi):
Mix the bonito shavings with the soy sauce until you get a homogeneous mixture.
Partially shape an onigiri then make a small hole in the center.
Take some bonito/soy sauce mixture and put it inside the onigiri.
Finish shaping, taking care to close the hole so that the filling is in the center of the onigiri.
You can add nori seaweed if you wish.
Onigiri with furikake:
Mix a little furikake with your rice beforehand then form your onigiri.
