Not anymore. I worked as a baker/confectioner for long time. At the end of the week I was absolute exhausted. I prefer work in the kitchen as a pastry chef. I start around 10-11. And don’t need to moving and lifting the 25-50kg sugar and flour bags.

@@AdamFTC hey! Yes indeed it takes a toll on your health. When I worked at the restaurant was long and busy but no heavy lifting for sure. For one more reason I like the bakery is because you finish and you go, at the restaurant was never ending special requests, late shifts and then early next day.. 🤪 however, loved it souch! 😊

Hi Kris! Thank you for all your time and effort to make those videos! I decided to search for videos about baker’s life, and so glad to find out your channel, as I feel like baking is something that I love and always enjoyed doing. As you said in one of your videos “you don’t become a baker to earn a lot of money and it’s not a job that can be forced”. Your videos were so inspiring and I can say that it seems that you also love what you do and you do it from your heart and that is satisfying to watch, people that enjoy and are happy with their jobs! I wish that I will also reach that point soon! Sending you many greetings from Berlin! ❤ P.s i hate to wake up early, but when you do something that you love you can over come the fact that you have to wake up from 4am-5am 😂

Finally I know what you do from 4.15 am haha, I need to try the coconut macaroon! Peeling those apples omg, it takes a while I imagine! I'm not a fan of croissants but those look delicious! Pain au chocolate my favourite ever :) Rolling brioche still your favourite activity I see 😀 I loved the ending where you share more of the behind the scenes, people don't believe but making videos on KZbin really takes a while, so happy you shared that piece too! That was my favorite shift. 5am to 1pm baking kolaches, now I dont like any shifts after 7am. Thanks for your awesome content!!

Hey Kris! This was so informative. Like seeing all the bakes and some displayed in the bakery. When I worked, I went into NY city early and it was not as empty as Madrid. Some people were just coming home from nites out! Haha. Your bakery has so many varieties, one more delicious looking than the next. I still want to try the stuffed croissants- have never seen them for sale any where. What was in the pot you stirred right before making the pastry cream- it was dark and thick? Vanilla paste? And thanks for showing us part of the home set up of lighting etc. That last photo looked great- what was it? It looked like your chocolate puff pasty with cherries? Super delish! Mmmmmm. Some days are crazy, especially Fridays and Saturdays, now during this festive period streets are absolutely full 😃🕺🏻 Double bakes are so common in Europe, pretty much every bakery makes them. This type ( I mean extremely generous) are not that common but in other words almond/hazelnut/pistachio croissants are common. Do you think about other ways/things you can use instead of cling film wrap? It’s such a wasteful product but always been used in kitchens

Totally agree, there are ways to reduce the amount of cling film and hope there were more chefs on the same page, unfortunately I don't own my bakery or kitchen so we apply the practiced ways . What are your suggestions on this?

What do you eat for breakfast? I feel like I don't have time to make anything, and when I was working in kitchens, I'd go without eating, because there would be staff meal at some point, but now working in a bakery there isn't one, so not eating before my shift really takes its toll on me throughout the day. I have to rely on caffeine, energy drinks, and my adrenaline, lol. It's definitely not healthy.

Hi Austin, I don't really have such a think as breakfast or lunch, it's more like having a piece of something and move on. I don't eat at home before leaving, I am not hungry at that time, so first bite would be something sweet with my morning coffee, later some bread maybe. So i kind of agree with you when you rely on caffeine, I eat properly when I come home, I got used to it :)

Hello, yes it’s small but busy bakery, we have our set menu but on top of that we keep adding something new pretty much every week :) Now i do 10hrs but 2-3 days per week. At the moment I do part time. 🙃

Hey! No, not really, this video was recorded in Madrid so at that time people are coming back from the parties, so I hardly ever walk alone on the streets. Madrid feels like a safe city :)

As usual so so inspirational.... that morning wake up at 4 to working meticulously at the bakery to coming back and creating videos ....whoa !!!! I have recently opened a cloud kitchen bakery and it's the cleaning everything after baking that drains me out complete:) How do you manage to clean those gigantic mixers?

Hey! Baking + prep days are more or less like this, obviously mep is not the same everyday but we know what we do :) Normally I don’t stay till midnight when i work next day, but at home sometimes feels like another shift📽️ Thank you so much!
