I bought 4 chickens from costco last week and we have 10 bags of diced rotisserie chicken in the freezer right now, and I think they will work just as well as the canned chicken. I'm definitely making that sweet potato thing. The lemon chicken looks so yummy but my autistic son and dil don't eat salad, so I might add some finely chopped onion and zucchini to it.

I buy rotisserie chickens and bag them up like this too. It is so handy to have cooked chicken ready when needed. I add it to all sorts of things like white chicken chili. I also make chicken broth out of those chickens.

Love the recipes. I keep canned chicken in my pantry. I usually make chicken salad with red and green grapes, chopped celery with miracle whip, Dijon mustard, Italian seasoning, garlic powder, pepper and salt. A little squeeze of lemon juice. Sometimes chopped apples.

Great recipes! Thanks. One thing about baked casseroles (and I make them often) for me is- that I cover it while baking. I cannot stand a dried out/hard noodle on the top. I might give the panko topping 5 mins uncovered to slightly crisp it, but no more than that. Just a preference for moist casseroles, I guess.🤷🏼

For toasted Panko, add a little butter to your skillet first and let it melt before you add the panko, you pretty much just stir the melted butter into the panko and it has that golden brown look in no time! I will take and, put this on top of even mac and, cheese from time to time.

I just made a chicken casserole from Kirkland canned chicken! Last of the leftovers still in the fridge :) I followed a tuna casserole recipe that was in my memory. I feel the same way about raw meat Angie, but I use food handling plastic, latex or nitrile gloves. Roll them off your hands so they turn inside out and no icky touching. My dad would roll his eyes about it, as he was a butcher and always cutting up whole chickens he got on sale to put in the freezer. Sorry Dad. 😊

I made Spanish Rice a 'Roni and used Walmart Rotel tomato can knockoffs in place of fire roasted ones. I also added rotisserie chicken about 1/2, Trader Joe's roasted frozen corn, about a teaspoon of TJ's "Everything but the Elote" seasoning, and topped with green onions and Mrs Cubbinson's Fiesta tortilla strips, jalapeno slices, 'n sour cream. It's a yummy dinner.

It isn't ground chicken, it is chunk chicken breast.

I love these frugal and delicious recipes. I recently discovered the chicken in those pouches. It was on sale, so I tried it. They was really good, but, I think I like the texture of the canned chicken better. Really good way to make a complete and nutritious dinner for your family. TY. 💕💕💕

I made the Mexican rice and chicken last week when my sister -in-law was here and i only had the spanish rice you said it could be used unstead so my husband loved it and said remember this recipe it needs to be a regular.
