Great compilation! If you mix the cream in at the same time or right after you have dissolved the gelatin in the hot coffee, it's amazing and turns out more like a coffee panna cotta. Delicious dessert to which you can also add extracts and/or dissolvable sweeteners. I use decaf so I can eat it after dinner.

Yes! I do that with sugar free jelly and cream. And I sometimes add more gelatine and put the mixture into lolly shapes and they make neat little creamy jellies!

For the Puppy Chow I found a work around that saves mess & product loss... I use a giant pot to melt the stuff in & just add the pork rinds to the pot. Then leave in pot, come back & stir periodically until it cools; All the liquid sticks evenly to the 'chips' with no extra clean up or waste. BAM!

I cut the hero tortillas into strips and fried in shallow avocado oil. Flip them over and they puff up like a fry. I salt when I take out and drain and dip into my keto ketchup and they’re pretty close to a French fry!

**UPDATE** Reporting back on my experimental clusters: Success! I sprinkled them with allulose in the muffin cups then put them in the fridge to firm up. Yum!! Chocolatey crunchety pleasure! It is indeed important to break up the rinds into small pieces to assure the pork flavor isn’t crashing the party. I think I will add some crushed macadamias next time for extra flavor dimension. Try it! p.s. The silicone muffin cups are awesome; the clusters popped right out without sticking. ~~~~~~~~ Thank you for this compliation! Fun stuff. I didn't want to use plastic bags for the pork rind thing. I just dumped the busted up rinds (good tip, there) into the bowl with the chocolate/peanut butter goo. Worked fine to coat the rinds that way. Now I'm in the middle of an experiement: I filled silicone muffin cups with a few of the coated rinds per cup to make nut-cluster looking units. Then I sprinkled allulose to coat the clusters as thoroughly as possible, hopefully without overdoing it. They are in the fridge now. Tasted great immediately, but I think they will be better once the chocolate firms up a bit. If it works, I can imagine adding chopped macadamias to take these babies to a whole. Nutha. Level. As always, you guys are a treat to hang out with. Hugs from California! 🥰

They are VERY Smooth and Creamy style. I say that as kinda a warning, because I personally liked mashed potatoes to be more chunky hearty, but for a creamy mash, it was spot on. I think it could even pull of a potato bisque soup if you wanted. I already used it to top a shepherds pie.

Have made the Mozz and it is definitely simple to make. Have also made Paneer (which has a similar process but compresses the curds so that it is almost like a hard tofu - heard about it on Seriously Keto). Both were great. Also make Chris Cooking Nashville's mashed potatoes, white gravy and spreadable Butter Mayo on a regular basis (as well as the America's Test Kitchen Dream Biscuits, using Victoria's Keto Kitchen Bamboo APF 2.0). Lots of good keto recipes out there. Thanks for testing them for us.

If you make mozzarella, you can make ricotta from the whey afterwards. Ricotta means re-cook, cook for a 2nd time

Pour the coffee jelly in a shallow pan before it sets. Then cut the coffee jelly into small cubes. When you pour the cream over the cubes, it can be enjoyed like a boba drink.😋🤙🏽

Hi ladies . I normally don't leave a comment but I wanted to share that I have absolutely enjoyed the Carnivore Mash. I made it for the third time recently. I use a large cookie scoop and flash freeze it, then individually wrap, and just take one out when I'm wanting some. I heat it up with additional cream cheese, 20 sec at a time, stir, until warm and creamy. I love it! Thank you for sharing the Parm Balls and Coffee Jelly. I'll be trying them both soon. I was really happy when you guys posted the cheeseballs recipe with egg whites only! Its the hardest part of keto for me, is to find good recipes that dont smell or taste like eggs..I've tried every way I can , but I have never like eggs. Ever since I've been a kid. I can tolerate egg whites , though! I find myself scouring youtube for recipes without yolks lol. And these were really good! Thanks for all you post!!

@@sunniedarkness9951 I made the egg pudding and you really can't taste the eggs. It's good, really filling. DO NOT TASTE IT OR SMELL IT TILL THE NEXT DAY. Maria put cinnamon in hers, I left it out. Since you made it, you know there is eggs in it and the texture is a bit grainy, but that is the only difference. I wonder if an immersion blender would work better, but haven't done it. Also, I haveChoc Zero chocolate syrup, thinking of adding it to the mixture.

I've begun substituting egg whites instead of whole eggs in most of the keto dishes I make. I can't handle the strong yolk flavor in sweet dishes. In savory dishes or alone whole eggs are great.

I make my own paneer cheese which is basically Ricotta with all the liquid drained out and pressed into a solid form. It’s delicious and works not only in Indian dishes but you can fry it as a snack.

I agree with the fresh cheeses. I make my own Greek yogurt as well. I find ricotta easy. You can get ricotta out of the leftover whey from yogurt making so win/win. Thanks for the links! Definitely trying those puffs, lol. I think they’d be a perfect accompaniment to ant protein packed for lunch. 😋

I must have missed the parmesan ball video - gotta go view and make that one! One that blew me away this year is called Keto Flourless Buns with Bamboo Fiber - the channel is called 'Low Carb/Keto recipes and having fun Vernaz'. I was completely skeptical - I thought I was baking bouncy little rocks with so much psyllium husk fiber powder in there. But they came out fluffy and light and airy! I was amazed. I've made them three or four times now. They work better as rolls than for buns because they will deflate if you don't let them cool in the warm oven or sometimes if you store them in the fridge. But fresh - they're brilliant. I was also amazed at the 'Ridiculous Brownies' that have diet soda in them. I saw those on Rahul Kamat's channel but he got it from tiktok or somewhere. I used Zevia to avoid the aspartame. They were surprisingly delicious! And my favorite pizza hack is something I just happened to see in the grocery store one day - Arnold brand Keto Sandwich thins - 12 protein apiece and I think 3 net carbs. I open one up, put my sauce, cheese, and toppings, and pop into my air fryer oven for a few minutes. Voila! Two tiny pizzas. My favorite toppings are Sweet Baby Ray's SF BBQ sauce, mozz, shredded chicken, and red onions in an attempt to make some healthier version of the BBQ pizza that Pizza Hut used to serve in the 1980s. Thanks for all your great content, ladies!

After beginning Ketogenics end of September 2022, in 6 months I had lost 40 lbs but more inches from stored fat loss! Now I feel ive lost another 15-20 lbs but more inches around my barrel! When you hit goal, raise your carbs a little each week until you stop losing. That will help you maintain but you need to know how to tweak as you age and/or exercise differently. Hope that helps.

When we used to eat jello I whipped the jello and mixed it with whipped heavy cream. Gives an extremely different texture. Wonder if that would work with the coffee jello. Might also whip in a little cream cheese.

Try Keto syrup, stevia and cinnamon. Cover pork rinds with syrup then sprinkle stevia (or your sweetener of choice) and cinnamon. Doesn't make them tooo mushy and tastes great. Pretty sweet.

Sorry I forget what Americans call them - those chocloate balls made from butter,cocoa,sweetener and peanut butter. Anyway I have found a secret of adding some of the sugar free sports drink sachets (ones with citric acid or similar ) gives them a slight fizzy sensation plus the extra bonus of adding the flavour you pick, when you eat them.
