Oh my word! Just made these, and they are soft in the middle, crunchy on top...I reduced sugar to 1 cup only, I used sunflower oil coz I dont have butter, and my dough didnt sit over night. Still tasty as hell. So another recommendation is half the recipe to get 9 muffins instead of 18, lol, it's only me and my hubby, but now I think I'll share with our neighbour (who I've never spoken to except for the hallway hellos. Thanks Ina, love from Africa

Thank you. When she put in 2c of sugar 😬, I always reduce my sugar n some people dislike it, but most are appreciative of it being not ‘too sweet’. I find American desserts overly sweet for my preference.

Saw this recipe early this morning, decided to try it. I made my own granola for this banana muffin recipe and it's so good! Since I was running low on some products, I had to use a little oat flour and half the amount of sugar with stevia to make it stretch. Nice and moist

Hi Ina! I have been freezing my muffin batter in the muffin tins and then taking it out of the freezer and baking them for years they come out perfect. I just add about 10 minutes to the baking time. They still are very moist and you can't even tell that they've been in the freezer overnight.

@@RochelletheRealtor you can leave them in the freezer for a month at a time, I make double batches cook one and freeze one I put parchment paper over the top so that they stay fresh

Brushing the top of the muffin pan is a cool trick I've never heard of before. I also use parchment paper muffin cups so I don't have a muffin stuck to paper. Get them at target.

this one is so good! 100% recommend my first batch was way too simple. also i had to decrease the measurements cause i didn’t wanna make too much muffins and the. I changed/added some ingredients like sliced almonds and hemp seeds. i only used 1 banana mashed it up and then u sweetened coconut flaked and boy oh boy it was heaven😊 also if you put banana in this recipe, and depending on the amount of flour you mix, you really only need 3/4 to 1 cup of sugar!
