You forgot to mention NEVER EVER use a glass to scoop ice out of the ice bin. It might chip or break and get lost in the bin so you’ll have to melt all the ice to remove it.

It's also not sanitary in restaurant work. Glass can have bacteria on it that will live in your icebox. Anyone that's ever had to empty one can tell you how dirty they can get.

On the topic of the sphere and cube ice, if they're both equally tall, the sphere should have almost about half the surface area of the cube, theoretically making it melt slower. I still think those spherical ice machines are ridiculous because of their asking price, but there may be something to spherical ice as a concept other than for appearance.

they are new, the knock-offs will see a price-drop happen sooner or later, sure the thermal conductivity is important but someone will figure out that you can down-size a little bit and get away with a lot less metal.

I used your advise of dropping the ice on the ground to create smashed ice. Had fuzzy bits floating in the drink, which caused a new wave and now we have to isolate.

Question: Is clear ice also preferable to use when crushing/cracking ice for shaking/mixing the cocktail? Else I feel it would defeat the purpose of having clear ice in the actual drink, but not in the Boston shaker, due to contact with the "impurities" so to speak.

Why not just use cold liquor with cold water (if you want dilution) instead of stuffing ice in drinks and reducing the qty of the actual drink in the glass??
