As usual, if you know a simple rule you can figure it out. Even if you've never done it before. For butchery, as a general rule just find a natural seam or joint and slide your knife through it. With very few exceptions you don't need large amounts of force or to chop through any bone.

I love how so many of these videos boil down to "Just be gentle with it" (just like a Swedish lady...) No cleaver required, just patience and a sharp boning knife. Never done a whole chicken but I do chicken quarters all the time because my roommate hates touching raw meat and this is how I prove I'm worth keeping around.

This is one task that isn't inherently simple, though once you learn how it's done it is extremely simple, most of it is just knowing how to separate the pieces from each other, the rest is cutting skin.

Note that they are not "butchering" a chicken (that would mean they would start with a live chicken), they are simply being asked to cut up a whole chicken.

As times change so does the language. While butchering was once both the act of slaughtering and preparing meat from a animal carcass. Now in days they are seen as different professions because of how our industry works. You have slaughters at slaughter houses that dispatch, gut, bleed and clean the animal for it to be shipped to butchers shops that then buy these prepared carcasses to cut and sell to the average consumer. In other words, every slaughter house worker is a butcher but not every butcher are slaughter's.

I'm not one to argue with a chef, but I've never seen bone-in chicken breast around here that has the drumette. What I usually find has the ribs still attached beneath the breast.

Valorn Frenched airline chicken breast/bone in breast are more popular in fancier restaurants. The ribs aren’t commonly used because the only way to include them with the breast would be to use unnecessary excessive force. Chefs don’t have the time for that, which really isn’t worth doing
