Grandma: I’m gonna put the cheese first Mexicans: *pls say sike right now*
@us246795 жыл бұрын
not necessarily, although I never make my quesadillas like that, mainly because I either use a comal or make my own harina, like a real Mexican, everytime I'm in Mexico, I go to this amazing taqueria and they make amazing quesadillas but like in the video they put the cheese in first then when its meltedish, they scoop it into the tortilla and finish it off.

Some fun facts about quesadillas! :) 1.- Quesadillas in Mexico are mainly done with corn tortillas (blue corn tortillas are more delicious). Northern part of the country is more used to cook with flour tortillas. 2.- The types of cheeses we use to make quesadillas are mainly quesillo (or queso oaxaca) and manchego. 3. There are also fried quesadillas. 4. We use a thing called "comal" to make quesadillas, not a pan. 5. You can add a lot of thing inside of a quesadilla and it'll make it more delicious! (picadillo, hongos, tinga, flor de calabaza, etc.) 6. When you make a "quesadilla" with two tortillas instead of folding it, its called sincronizada. :D

STEPS FOR A GOOD (AND REAL) QUESADILLA 1.-Put in your comal (or pan if u don’t have it) a tortilla (DONT PUT OIL OF ANY KIND, JUST PUT IT LIKE THAT IT DOESNT GONNA STICK) 2.- Put your real Mexican cheese on top of the quesadilla(it could be Queso oaxaca or manchego) 3.- This step could change, you can just bend this tortilla and that’s it. Or you can put on top of this another tortilla and just turn around this to get a little of cooked and THATS IT ok

I have worked as a cook, not a chef, for years and I make quesadillas. I would argue that adding oil is stupid because it means you can't cook as hot. The tortilla cooks faster than the cheese melts especially if you have anything other than cheese in it. For another thing quesadillas are way better if they are loaded it adds flavour.

@Beauty one no necesitas hacerlas en un comal, se hacen perfectas en un sarten, pero supongo que esa es la imagen tradicional de la doña haciendo las quesadillas, tambien me enojo que no le pusieron suficiente queso, las quesadillas son para mamarlas en queso, hasta aqui mi reporte Joaquin opinion de parte de un mexicano for some of my non-Spanish speakers' friends: You dont need to cook them in a comal, you are just fine also a flour tortilla or a corn tortilla is find, in the north of Mexico must likely in Monterrey the flour tortilla is a normal thing and we have a thing called "sobaqueras" which are manly women that specialize in making these big flour tortillas and put them under their armpits, and most important you need to go crazy on the cheese, the main point of a quesadilla is to stuff them with a lot of cheese, if you can find a "Mexican" cheese that is called queso de hebra you would have the closest to a real Mexican quesadilla, also you can stuff them with litelally anything as long the quesadilla have lots of cheese

OSTRICH6784 it probably stuck to the pan because you didnt let the pan heat up enough thats why one should wait to heat it up. A traditional tortilla doesn’t use butter because it doesn’t need the extra flavor and or fat.

Step 1: Buy cheese that isn't pre-shredded. They coat it in cellulose (wood pulp) so it doesn't clump together, but it also causes it to not melt as well. Block cheese melts faster and sticks to tortilla better, so you don't have to choose between burning your tortilla with melted cheese or having a golden tortilla with half melted cheese that makes a mess when flipping. If you are patient and do it on a lower temperature you can get both, but at that point, the time you saved for not shredding it yourself is lost. K I'll shut up now.

Here's how to make a quesadilla the mexican way: 1) Ditch half of the crap they have there. You just need your stove, a comal, tortillas and cheese. 2) Heat up the comal at low heat. 3) Place the tortilla flat on it with cheese. No fat, it won't stick. I've been making quesadillas for 20+ years and never had to grease the comal/pan. 4) Put that cheese on top and wiat for it to start melting. 5) As soon as it starts melting, fold that SOB into a nice quesadilla shape. Don't use a spatula, use your figertips. Spatulas are clumsy and you'll make a mess. 6) Let it cook for a minute or so and then flip it, again use your fingertips. If it hurts, that's good. You'll develop calluses and soon you'll be flipping tortillas like a true mexican. 7) Open it a bit to see if the cheese's done melting. 8) Add a bunch of hot salsa and enjoy.
