It looks so good and comforting! It's getting warmer in the Southern Hemisphere so this is a bit out of season but I hope we still get some colder days so I can try this.

Another great pasta recipe!😊 I love when you include your real life with the dogs 🥰 I appreciate the breakdown of each step of each component. Makes it look easy. Not gonna lie, I'm going to use butternut squash when I make this since I have an abundance of it

Thanks, Terri! Honestly, I think they know what's up, and do what they can to make an appearance. Haha. I think it'll be a bit better with fresh roasted butternut squash. That was fully my intent the whole time, but I decided a shortcut was the way to go for the video. Let me know how it turns out!

This roll-up lasagna is impressive! It's difficult to get a nice pumpkin in here UK, but I'll give it a try with a butternut squash 😊 I love your video style and beautiful presentation too!

Thanks! I think it'll be better with home-cooked squash, actually. You'll want to use about 2 1/2 pounds (not sure what the conversion is on that) of uncooked squash. Just roast it until tender and blend.

Also! Can you make a raw-style chocolate pie? I've heard of some made with avocado, sweet potatoes, coca and a raw crust with nuts and oats. I would love to see your spin on one!

I agree! I think that vegans and omnivores alike will enjoy this. Isn't that how it goes? You make something special for yourself, and everyone thinks your dish looks better than theirs (especially if it's a dead bird!). Let me know how it turns out.

The cashew bechamel sauce is still one of my favorites ✨️Great way to use it in these Party Lasagna Rolls. That's my name for it since there are individual rolls that work well to serve on little plates at a party 🥳

I’ve done a pumpkin lasagne a few times through the years and they are definitely worth doing for sure. I think I’d just do that rather than roll it all up, but I’m sure the rollups look great at a party.

OMG..Wish I could show you a picture of my Thanksgiving pumpkin roll ups...but they were amazeballs! The non vegans loved it and these are probably the best leftovers I have ever had! ( I had to sneak a bite early morning) wow what an awesome recipe! We will be using the filling recipe for other dinner ideas too! Thanks again!! Hope you had a nice Thanksgiving!

Brandy! I'm so happy you enjoyed them. Funny enough, I went to visit my mom for a couple of weeks, and that was one recipe that she demanded that I cook for her. The only thing I did differently was to add Impossible meat. I just browned up a package, seasoned it well, and then sprinkled it on right after the tofu. I have to say it was a nice textural and flavor addition.

My dad taught me to use dry noodles- never considered rolling- and using a loose sauce.

I've never tried it with dry. I know there are certain noodles that are "no boil", but I didn't know you could do it without cooking the regular noodles at all. Interesting.

Honestly, I have no idea. I did a few "party" food recipes recently, so maybe that's where my head goes. Or maybe the fact that I associate hot dishes like this with a party? Something to talk to my therapist about. :)

Thanks for watching! And the pups say thank you, too. In terms of sweet potato... I don't see why not. I think it's worth a shot. Squash tends to be a bit "lighter" and less starchy, but I still think that sweet potatoes would be nice.

Question - would I have to prebake and then freeze individual serving? I want to make this as a big ol batch of frozen meals. I figure I can just make a bunch of mini lasagnas in some freezer/oven proof containers.

I wouldn't. Freeze it uncooked, and then just bake it from frozen. You might have to increase the time a bit, maybe cook it covered for the first 10 or 15 minutes as well.

They should. Just make sure they're al dente before rolling them. Overcooked GF noodles are not pleasant.

Can we use something else instead of tofu? I stay away from soy because it messes with your hormones. Lol. What would you suggest to replace the tofu?

The tofu is already a substitute for ricotta. I think there may be some vegan ricotta on the market, if you can find it in your area. Is it a personal issue with tofu, or is it just the general so scare that is perpetuated? Just wondering if you personally have sensitivity with soy, or if it's just anti-soy rhetoric that has you worried? If it's not personal, then look into the research a bit more before refusing to enjoy tofu. (my 10 cents)
