I’ve done a pumpkin lasagne a few times through the years and they are definitely worth doing for sure. I think I’d just do that rather than roll it all up, but I’m sure the rollups look great at a party.

This roll-up lasagna is impressive! It's difficult to get a nice pumpkin in here UK, but I'll give it a try with a butternut squash 😊 I love your video style and beautiful presentation too!

Thanks! I think it'll be better with home-cooked squash, actually. You'll want to use about 2 1/2 pounds (not sure what the conversion is on that) of uncooked squash. Just roast it until tender and blend.

OMG..Wish I could show you a picture of my Thanksgiving pumpkin roll ups...but they were amazeballs! The non vegans loved it and these are probably the best leftovers I have ever had! ( I had to sneak a bite early morning) wow what an awesome recipe! We will be using the filling recipe for other dinner ideas too! Thanks again!! Hope you had a nice Thanksgiving!

Brandy! I'm so happy you enjoyed them. Funny enough, I went to visit my mom for a couple of weeks, and that was one recipe that she demanded that I cook for her. The only thing I did differently was to add Impossible meat. I just browned up a package, seasoned it well, and then sprinkled it on right after the tofu. I have to say it was a nice textural and flavor addition.

Question - would I have to prebake and then freeze individual serving? I want to make this as a big ol batch of frozen meals. I figure I can just make a bunch of mini lasagnas in some freezer/oven proof containers.

I wouldn't. Freeze it uncooked, and then just bake it from frozen. You might have to increase the time a bit, maybe cook it covered for the first 10 or 15 minutes as well.

I've never tried it with dry. I know there are certain noodles that are "no boil", but I didn't know you could do it without cooking the regular noodles at all. Interesting.

They should. Just make sure they're al dente before rolling them. Overcooked GF noodles are not pleasant.

Can we use something else instead of tofu? I stay away from soy because it messes with your hormones. Lol. What would you suggest to replace the tofu?

The tofu is already a substitute for ricotta. I think there may be some vegan ricotta on the market, if you can find it in your area. Is it a personal issue with tofu, or is it just the general so scare that is perpetuated? Just wondering if you personally have sensitivity with soy, or if it's just anti-soy rhetoric that has you worried? If it's not personal, then look into the research a bit more before refusing to enjoy tofu. (my 10 cents)
