I disagree with your bias against fried eggs on breakfast sandwiches. Hear me out. I understand how with sunny side up eggs, you might have too much yolk which can be messy on a sandwich. This can be remedied by simply cooking the eggs over easy or over medium. This way, you'll have a better amount of yolk as to be both not be excessively messy and to add some extra sauce in the form of delicious yellow goodness. Furthermore, Its not even accurate to say that scrambled eggs are immune to messiness as when you crunch through a nice toasted bagel you'll often squeeze bits of scrambled egg out of the sandwich. Even with the wrapping this can still occur. Other than that I thought this was a really nice video and I will be sure to take advantage of your wrapping technique the next time I make a breakfast sandwich.

Amen! A good fried egg cooked over easy or over medium on a carbon steel pan with some butter is one of the best things to bite into when putting together a breakfast sandwich.

Something I always like to do to prevent my sandwich from spilling out when you bite into it, is to scoop the inside bread out from the top of the bagel. It locks the eggs into place and makes the sandwich way less messy if you don’t wrap it.

Really enjoying your videos! I follow lots of cooks/chefs. I am skilled in the kitchen yet I still always learn something new from your vids. I love eggs in any style they come, (except for over cooked, which is just a crime)! I always soft scramble but I find them frustrating to eat on a sammy, much the way you feel about the fried egg. Personally I make an omelet in a small pan and fold it up to fit on the breakfast sammy, less squishy and easier to eat.

Excellent cud video, me personally would go for an egg fried in ring mould. Then steamed for 30 seconds. I find it's much more structurally sound and wont fly out the side.

Personally, I still feel the way I make my breakfast sandwich works better for me because I have an order to follow: Toast the bagel (or bread) in a butter, fry the bacon in said toasty butter, (jalapeno bacon is my favorite) season some butter, spices and peppers with the bacon grease, than using an egg ring, fry a very slightly scrambled egg (still fried, just broken on purpose) into a perfectly bagel sized ring. If you get the opportunity to try this I'd appreciate any feedback! It's my favorite!

Honestly runny yolk on a breakfast sandwich (I personally go for a brioche burger bun) is super good, If you're really afraid of a mess just keep it on with a lid so the yolk goes jammy. But imo good burgers and sandwiches should be messy within reason.

for traveling purposes yea runny egg is bad, but if you have a plate in front of you nothing beats that first bite and the runny warm yolk splooging all over the contents of your bagel sandwich. especially if you put some hashbrown on your bagel sandwich and it absorbs into the potato and creates a masterpiece of flavor

as a humble new jersey resident, an authentic breaky sammy is unbeatable. the key to the egg is frying it but breaking the yolk so it’s kind of a patty of marbled yolk and white, which prevents mushy scrambled eggs that might be squished out from the bagel and prevents the sogginess of a runny yolk. and american cheese is always the way to go.

My easiest solution is... Split a fresh bagel and put some ham and slices of (pepper jack) cheese on and today in a toaster oven while I cook my egg. For the egg I spray some Pam in my microwave safe bowl and crack one egg in it. I break the yolk. Then into the microwave with a paper towel on top. Cook enough so the yolk is no longer runny (everyone's microwave is different but I use level 4 for 1:20 min). They are both usually done around the same time so it's time to construct. Bagel bottom, egg, salt, black pepper, red pepper flakes, bagel top. It's perfect for my tastes. 😎👍

Somebody finally said it. Fried eggs with runny yolks are aesthetic but impractical on any sandwich. I don’t typically opt of a soft scramble but I’ll just go over medium so the yolk is still soft but doesn’t spill everywhere. Also pro tip #7 of this video is not using long, soft strands of bacon that are too chewy to bite through and end up just coming out in one piece.

Also check out Refika's Kitchen for her take on making cream cheese--simple, fast, and no guar gum in it. I think it is in her third episode of her English channel from a couple of months ago.

he can be a bit opinionated, even though he diligently tries to not come off as rude to people half of your tastebuds are basically imaginary so just eat what you want to, just as ethan will eat whatever he loves to and there's just something delicious about food that you've eaten to the point of it becoming a habit, no matter the inconvenience and if it's something you're used to, it's barely an inconvenience and fried eggs on sandwiches isn't even on odd preference, personally i think the taste trumps out here

For those in my age bracket (old as f’ing dirt). Your sandwiches, tho I wish I could do these but I can’t, have a few things that are no-no’s for me. So in my version, I assemble all my ingredients. . .cause once I begin the process, it only takes a minute. Requires one of those microwave egg scramblers (a certain home party kitchen utensil is my favorite). Okay . . .go. . . 1.spray the inside generously with nonstick kitchen stuff 2. Break egg into the egg scrambler, followed by a pinch of salt if it is allowed to you, and a pepper mill turn of pepper, and 2generous pinches of some shredded cheese (I’ve used cheddar , Mexican blend, mozzarella. Or anything on top of the cheese bin when assembling ingredients. 3. Lovingly and gently froth with fork (tho if you use too heavy of one, you’ll be ordering a new ceramic scrambler. . . Believe it or not I frequently use a plastic fork for this step. . .) and place in microwave for 45-55 seconds on regular cycle 100% power. 4. Whilst eggs cooks I split a whole wheat English Muffin in half and slam into toaster til well toasted. 5. My toaster usually finishes the muffins just as the egg is finishes. . Grab the muffin and place upon each half of warm toasted muffin, one half of deli sliced favorite cheese, mine is deli med. cheddar. 6. Quickly remove the container from oven, slam the egg onto half the sandwich,cover with other half of muffin and cheese and use residual heat from toasting and scrambling to meld into a perfect egg sandwich 7. Wrap. If it’s for my breakfast double thick paper towel whilst I put ingredients away and pour some coffee...then eat and drink. If I have made for daughter, son in law to take to work. . .use parchment as it retains heat slightly. And most of their suppliers during this time were considered non-essential so they cannot obtain at work like they used to. Anyway. . .though I would love the meat, bagel, and the cream cheese. . ,I must forego them. So . . .hope this and Ethan’s wonderful recipe gives you guys a jumping off place for your own experimentation.

Flip the fried egg and sush it with a spatula in the pan. The yolk evenly will cover the entire top forming another layer and will cook solid in seconds

Nope. Runny eggs are bomb. Famous sandwich shop in my city does it like that. Super tasty. Bagel sandwiches suck. Use fresh baguette instead. Tomato jam, bacon, rosemary aioli with sharp cheddar. Superior to this.

Honestly, eggs are best enjoyed freshly prepared. Eggs are generally not good for meal prep because they’re very sensitive to overcooking when you reheat them. What you could do is prep everything minus the eggs, cook the eggs on the day you’re eating, and put everything together to toast.

why doesn't anyone ever explain the art of the medium fried egg. they was like the most important breakfast egg of all time. the yoke should be like jelly, and maybe a teenytiny bit runny. I am always very disappointed when i see people put a runny messy egg on a sandwich. it's so unnecessary. it's also a really important skill to have because they are not exactly the easiest thing to master. it's pretty easy to miss the perfect window. Seeing a perfect egg when i cut through an egg sandwich is probably my most favorite thing to see ever.

you just pop the runny egg with a knife or fork before putting the top on then it doesnt explode when you cut it/bite into it. no hot egg sandwhich should be firm in my opinion, always runny or im dissapointed. also you should never have that crispy stuff on the bottom of an egg. its being cooked way too hot if it develops that crispy film.
