They make low carb lasagna noodles or instead of a lasagna you could make a spaghetti casserole and layer cooked low carb spaghetti noodles on the bottom then your cheese mixture then your meat sauce and then more cheese on top. When it is done you can portion and freeze the leftovers and reheat them. The come out really nice this way. For a single you would have a lot of meals and over time it would be very frugal. I make this with regular pasta all the time. I have a video if you are interested.

Oh and a super super cheap meal my family loves? Easy peasy broccoli soup. 1 litre of chicken stock and 1/2 litre of water. Add 1 lb of frozen broccoli and bring to a boil. Then, simmer for 30 minutes - add 2 tsp of butter and a litre of milk. Blend in a food processor (or in a blender in batches) and add some Italian seasoning and pepper. You can also add some salt if the chicken stock was low sodium. Serve with some grated sharp cheddar on top. Yum. Makes about a gallon (3 litres) for around $5!! Seriously delicious, cheap and easy. Do NOT use margarine or low fat milk - you need the fats to hold it together without flour and it just tastes way better.

Love the weekly meal videos. I have to pre-marinade my chicken next time. Great idea. At my house last week dinners (M-F) included: Monday=Meatloaf, Tuesday=Steak, Wednesday=Tuna Salad, Thursday=Cabbage Sausage Skillet and Friday is always Burger night at our house. This time we used bagels (which had been on special at my supermarket) as buns. It was delicious!

I had never heard about overnight oatmeal until you showed us how you make it.... now I LOVE it.. cant start my day without it!! Thanks for the meal prep ideas... I am single and always looking or ideas on how to portion and prep for one person meals.

enslavedheart I tried it, but just can't handle the texture. Now I make oatmeal muffins on Sunday and have those instead. We do sugar-free, flour-free, banana oatmeal muffins. They're easy and cheap - my two favourite meal essentials.

I'm going to try the overnight oats, that sounds good. Thanks for sharing!! I ate homemade soft ground beef tacos. Tonight it was smoked turkey on potato bread. My hubby was in the hospital for four days and I was still able to stick with homemade meals for breakfast and dinner. I did eat at the hospital cafeteria during lunch on two days. I'm getting better at being more frugal on lunches.

Thanks so much for the tips you give us. They have helped me a lot. You could make your marinade yourself? It's rather inexpensive and less chemicals for your body. There are a lot online but most are a combo of vinegar, oil, spices. You can make it Italian with Italian spices.... Greek with Greek spices etc :) Hope this helps.

The spray/aerosolized dry shampoo IS very expensive, especially when priced per-use; convenience is extremely pricey! Because the main/active ingredient is corn starch that does the oil-absorption, buying a container of corn starch from the baking/cooking section of the grocery [not the baby powder aisle, although that might work, but has WAY more additives and synthetic chemicals/fragrances]. A 35 oz bottle of regular baking corn starch is about $4 and should last many uses. If the container does not have shaker-holes already in the inside cap, the corn starch can be transferred to something else that is clean and allows for shaking [powdered sugar dispenser, dried parmesan cheese shaker--clean, etc. Just shake the starch through the hair as you would the spray type, then brush out thoroughly [while in the shower, or leaning over the bath sink], then clean combs and brushes regularly.

$62 is NOT a lot for a week if you're eating healthy (which you seem to be from this haul). $250 is considered the basic monthly minimum required for a family of 1 and $300 for 2, so this is just about perfect. You can spend less, but I wouldn't stress about spending $62 in a week. The pizza is an expense - but whatever. ;)

You did awesome you deserve that pizza. I ate oats with golden grapes and toast one night. And enchalidas one night and taco/taco salad, and I fudged and ate mexican so we both did the not so fugail but it is ok everyonce in a while. Have a good week

Food videos are a filmed a few weeks out. All my content is at least a week pre-filmed so I'm able to keep up with my life. :-) Crock pot has not been replaced yet, but I did cook a couple of those in there before it broke and they were good. :-) Now I'm cooking them in the oven, but its not quite the same. :-(

Not sure of your nutritional limitations, but maybe try whole wheat pasta in the lasagna. It won't be carb free or low carb, but it'll give you the satisfaction of pasta with more nutritional benefits. I've also found that even small portions of whole wheat pasta keep me fuller, longer. Just a thought.

You can make your own dry shampoo you need arrowroot or Non GMO cornstarch and for pigmentation you can add some cinnamon,cacao or nutmeg depends on your hair color.Also you should try to use more natural products is better for your health,skin and believe me even for your wallet because doing your own products saves you also money.

Why not just switch the regular pasts to whole wheat and cut back on the portion for the lasagna? Also had an epic fail this week tried a new recipe so gross we ended up going to McDonald's for hamburger.
