The white marshmallow/white chocolate/Dots candy looks (to ME) just like the Brach's white & fruit square nougat candies that we all use to ne able to Self-Serve by the pound at the Brach's Candy Stations in most grocery stores. You can freeze the dots and run them through a processor once or twice on pulse to make the prices smaller or use brands that are mini's. Also, you can melt the marshmallows much like for rice crispy treats then add the chocolate half way through since the melting point is different. Always start melting the ingredients that will take longer and more resilient first before any others.

If you run water over the crumbled parchment paper, shake the water off and there's no need to cut it! Learned this from a friend who was a chef. And it forms perfectly! and since its water , it evaporates easily and won't harm your recipe!

I was born mid seventies. We shopped at Sears a lot!!! I don't remember a candy counter. I must have missed that era, darn it. We had a Sees candy, and can still go, if we wanted to drive an hour to get there, lol.

I don't remember a candy counter at Sears when I was a kid in the early 80s here in Canada but I do remember the Kresge candy counter mentioned by @princessmariposa828 above- I also have fond memories of our old Woolsworth downtown which had a cafeteria counter and classic lunches. I wish I could see the Sears candy counter so I am going to Google it and try to find pics. Edit: just Googled "Sears candy counter" and some lovely vintage photos of it came up. It looks like it was such a cool spot! Did we ever miss out here not having one! They probably had one in a larger city like Toronto or Ottawa, but at the time I lived in Northern Ontario and our city had a Sears but it didn't have a candy counter.

A method that I learned is I use almond bark and put it in a crockpot on low. Melts beautifully and keeps the chocolate smooth and easy to dip.

Roll dots in corn starch and place in food processor using just the pulse. You can add more of the starch and brush of the excess afterwards.

The 1/2 stick of paraffin also thins the chocolate just enough for an even coat with easier dipping and it keeps the balls nice and shiny. I've been using it for decades with my peanut butter balls 😉

Loved the recipe for Brach's jewel dupe💗 The nougat is much nicer than the original. I'll try microwaving next time too--I used a double boiler and it took forever to melt and stir til smooth. Fyi, parchment can be dampened and placed in the pan. Not soaking but you'll see when it's damp and soft(not-'parched' lol). Trim edges to fit, and the dampness dries before you can even add your mixture. Absolute gem, no pun intended lol, of a recipe that I'll be using many times to come💗

Yes, when adding food coloring to chocolate you have to use candy food coloring. regular food coloring will cause your chocolate to seize... but you can rescue seized chocolate as long as it's not burned because as you know even a drop of water will cause it to seize. so just put some of that coconut oil in it and it will smooth it back out again

Just a tip: use a plastic spoon to stir your melting chocolates. A metal spoon cools the chocolate while you stir it. Leaving the spoon in the chocolate cools it also, which makes you have to remelt it

This is amazingly tasty! We rolled some of the leftover plain nougat into balls and plan to cover them in chocolate for homemade candy bar bites. We'll probably skip the fruit candies next time because this nougat alone tastes like a million bucks!

I used these recipes and this year changed it up some. I added imitation banana flavor to the (white) fudge and walnuts, then chocolate coated it, I love it. Also did some of the nougat candy without the dots in banana flavor. I also did butterscotch flavorin white fudge and nougat as well. Dipped some of the fudge in chocolate also and added powder from some sea foam candy on top. Butterfinger fudge lol. Just trying for some different candies lol.

Had a similar experience with chocolate melting wafers from another brand. Ghirardelli tends to have a better consistency for melting and resolidifying.

The egg whites in theirs, no can do. I'm used to having to deal with modifying things. I'm thinking this is perfect to fill that niche. Chuckled at "It's been a rough year". A quick and easy fudge recipe i use at the holidays. I jar peanut butter (crunchy or smooth) and one thing frosting (choc or vanilla, cream cheese) non whipped kind. Melt each one (about a 1-2 mins in micro) stir, and them together and micro another 30 seconds are so if thick or lumpy. Then refrigerate for a few hours. Can add nuts or dried fruit to it also.

The marshmallow, white chocolate and dots is SOO good we cut them in bite size pieces in The fridge. They don’t taste like chocolate really more like vanilla taffy? 🤤 I don’t care much for dots either but in this recipe they don’t taste much like dots they are so much better we love them! If you use chocolate instead of white chocolate it’s tastes like tootsie rolls so yum 😋

They all look yummy. I make imitation turtles but in the oven. Parchment paper on cookie sheet. Square pretzels rolo on top with pecan half on top of the rolo. 250 degree oven for about 2 to 3 minutes or until you can push the pecan down. Push all pecans down and let cool. Can be dipped in chocolate

The nougat is one of my favorite recipes. I use the sour jujubes and add a splash of vanilla. So good.
