I'm a junior high school English teacher; I teach freshmen in Spanish Fork, Utah. A few weeks ago we did a quick write activity where they created a poem based in this first line: "Since you asked, I'll tell you why..." Since I always write with my students, I wrote while they did, and in 7th period, at the end of the day, this was my composition. I share it here because it answers Jack's challenge. Since you asked, I’ll tell you why I bake bread: Because baking is creating possibilities. Because watching yeast bubble and grow reminds me that life is tenacious. Because grinding ancient grains like spelt, or kamut, or farrow connects me to ancient bakers. Because kneading dough relaxes me. Because sourdough is a labor of love. Because bread is the staff of life. Because if I can bake bread, my family will not starve. Because bread and butter and jam or honey is a bit of heaven.

Jack - you nailed it in this video! I'm 58 years old, and up until about 10 years ago, I always thought that bread was "something other people did". Until I finally tried my hand at it. I started with no knead recipes and got good at those. Then 3 1/2 years ago, I decided to start taking Culinary Artisan Bread courses at a community college. I am now taking my final course and will have my Artisan Bread Certificate in 3 months. The chef who teaches the course commented several times last semester that I should work in a bakery and that my breads are really well done. High praise from such a great chef! I went from knowing nothing and thinking that I couldn't do this, to having the Chef giving me such high praise. It's been a wonderful journey, and it gives me such pleasure to bake a gorgeous loaf of bread. I have no intention of working in a bakery (or starting one), but the pleasure of shaping, baking and then sharing bread is what drives me. I love it!

Congratulations, you go girl! I'm 58 this year, I never made bread either, but @Jack set me on an amazing path on you tube. (Don't have a TV so found him on you tube during lockdown). Made @Jack's sourdough starter and never looked back. I dont sourdough now, but my starter is in the freezer. I bake @Jack's yeasted loaf and baguettes twice a week for neighbours just because it is such a stress reliever.

Love the vids mate. I an almost 70 with alzheimers and last made bread during the bread strikes in 1977ish & have decided to have a pop for therapeutic reasons & make "hopefully' some lovely bread. Looked at loads of your videos for instruction to hopefully remember a bit of them. At least you have inspired me .. .. stay safe & sending love .. .. inspiring people is a true art .. .. keep up the good work

We bake bread because... Jack instills confidence in all of us that venture to "TRY". That seems to be his message, repeated time after time. Just Try! I use the same priciple when trying to learn to carve. Sometimes I make cute little characters. Sometimes I make really good looking firewood! At the end of the day, if all else fails, you can always feed the ducks. 🦆 Thank you for your continued and persistent inspiration Jack.

Wonderful to see you back on my screen, Jack. Loving the philosophy too, and you're right - kneading is only a chore if you let it seem that way. Once you cut into that freshly baked loaf, you'll soon realise that the effort put in has delivered the reward.

Your point about kneading I totally agree with - it is not a chore....but the reality for some of us that are getting on in life...10 minutes of kneading gives us a week or more of pain to deal with. I find my grounding into the observation of the dough as it mixes in the kitchenaid....consciously witnessing from a distance. Thank you for all your wonderful videos and the way you free us up to be confident in our abilities.

Totally relate to this…I have tried kneading by hand before and it can be painful sometimes. I generally make recipes with no kneading required…just lots of coil folds.

Thanks for this video Jack. I learned this wisdom 12 years ago when I was diagnosed with terminal oesophageal cancer and was told I’d be lucky to live 3 months. Long story short, an experimental treatment saved my life - imagine if my oncologist gave up before he started and assumed my cancer would kill me! I went through 12 months not knowing whether I’d live or die and once I beat it I knew I could do everything. I made it my mission to tackle all the things I thought I “couldn’t” cook - everything I’d previously failed at in the kitchen and, low and behold, with my new attitude I could cook anything. Did I make everything perfectly first time? No. Did I learn positive things from each attempt? Yes. I absolutely love to cook and I’ve now made some absolutely beautiful things in the kitchen, including many of your recipes (I have your book). My husband and my father (who lives with us now) eat like kings and I’ve realised that cooking for people is one of the ways I show my love - by nourishing their bodies. You never know strong you are until you have no other option!

I have been baking our bread for 28 years now❤❤. I am teaching my grand daughters, who love the kneading. For them it is playing with the dough and they are so proud of their bread.

We bake bread because it's a way to go beyond our culture's demand that we be productive, and become creative. We create something that feeds people--and not just their bellies! Giving someone something you made feeds their need to feel cared for, like part of a community. And in the act of creating this delicious gift, we create space for ourselves to just be. I love kneading, for all the reasons you said. Kneading is my time with my thoughts. There's nothing but me and the dough, and the wonderful awareness that I am creating something beautiful.

I make bread because......... it relaxes me. If I get stressed about various things in life or bored with how things are going, I think about a few of my favorite bread recipes. I pick one (many times a rye bread one) whether a loaf or buns or both, get out the ingredients and then enjoy the few hour process. When done I usually have cleared my head with the satisfaction that I have created some food that I enjoy. I couldn't have done this a few years ago before I discovered your channel. I have your book and need to try a few more of your recipes so that I can relax again.

I bake bread because... after too many years of poor health, depression and wondering what the hell am I doing with my life, bread gives me a much needed little victory a few times a week. I make about 3 sourdough loaves a week. They may not always look good enough for instagram, but they do always taste fantastic. The whole thing, from taking the starter from the fridge late at night to feed for the next morning. To removing the loaf from the oven about 32 hours later have become welcome moments of mindfulness in my day, as I tend to each section of the process. It's far too dramatic and over the the top to say that baking has saved me, but it's become a vital part of my life and routine. It gives me a basic purpose. I couldn't live without it now. That's why I bake.

Wow Jack! I never thought I would stumble on an eye opening video while seeing you knead a bread dough. Thank you for this, thank you for sharing your thoughts and positivity. I've been doing so much thinking about my life lately and this is just uplifting. Let me say this once again, I used to hate bread making because I just can't make it right. Couldn't agree more with you when it comes to 'can't'. I knew someone who tried her hand at baking a loaf of bread and of course, first time out, wasn't a smashing success. From that point on she said 'nope, can't do it'. And as far as I know she never tried again because she feared failure. I told her how many house bricks and doorstops I made when I set out to make a loaf of bread....total failures each and every time....but I never quit. I kept at it and today I can honestly say that I haven't bought bread, buns, croissants, puff....you name it, I make it fresh and at home. The failures never kept me from trying. Glad you're back in the saddle and rarin' to go again! A big yee-haw from the Great State of Texas! Take care Jack!

I bake bread because you made it seem attainable. Your videos gave me hope, demystified it... perhaps even for me. I knew how I felt about homemade foods I'd been gifted and about the people I'd received them from...they held this " magic" that I felt inside myself. I wanted to tap into that and express it and put love into it. And share it with myself and loved ones. Thank you for videos that touched my heart and then my dough!

I started making sourdough in Covid times cos it was s’posed to be better for my irritable gut! It is! But the big plus was feeling back in touch with the world through your cheerful videos! Just managed to chuck out my starter of 16 months by mistake and was distraught, but I’ve got another one going and just baked your sourdough potato and Rosemary rolls, and they are out of this world delicious! You are doing a great job, and don’t stop, or change your style! Don’t want to gush but we need real genuine humans who care about the important things! Keep going and so will I!

I can be fussy about what touches my hands so sticky dough was never an option. Until the Pandemic closed down most other options. I found you and a wonderful journey followed. You showed me techniques and that bread is not scary to make or gross to knead. I'm really happy giving my family healthy, whole grain, tasty breads. Thank you, Friend!

What a great video Jack! Lovely to have you back. Yesterday I used my everyday bread recipe, refined over time by watching your videos and now so consistent I can guarantee how it will turn out, and instead of using a tin I made a bloomer with the dough. The reason? We're travelling for three months across Oz with a very small camper trailer and I will be making my bread in a collapsible oven on top of a two burner camping stove. The result was spot on! I can now discard taking a tin and just use a small flat tray, which is so much easier to pack. I didn't use steam as that's not going to be possible and the bread was still amazing. You continue to inspire me. Thank you 👍

Kneading is such a great stress reliever, if I started baking in an anxious mood, it soon goes with those wonderful repetitive actions of kneading. I always set a timer too, I'm more worried to have not kneaded enough than too much.

Thank you, Chef Jack, my first loaf of yeast bread was when I was 15 and it was tough! Yes I gave up because I was baking for my whole family mom and dad 8 sisters and 1 brother. We couldn't afford to waste ingredients so I went back to making baking powder biscuits. My family loved my biscuits. Well I next tried again in my 30's but still just couldn't get it. I didn't. Have anyone to teach me as I knew not anyone who made yeast bread. Well I've been at it now for 5 years , I'm now 67 and I'm not going to give up. My bread is not perfect but my husband keeps me encouraged. We eat it, its not hard just crumbles and sometime my dome seems to seperate from the loaf . It is never the same. But I use freshly milled wheat flour so I can give my husband and myself the best tasting and healthy bread. I used for the first 3 years King Arthur 100% whole wheat. But wanted more. Which is why I started watching you I like your technique. I haven't got it down pat as yet but will keep trying. Sorry for the bit of a book. But just wanted to let your know I appreciate what you are doing. Getting ready to buy your book on Amazon. Can hardly wait. Again many thanks. BJD

This was really inspirational, and something I needed. Sometimes I don't want to try a new recipe because it's frustrating putting in the time of working on a recipe that fails. But you know, at some point, even my current go-to recipe was a new recipe!

It's funny to hear your talking about kneading. I recently started baking yeasted breads using the stretch and fold methods that come from sourdough. The results are amazing, no kneading required.

I bake bread for the pure joy of knowing that I made it and my family gets to eat a loaf that isn't full of chemicals and preservatives. I make all our bread, I bake every other day, and I also make all our butter. I absolutely love spending time in the kitchen making and baking. Asking my family what they want me to make next, then watching their faces light up when it's ready. I am actively trying to cut down on as much processed rubbish in our diets as possible. I must say, it is amazingly satisfying. I am my harshest critic, my family always enjoys everything that I make, even when my sultanas sink to the bottom of my manor house cake. Lol. I just try again, tweaking, adjusting, trying different things. I very much have a positive mental attitude to life and am trying to impart that to my son. It's a work in progress.

I bake bread because it’s a way to be creative as well as providing my family with good, real food. I love kneading, it’s my favourite part. Baking bread is time well spent. You are a genius, Jack. You need your own TV show. 🙂

Jack, I love to knead. I set the timer for 10 minutes to give the dough a 2minutes rest when it first tightens up to the touch. It’s a pleasure to watch & listen to you. Being present to the moment, it’s the only reality.

Thank you Jack! With you guidance and philosophy, I've gone from making bread once in a blue moon to making at least a loaf every week. I quit using the mixer to knead because I need to feel the dough and there's something very meditative about kneading dough.🙂 Blessings and prayers!💚🙏

We bake bread because it's a multi-generational activity that brings family together. Your KZbin channel and book have taught me to make fabulous bread and I'm teaching my grandchildren. Great video Jack! I am quite old now and my children grown up, but when they were small, they used to ask me how I got to be good at so many different things and how they wanted to be like that. I told them the truth. I am good at all of those things because I spent a lot of time in each failing miserably. I messed each up until I learned how not too. I have always encouraged them to take risks and make messes, because there is no better teacher then experience. You can't learn by wishing you knew how; you have to start somewhere.

In my mom's home, we bake bread because it keeps us connected to our cultural heritage, and those breads are not available to us unless we bake them ourselves 💪🏻

Thank you so very much for your videos and very interesting thoughts. I couldn't agree more... baking bread - like cooking - is not just another chore we have to do. It connects us with ourselves, with others, with the environment we live. It sure is grounding and, if one is open, it is a nice classroom, too.

I bake bread because it is gratifying learning something new. It never gets old. Will the loaf turn out better than last time? What am I doing right? What am I doing wrong? Gee I hope I don't make a mess here

I've learned so much from all your videos. Thanks so much for sharing. All your tips have been invaluable information, and improved all my breads. However if you have arthritis in the hands, 8-10 minutes is not possible, I've had to switch over to stretch and folds.

Welcome to 2023 Jack. I hope you had a good break with the family. I got my Bread Everyday in December so made lots of good bread for guests over the holidays. I need to find a nice big sheet of plywood so I can knead on the table instead of at bench height. I live on a rural property in Australia so make most of the bread, different shapes each time. Kneading is a mindfulness practice 😁

Even my disaster loaves taste good, so I never throw them out (I don't give them to friends though). And looking on the bright side, the loaves that don't rise out of the tin stack better in the freezer.
