Mark, your appreciation for food,people and your smile have actually had a direct impact in my culinary career. I remember my first lead position in a kitchen when I was 21, I was a bitch. Super hard on people's mistakes, and felt constantly like I was on edge. One night after a busy Saturday I went home, smoked a bowl, and watched a video of you in Cancun with ceviche I think. Something clicked for me watching you so happy with such simplicity. It made me step back, look at myself, and ask myself questions. I grew a lot faster in my field (mentally) the following months. I like Pad Thai but when I see how it is actually carefully made and how it is eaten with banana blossom and green mango, and learning about the history of pad thai, totally different. That has to be one of the sauciest Pad Thai we’ve ever seen! It’s almost as though all those noodles have sucked up all the liquid. Can only imagine how much flavour is in that dish. We love that Pad Thai is the only dish she serves - if you’ve been serving one dish for over 40 years, it’s bound to be one of the best of it’s kind. So lucky of you Mark!

poychange true. It depends on the restaurants’ recipes. Like this restaurant uses duck eggs instead of chicken eggs. I’ve not sweet-tooth so when i found pad thai that is too sweet..just put some sauces like fish and lime sauces (which always comes with pad thai) to lowering the sweetness.

@@poychange When I took a cooking class in Chiang Mai, the Pad Thai was perfect. It's hard to find a restaurant near me that has a balanced Pad Thai that isn't super sweet. I actually made a version last weekend with palm sugar syrup after reading the latest issue of SAVEUR!

@@theuniqueblue Yeah, the next time I may request for it to be less sweet. Fish sauce is usually not served with the pad thai in my neighborhood. I don't know why but I have a personal preference of not adding raw fish sauce to my meal. I like it heated at some point. I don't know whether it mellows out the flavor or I have a phobia that bacteria is growing in bottles in warm kitchens...

@@sabaidee5587 What are you talking about? Pad Thai uses tamarind juice for its sourness and sweetness, just like lime, lemon, pineapple, tomato, or other fruits in other food recipes. It's just a juice from tamarind, there is no oil in the juice. Pad Thai has oil when she first fries dried chilly, shallot, garlic, and probably some mixed in other ingredients. She adds water (to soften the noodle) and tamarind juice, the liquid you saw is not oil (but probably has some mixed in there). Then keep stirring to reduce the water and let the noodle absorb all flavors until they all dry.

Anyway, I really don't care about your taste nor your favorite food. I just clear up the fact that "tamarind juice" is not "tamarind oil". Because you say "tamarind with oil" that sounds like canned tuna that has tuna in olive oil. It is just like Ketchup or Tomato sauce/paste used in Pasta / Pizza.

I also thought Pad Thai (and Southeast Asian cuisine in general) was too sweet for my taste, so now I always order it without any sugar, and it still tastes delicious. Lots of my relatives have diabetes, so I think reducing the sugar is also good for my health. I hope I'm not insulting the Thai culture by not putting the sugar.

Actually original Thai Food is not too sweet, but combination of taste instead. Unfortunately, it's quite hard finding the good restaurant with the right taste of Thai food. Almost street food now make it with lots of sugar. Anyway, you can ask the chef to reduce the sugar or salt or oil etc. as you want, but still keeping thye good taste. For Pad Thai, you can make a good taste by yourself by adding vinegar or sugar or fish sauce or chilli. You can do it as Master Chef!

That is the right way to eat Pad Thai. 50:50 ratio of 50% Pad Thai and 50% fresh vegetables(bean sprout, shreded green mango, shrives, peanut, chilli)

never got Pad Thai served with green manggo in Thailand :(. usually bean sprout, spring onions or chives thanks for bring this up, will definitely looking for Pad Thai Stall whose serving green manggo next time visiting Thailand and she cooks pad thai diffrently than others i tried.... nice 1

I live here since birth for 30 years and this is the first time I heard of this receipt.. so I think this kind of shop is rare Key word "ผัดไทย มะม่วง" should help you but I doubt it look as good as the one Mark eat at "ผัดไทยป้าเล็ก วัดจุฬามณี อ่างทอง"

I don't think he is used to pets because of travel. He saw the puppy was there but you forget if you're not used to them being around you.
