From what I understand, we are not supposed to lock the pot. There have been explosions due to built up pressure. Check the owner’s manual for true information. The lock is for traveling the crockpot.

I love that you call " problem solving"..... Pivoting! I am going to incorporate that language into our day. Its a much more "accurate" helpful word for our son with ASD. In Europe (Poland) we make broth with a lot of vegetables (carrots, parsley, celeriac or celery, leek, onion - the best if is roasted on a burner or stove; sometimes parsnips - if someone grows in the garden). We also add herbs: lovage, a few balls of allspice and pepper, bay leaf, dill. Pour the chicken and vegetables with cold water and cook slowly in a pot without a lid and a spoon inside (because it takes away the flavor). There is no better broth in the world!

These look great! Just a tip for the acidity of the tomatoes. Sugar will Not cut the acidity, it just masks it. The only way to cut the acidity is to add something that actually neutralizes acid. Baking soda will do that. Go lightly because it can change the texture of the food.

I get my chili beef coarse ground for that beefy chili without the high cost. I also wash my store bought canned goods. I think they just taste better that way. So happy that you’re back. It’s hard raising kids on your own. Always remember keep the faith. God has y’all ✝️🙏🏼❤️

There are probably as many ways to make chili as there are cooks. With that said, I use 1-2 lbs of meat to 2 qts of home canned tomatoes, 2 chopped onions, and 2 cans of beans. I use chili powder and cumin in addition to garlic, salt, pepper, a bit of sugar and paprika. I cook it until the tomatoes have reached a thick, saucy state and put in the fridge. You are definitely correct about it being better the next day 😉.

i put chocolate in my spaghetti sauce and if i don’t have chocolate or choc-chips i mix equal parts cocoa,sugar and melted butter…a. A friend taught me to add a handful of raisins instead of chocolate..the sweetness, as,Bri pointed out, cuts the raw acidity of the tomatoes. Oh those twins are just So Darling. the screenshotof their baby hands washing the beans is so sweet. Bri, I love your earrings, I see you wearing them almost all the time, there must be a special story connected to them. Maybe you will tell us. They look like wood or agate. They are just the right size and shape to enhance your features and hairstyle. You always look elegant and “dressed up” wearing them. 💕

Paper towels between multiple unfrozen bags is a hack I use all the time. After frozen, slide out the paper towels and you can use them for kitchen cleanup. The paper towel keeps the unfrozen bags from freezing together. I like I don’t have to rearrange my freezer w this jack if I’m tight on space or time.

I use a flame tamer on my gas stove it distributes the heat more evenly on the pan I am simmering. The next time you make a dish that requires a lot of bean cook them a day ahead of time in the instant pot and you will have saved a fortune. I like canned beans when I am making a quick soup and do not need many. The bean come out so creamy in the instant pot. Chick peas are so good done this way. An easy way to make humus for the kids to have between meals. You were very busy but enjoying all your efforts in being able to give to others.

I used to rinse my canned beans until i read somewhere that you get more nutrients leaving it in. Seems like everytime i turn around the recommendations change. It doesn’t seem to change the taste either way and it’s a nice warm, hearty meal.

Yes, I read somewhere that the liquid the beans are in are really good for you, the fact that the beans have soaked in it it’s on a par with broth, just cannot remember what they called it.

The sourdough journey requires lots of time , patience and flour. Game changers for me were: journal each bake from start to finish, include starter stage, measurements( a kitchen scale is a necessity) time of each stretch and fold, temperature of dough and air. When starter and salt have been incorporated into dough fill ( 2+ tbls) bottom of small see thru covered container with dough. Mark the side of the container. Keep it next to your dough. When the dough in the small container has doubled in size, you are ready to FINAL SHAPE YOUR DOUGH (8 to 15+ hours depending on temperature) My BIGGEST MISTAKE had been not knowing when bulk fermentation was completed but seeing the small amount of dough rise in the separate container works. Rice flour is a necessity to coat banneton - loaf does not stick. I also let the final shaped loaf rest on the counter in its banneton and then place final shaped loaves in the frig for 18 to 24 hours before baking and place in freezer last 1/2 hour before scoring and baking. I also spray water inside dutch oven before closing lid. Lots of info on internet about how to strengthen your starter . It took me a few months to get to where I can consistently bake a loaf that rises and has a soft fluffy open crumb. I was so happy when I got my first bunny ear. Good luck. That was so much fun "cooking" with you, Bri! And all your cute little helpers and bean eaters:-) And all your big helpers were definitely behind the scenes helping out with the littles I'm sure! I love the way you cook nutritious meals like that from scratch. That's what I try to do for our family as well! A nice trick I learned to cool off a huge pot of soup fast is to set it in a deep sink like a laundry sink, and fill the sink with cold water to just about the height of the soup in the pot!

Good idea for cooling a big pot of soup. I usedto ove to help cook for large encampments out in the mountains where there is no elctricity for refrigeration. Ice chests, and blocks of ice worked..When a big pot of cicken soup was cooked and hot, ready for the next day, and the sun had set and day was done, We would pour the hot soup into an ice chest and float a block or two of ice on it and close it up for the night. In the morning it was ice cold and would keep all day until dinner. The melted ice did not affect the flavor significantly and seasoning could be added if needed. And in reverse, to save fuel when camping with my family, i would get a pot of beef stew started on the campstove, put a lid on and put it in a box, lined with straw, and straw on the top , and cover the box with a blanket 6 to 8 hrs later. in the evening after a day hiking etc, we would have a “slow-cooked”in its own heat- stew with meat so tender. This method also works at home during power outages, which are more frquent nowdays..

I learned the hard way with opening cans, open it all the way, my curious son, got his finger caught in a partly opened can. We were lucky he just got a small cut, vs loosing his finger. It was pretty scary.
