Champaign also has to be made with specific grapes; Blanc de Blanc is all Chardonnay, Blanc de Noir substitutes in Pinot Noir and/or Pinot Meunier and anything labeled with just "Champaign" contain a mix of 2 or 3 of those varietals. Fun side-fact: All of the common wine grapes are actually the same species, Vitis Vinifera. When you see Chardonnay, Pinot Grigio, Malbec, Sangiovese, &c; they are all from selective cultivation and random mutation, making them the equivalent to Golden Retriever, Rottweiler, Maremma, Dalmatian, &c.

As a french guy and a lactose intolerent, I can eat cheese. Usually, lactose is mostly absent from cheese because it was consummed by bacterias during fermentation. So even I totally overdose the OMS advised quantity of cheese eaten in a day, my stomach is perfectly fine 😅
