That seems really innefficient; there's so much meat on that shark that could be used. There ought to be some legislative action to heavily tax sharkfins sold unpaired with sufficient regular sharkmeat so as to mandate full efficiency-there's less time and space to kill sharks if you need to use the whole thing!, so there could be just as much meat without threatening the extinction as much.

In Brazil, we got Maniçoba, a salted meat stew made with cassava leaves that are highly poisonous and need to be cooked for seven days straight to be safe. @@AeyakS I'm from Malaysia too and my relatives have a few farms. Basically you have an abandoned building with a big hole and the birds come to roost, thinking it's a cave. After the birds are done doing their business in a few months, you can go in to the shit and featherfilled building a pick out a few empty nests. It was the money fad a while ago. The soup itself is quite nice and the birds nest does have a unique texture.

Then there are people who painstakingly clean the nests of all debris, so it is labor intensive. Sadly, the locals don't make nearly as much from the efforts.

Yeah, I caught that too. In my book, he really should’ve been there for one of the others. They were all WAY grosser than shark fin soup (even that fruit didn’t look very appetizing, I think maybe nature was trying to tell us something). It’s mostly cartilage? Big deal, I usually chew that off of chicken bones, especially if it’s KFC and/or my mom isn’t there to complain about it. The interesting thing about bird's nest soup is that the trade is causing the swiftlets to become domesticated, much in the same manner as bees. Hey I’m a Jamaican from Florida, thats me!!!! Ackee is delicious, “nutty” is like the perfect description for what it tastes like fully cooked and unseasoned. On the tree the fruit splits open like shown in this video when they’re almost ready, we had a tree in our backyard and my grandma would collect the fallen fruit whenever she was out gardening. We never got sick off our own ackee so I THINK freshly fallen is about the right time to prep, but if you ever find yourself in FL and stumble across a tree I wouldn’t risk it bc 1) no way to tell how long they’ve been chilling in the dirt and 2) there’s a non zero chance a Jamaican auntie with a gun is watching from her window, just waiting for someone to try it

I had shark fin soup one time. It tasted like broth but the texture was so revolting that it legitimately made me not want to eat anything for days because I was so haunted by the way it felt to chew. Imagine Jello or snot but every time you bite into it it crunches just enough to send a shiver down your spine. It's completely soft so you have no idea what's causing that crunching feeling. Even just thinking about it makes me want to gag.

Jamiacan here! Ackee is also something that you can develop a resistance to over time, as it contains a minor amount of poison. If you do, however, you'll be unable to enioy Ackee anymore- you'll get what we call "Ackee Ache", which manifests as sharp stomach pains that can last up to two days.

A major reason shark fin soup is also looked down upon is because of how cruel the practice is. They don’t catch the shark to eat, they catch it, cut off its fins and throw the living shark back into the water where they suffocate.

Asian young man, grew up in Singapore here! I remember eating shark fin soup at weddings as a kid and it does taste exactly like how the article describes, however the fins themselves have no taste and it's the soup and broth that makes it tasty, nowadays they no longer use shark fin for ethical reasons but still retain the broth for taste.

The Ortolan is a meme in France. There was an old cooking show that was very famous at the time. The lady who was the star of the show was called Maïté, and she once did an episode where she showed how to eat one, and she said something along the lines of "and I suck its behind" with a southern accent, which understandably is where the meme came from.

Sardinian here! Personally never ate the cheese but my mother did, she fondly tells the memories of eating the cheese and how it sometimes tickled her mouth as she chewed the maggots, and as a child, she loved to squish the maggots that fell onto the table like a game. My family used to be cheese makers and my great-grandfather was one of the big producers of Casu Martzu before the business got affected by the great depression in the US (a big shipment of normal cheese was lost in NYC when the stock market crashed, never being able to recoup the cost)
