@@elmervillalobos5234 Bacon is a cured food. It was designed to be preserved via salt curing. This salt content kills most bacteria and fungi and means that proper bacon is safe to store uncooked at room temperature for a significant period of time. (not safe to consume raw though). Cooked bacon has almost no water content left it it. Particularly if it is properly crisp. Any harmful things in it have been killed so we are looking at harmful things that can fall onto it. As such it can last for days at room temp without posing any real issue and does not have "the window" other cooked foods have.

Okay watching your videos and the one thing that raises an eyebrow you aren't changing your gloves enough nor washing your hands enough near 30mins in. A red flag Towards the 30-35mins in you dropped a tool on the floor and you proceed to leave it at the table were you have the eggs and then you go back to cooking and touching food with the same gloves on that touch the tool that was on the floor. That is terrible thing. Cross contamination is the biggest issue you have. I have been in the restaurant business for 25 years honestly you need to stop take a minute to wash the tools, hands and changes your gloves periodically. This most valid feedback I can give you.

Don't forget about the mountain of bacon that seems to sit out at room temperature all day. Or him coughing all over the salad bar. Or him using a towel to wipe raw egg out of a pan, and then using that same towel to wipe off a customer's plate. Or the fact that when he finally "washed" the tool that fell on the floor, he literally just rinsed it with some water, shook it off, and then started using it again--didn't bother to use soap or any sanitizer. I wouldn't be surprised if the customers at this place get sick pretty regularly.

@captainrag Seen in his other videos, far end of shelf (opposite of egg table), large bucket of blue liquid steramine solution … a food grade/food safe sanitizer used with towels for wiping surfaces, utensils, etc. Steramine is commonly used in most restaurants.
