I just started watching your videos a few days ago, they are very interesting to me. I started working in a 24hr diner at 15 YO as a busboy after school and weekends for $1.00 per hour in 1970. I'm retired now, it's good to see a skilled cook at work, thanks for the videos.

Yeah, I started cleaning at a diner as well. A dollar an hour, man, big money back then. A coke and a bag of peanuts.

When I was in college. I was a breakfast cook at a big truck stop. Used to make all the homemade biscuits and homemade sausage gravy, everything was made from scratch. All the prep for hash browns etc. we made our own sausage and ground our own meat for the hamburgers. Lots of work. Enjoy your videos. All our bread was made in house too, sandwich bread, hamburger buns etc. I made all the sausage, hamburger, and breads as well as all the homemade cinnamon rolls and danish. Keep up the good work.

A couple of years ago my wife bought me a Blackstone flat grill for father day and by watching your videos I learned how to cook on it and cook really tasty foods on it. I also learned low to medium heat cooks the best on it so no more burning my food lol. Merry Christmas to you and yours.

Such a master, it's amazing to watch someone who is great at what they do. I also want you to know that watching you is helping somehow reset my brain to notice little things I can do to be more productive. It's important to me because I have very bad back and hips so I want to make my motions count. It's a combination of teaching and inspiring I guess. Anyway thank you for posting these videos. I tried breakfast short order for a while back in the day. Even when I was young and fit I couldn't do it. Tears and cuss words and eventually I just didn't go in. I did get pretty good at doing short order lunch for an A&W restaurant one summer. I also worked in a dishroom for most of my college years. Getting into a groove, busting it out. It's fun and very satisfying work to me. Do you have any videos of getting your mise together and setting up for a rush?
