It is but worth it and setting boundaries for self. Like I refuse to work on the Sabbath. Yes Saturday is the businesses day for a bakery or most service based jobs but that is the day the lord has set aside for me to rest and ill take it. And have systems lots and lots of systems. Premixing your dry ingredients together in batch according sized containers will save lives. No weighing while its busy. After some time you will know what will be needed and you can plan accordingly. There are hundreds of ways to make it easy peesy but never short of hard work. Thank you for supporting small and local businesses though lol.

The best brownie that I ever had was bought at an obscure bakery at San Francisco’s Rincon Center and I was pleasantly surprised to learn that Robin Williams used to go there for those brownies too ! I can see why those cookies are your best seller….before you said so in the video my eyes went directly to them because they look so delicious !

Working 12 hours isn't that hard though, especially if you already have everything prepared. Also she isn't working by herself, she said "we all" and "our," so that means at least 1 person is helping her out. She'll be fine. Once she starts making a lot of money and is able to train conpenent employees, she'll be able to afford to take a day or two off in the future, but knowing how people passionate about their work get, she'll probably come in to work anyways 😅

We're talking about 12-15h a day constantly on her feet where she never gets to sit and she's lucky if she has a short break to eat. I know cause I used to be a pastry chef and I used to work those hours too. Even if there were other chefs like me, we all kept working like crazy. I hope they'll find a way to get more help cause it doesn't take that long to end up completely burned out. It also has a toll on your body. We used to be all in our twenties and every single one of us had some kind of issues; some people had a problem with their back, leg, neck you name it.

@@ambraguastini3541 As someone who also works those hours currently and is always on their feet, you get used to it. Maybe not everyone is as resilient, but I'm sure she will hire more help soon. Most of her work comes from baking, so she doesn't need to be there to actually sell her goods if she can train someone.

I actually went to try out for an open pastry chef position at my local bakery! Unfortunately I couldn’t pass because the manager was very skeptical about me, but it was a fun experience! (Only got to work 3 out of the 7 days I was on trial for 😂😂 very sad times 😢)

If you like baking don't be the owner just be a baker. Be the owner if you like... hiring, interviewing, managing, being on call 24/7, trying to fix a suddenly disabled 80 quart mixer yourself because your wholesale orders need to be in the oven by 7am, doing taxes and inventory, trying to substitute a different type of flour in your baguette recipe because the distributor had an issue, and never being 100% sure if you are over producing or under producing for a major holiday which is your biggest sales day of the year. Oh and hopefully you're one of those people who can sleep only 4 hours a day and still feel great, even after standing/walking/lifting/piping/rolling the entire day. Meanwhile if you're "just" a baker you get to enjoy the process, go home and take a relaxing shower to get the mixture of sweat, flour, and sugar off you (don't forget your eyelashes!) and not have to worry about someone calling you on your day off with a problem only you can solve.
