Growing up Amish, we would make egg noodles if we had an abundance of eggs. We used a pasta or "noodle" maker. They are available on Amazon. Then dried them and we had chicken noodles for easy meals for months. I now occasionally do it and my kids love to make them!

In sooo many cultures, lunch is the biggest meal. It makes sense when you think about all of the work your family does in the morning. Then your little ones can rest. Dinner is naturally a bit smaller when you eat a substantial meal midday.

His excitement and little voice made large is absolutely the bees knees! They expression when he said that he wanted to cut it, the expression change when you reiterated what he said then the scowl with his lil voice! I had to rewatch that part several times! I miss my kidlings being little ones!

I would look into the closest food bank or homeless shelter and go see if they could use fresh eggs. The Salvation Army houses people overnight. They serve two meals a day in my area.

Another way to use up eggs is by making pickled eggs or what my family calls, beet eggs. Put hard-boiled eggs into the bottom of a large jar. Full with canned pickled beets or you can pickle your own. Add sliced onions, salt, and pepper. Stick them into the refrigerator for at least 2 days before eating. The longer they soak the better. Delicious.

You know, you can freeze them. You have to slightly scramble them first. Freeze them in an ice cube tray, then transfer to a freezer bag. These are great for cooking and baking. (Not for eating as an egg) I have done so for years. I use the frozen ones for things like pancakes, bread, muffins or whatever. Just a suggestion. Thaw in the fridge. God bless you.

We are just 2 adults and even so, we sometimes have too many eggs from our flock. One of my favorite ways to use eggs is making simple quiches or breakfast casseroles. They use up a lot of eggs and they're delicious.

Way back in the older days. Family would eat a larger meal for lunch n for dinner it would be a light. Those pork chops looked delicious. I might try that recipe. I love pork chops or pork for that matter. I think you do a wonderful job as a mother, a cook, a wife n you still get the outside chores done. You deserve much praise. I love country & farm living. I have a little 4 almost 5yr old grandson that would absolutely love this kind of life! He loves animals and learning about how they love, all the things😊 If I could afford to buy a farm I'd do it just for him! I knife he'd thrive so so much. You can use several by making egg muffins or pancakes muffins then put into freezer pull out and heat up microwave or oven pour syrup over top. I had 5 children their dad died at age 47 to make meals quick B4 bus time these were great. Muffins of any kind blueberry too. Used many eggs. Also froze scrambled eggs And put in roll up kids could handle really good.

My grandson who is 9, has started volunteering at a farm tending chickens. I've learned a lot about chickens. He said "Nana, chickens cost $2.00 each, 25% of them die, and when one is sick, the other chickens kill it to put it out of it's misery. It's called survival of the fittest Nana"

We make our sourdough pizzas just about once a week if not every other week. But it’s a lot! And my children and I LOVE them and I love getting creative with the toppings.

We've had break fast for supper. Have had leftover roast for breakfast with the leftover potatoes and a side of fried eggs and gravy poured over the whole dish. Goes a long way if it's going to be a long day.

Use boiled eggs for salads cut in pieces or even grated. We often make Russian salads with eggs, potatoes, fresh onion, peas and gherkins. It is also common to make a herring under a furcoat: we make layers of salted fish, grated eggs, potatoes and boiled beet on top. Homemade mayo with eggs in all of them.

In our household, we use crepes as the "noodle" for manicotti. Just fill them and roll (enchilada style) with ricotta and spinach, or sausage/mushroom/spinach. Really whatever fillings you would like. It would make for an easy meal when you are having crepes for breakfast anyways.

EGG Noodles! Dried out and stored, they can last a long time on the shelf. Honestly, another way to use up/store eggs to consider. Use in any soup, casserole, schnitzel, Italian dish or Mac & Cheese. Heck, you could do a mega noodle day or weekend w/the kids & crank out a bunch of noodles to store up. Love your channel 😊🍝

Lisa a great way to use up eggs is Egg Foo Young, mixed with lots of veggies and or meat. Served with rice and a chicken soy sauce gravy. I used 7 eggs for just my hubby and I so you would use a ton and it’s delicious!!

I over bought chicks last year too {we have 11 layers, one rooster}and there are just the two of us so I have been dehydrating the eggs and storing in reusable zip bags. I can fit almost 4 doz in a quart baggy. I then store in the freezer {I have trust issues lol} They are really simple to rehydrate 1 tablespoon egg powder to approx 1 and 1/2 tablespoons water per egg. I love your videos!

I do meals like you. I just can't bring myself to meal plan. I can make a meal out of what looks like nothing lol. My husband is the opposite. He had a few "go to" meals in his repertoire and he looks up recipes online then buys the ingredients. I just look at what we already have and he thinks it's magic!

Hi Lisa! Just a tip, if you ever feel like not having to store or use all of the disposable plastic bags (bc I personally haaaaaate having a bag of bags, know what I mean 😂), you can make or buy an XXL beeswax wrap bag. The bread proofing basket/loaf will slide right into it and keep it from drying out. Love your channel and your sweet family! ❤😊

We do the same thing with frozen berries except thicken it with a few tbs of chia seeds and a squeeze of lemon. So good with fresh bread or sourdough pancakes or waffles.

Eggs are a great source of protein. Here's a list of things you can prepare with eggs: egg salad on sourdough bread, egg on your cobb salad, eggs on any and all baked desserts, potato & egg salad, tuna & egg salad, all sorts of breakfast dishes, deviled eggs, hard-boiled eggs, you can literally have eggs in every meal every day!!!

Just a heads up to stop the grey sulphur ring around your hard boiled egg's yolks, drain the eggs after boiling then run under very cold water shell still on for about 3 mins.

Pinterest gave me a recipe for egg bites that uses 9 eggs and cottage cheese for 12 bites made in muffin tins so I'll double it to easily use up 18 eggs and have extra breakfast on hand for future days (there's only 4 of us). Putting steaming water in the oven gives them such a wonderful texture too! I add cooked ground sausage, torn greens, and shredded cheese to the bottom and pour the eggs over top for extra protein and nutrients. It really sticks with you with all the extra goodness. ❤ Egg salad is another thing we enjoy to use up eggs. For us 4, 21 eggs gives us enough to have lunches for a few days, 21 seems odd but that's what fills the bottom of one of the bigger pots, haha.

You little boy reminds me of my younger son when he was little who is now 16. He is a boy of enthusiasm towards things that excite him but quite then rest of the time. Super intelligent and interesting to talk to once he opens up to you about the topics in his brain. He loves pizza, tacos, hot dogs and burgers. I just chuckled with your son’s enthusiasm and excitement ❤ Thank you for sharing the most precious moments and also the one thing I needed to hear most. I am very intimidated by this process of turning back to the homemaker roll and it’s overwhelming to just start but it’s the fear of the not knowing so I need to start small. But just start.

We make frittatas (like your strata) whenever we get a lot of eggs. We’ll eat frittata for breakfast or dinner. Also, French toast is great to use eggs! I’m definitely going to make crepes next time!!
