MSG naturally occurs in foods like mushrooms and tomatoes. However they have a "refined" method for MSG that you can use as a "seasoning". Remember this, a little goes a long way. Basically if you put salt on it, use HALF as much MSG (Or even a little less). MSG tends to accentuate flavors.

MSG is a natural thing, it's not bad for you; there was a whole thing a while back where it got a lot of pushback due to chinese restaurants in the US using it often, and people claimed it made the food unhealthy (it was unhealthy to begin with). Tomatoes are one food that have a good deal of MSG in them, and I know there's other common ones, I just can't think of them off the top of my head. Basically it deepens the "savory" flavor of foods, and a few other aspects, leading to a deeper flavor.

Also to add to what you're saying MSG or Monosodium Glutamate is naturally derived from dried seaweed most typically. There's ZERO health concerns with MSG and was campaigned against during a period of time in which Asians were seeing a lot of racism. MSG is also in ANY fast food, MOST seasoning blends that are store bought and many other natural foods such as tomatoes like you said. Hopefully Sendit sees our comments so that he can learn from them. Also my comment on how to properly cook rice on the stovetop that would make Uncle Roger proud. I own a rice cooker but I've had rice come out wrong more times than I have with cooking it on the stove or even in a hotel pan in the oven.

If cooking rice in a pot on the stove it's 1:2 ratio. I normally make rice by toasting it in oil until it becomes golden 1 1/2 dry rice and once toasted I add 3 cups of water to the pot and let it come to a boil, as soon as it boils I turn the heat to low and put the lid on. Set a timer for 20 minutes and I have perfect rice every time. I've never once had to drain rice. She didn't cook the rice long enough. But she's British and they're not known for their cooking.

If you don't wash your rice, it will clump together. It's too starchy. Wash it 2 to 3 times. If you want rice that is totally separate, wash until the water is clear. For fried rice, ALWAYS USE leftover fried rice.

Just to clarify, it depends one what type of rice you purchase. In the US, Canada, UK, and several european countries, there are some brands of rice that have vitamins like b12 and niacin added back in after the polishing process(to make it white). On the bag itself, it specifically says not to wash it.

@@Xantosdude Yes, but many of the qualities of rice we have in the West are not suitable for oriental cuisine (Chinese, Japanese etc...) for example, to make risotto, there is no need to wash the rice, because the starch contained in the rice helps the risotto. For oriental cuisine, you don't need the starch contained in rice, simply because we have different methods for cooking rice...

@@Xantosdude There is not just one rice. There are various types... Rice grains are different in size for example. In Europe, significantly larger grains are used for risotto than those used in Asia. Furthermore, the cooking methods are different. Risotto needs the starch from the rice to make it creamier, so it doesn't matter if the grains get stuck together. Fried rice, however, is not. The rice grains are separated from each other... and the rice grains are decidedly smaller than those of the risotto.

@@ShadowSoul92 Ah, I misunderstood. I was talking about the quality of rice not variety of rice. When you're broke and trying to get by, cheap rice with enriched vitamins generally should not be washed. These types of enriched can also be found in asia as well, albeit rarely, again it will specify on the bag. Short grain rice or the japonica variety is used in Europe for risotto/paella. Either Arborio or Carnaroli, however, one can substitute japanese short grain for it as well. My hot take on this is that you can wash rice for rissotto and get a creamier texture. You will need to soak the rice overnight to bring out the amylopectin however, so it'd be more time consuming... but asians have been making variations of creamy rice porridge for generations that use washed rice without butter/Parmesan. Fried rice, traditionally, uses jasmine rice, a medium grain variety, once stored with jasmine flowers(but no longer), and controversially (imo), can be interchanged with most varieties of rice depending on the dish. Kimchi fried rice for example takes advantage of shorter rice grains as is true for Hokken, yakimeshi(chahan), Burmese fried rice. I could go on, but my original point was that there are specific types of rice you shouldn't wash.

Make sure to watch the Jamie Oliver egg fried rice next. Jamie is a former protege of Gordon's and a renowned figure in the UK. It will also help understand most of Roger's other videos, as he does a lot of callbacks to it. Uncle Roger does eventually do cooking tutorials, including Egg Fried Rice.

Its not pasta you cook with a lot of water and then drain, First wash the rice, and drain, only at the beginning you can drain the rice with a colander😂 You suppose to cook with a specific amount of water and when done cooking you turn of the fire, keep the pot covered and the steam finish the cooking, Then open the pot and fluff the rice with a fork otherwise it will be a block of rice later. Oooohhhh, myyyy gawwwwwd, DRAINING cooked rice! If your rice is in a state that it can be drained when it's "done," you need to give up on that rice entirely omfg. However much rice you want to put in, then fill it up to a knuckle above of water, let it boil for like 2-3 minutes (while stirring a bit so that the bottom doesn't burn), then turn it off and LET IT SIT. If after 5-ish minutes it's not fluffy and perfectly dry (enough) on its own, simmer it on low for another minute and then let it sit again. Honestly, this is why I wish more non-Asians would just invest in a rice-cooker; you can get a perfectly servicable one for less than $15, and then we wouldn't have to see more of these bizarre instructional videos with cooks who don't know what they're doing.
