Fresh milk is one of life's greatest things. Unfortunately, it does not last long and there is no way a farmer and his family can consume all that milk on a daily basis before it spoils. So to prevent this loss and the loss of income, farmers started to make cheese. And we are so happy they did! These cheeses are nutritious, delicious and full of that fresh milk flavor. This fresh milk is no ordinary milk either, it is the best milk because the farmer's knows that in order to make great cheese, one must first start with great milk. Ordinary milk may taste fine when fresh but when made into cheese and aged, this milk can lack the flavor complexity necessary to make a cheese great. Only truly great milk can make great cheese and there are plenty of examples to prove this. Since warm weather is here and fresh milk is abundant, we thought we would feature some of these great cheeses that remind us of the freshest, creamiest milk available.
