Thanks for sharing. A few things to add if people are interested : normally țuică is transparent even when it's 25 years old. I've tried it myself. The reason we see it yellow-ish is because people add certain wood branches to give a more distinctive look and scent, but most importantly to not confuse it with water. Completely rotten fruit are actually avoided because they don't produce the sugar that is needed for alcohol. But they should be as ripe as possible. The process of tuica distilling requires a lot of experience and if not done properly it can turn from "medicine" to "poison" real quick. Currently not so many people are distilling at home as there are local companies that provide this service for you in a safer environment. Tuica is still used in most ceremonies like traditional weddings and a good tuica should be superior in taste, smell and vibe to most mass produced spirits out there.

Grandma used to boil plum liquor (țuică) in the cold winter days, when i was a kid in the 90s.. Poor it in a small glass and add some sugar in it. Man that was crazy delicious. They also used to make Vișinată (sour cherry liquor), in the country side back in the day.. That was even better than țuică.. so sweet and tasty..

Romania grows as many plums as the United States at a very small fraction of its size. Not too shabby for a plant that originated in Iran and was not introduced into Romania until about 200 BC.

My Uncle in Bosnia had which I thought was a steam engine and he laughed at me no no it's my happy machine a double pot still fired by wood it took a whole day distilling 100 litres then aged in oak barrels. The traditional way is to ferment in oak barrels prior the still .

palinca is also romanian not hungarian , the same for the gulas dish who is transilvanian-romanian based brought here by the ottomans.

Nope, goolash is definitely Hungarian. Travelers & probably Turks too carried it over the border. 🤷♂️But hey who really cares. It's just a tasty meat & potato stew that probably most countries make or slightly similar & each one has their own name for it. So drop borders & names for a minute & look at it as good food for humans.

so taking this in consideration about 10 kg of fruit/ litre depends if you use apples or pears, they are converting less alcohol through the fermentation process it's very arguable

Those apples that farmer is mashing are beyond filthy and no fit for a clean fermentation. All kinds of bacteria & unwanted microbes would ruin it & not give you anything decent at all. Very bad technique & method. Very primitive.
