I really enjoy the realness you show on this channel. You don't edit out the "fails" or try to add a rose-tinted filter to it. As someone who grew up food insecure, it sometimes bothers me when rich influencers show off how "easy" and "simple" it is to cook on a tight budget. But your channel isnt like that. You keep it real, and that shows so much respect to those of us who live like this daily. Thank you, genuinely

Sometimes people don’t have time to cook a poached egg, not everyone has a egg poacher and, has to do it the old fashioned way and, it does require a bit of time to bring the water up to a boil and then, to be able to do it the right way.

@@sonyafox3271 I have a nice egg poacher pan but stopped using it because it’s simply doesn’t make eggs as great as poaching at the old fashion way in water. I also learned recently that using an egg poacher pan doesn’t really make poached eggs - it makes coddled eggs. There’s a difference! Also, boiling water and waiting 3 minutes for the egg to poach with the heat turned off really isn’t time consuming lol. It’s cleaning the dishes that annoys me.

It's not as budget friendly and not at Dollar Tree, but I love Petite Frozen Peas. The bag goes a long way over many meals and you don't have to worry about them going bad in the fridge since you can grab small amounts when they are frozen. Sweet and tender and bright green. This is more for you since I don't think they have them at the dollar stores. 🙂

I just found you about a week or so ago. I love how you brake down the items you purchase and use in different ways, such as the soup and the mac & cheese. Your providing a real service to cooking for one and thinking outside the box. I have felt your pain of a fail. If it had only been an issue of the sauce on you pasta salad, I have been known to put half or all the salad (or whatever I'm working with) in a strainer and rinsing the sauce off and trying again. Hindsight is always 20/20, but you could have maybe rinsed it off and mixed some of your broccoli soup with some water in and cooked it in a pan or baked it until the noodles finished cooking. Plus, you were tired. Keep up the excellent work, you are valued and exceptional! Oh, and I just subscribed

My heart goes out to people on a budget in the US. I live in England but my brother and father both live in the US. The last time I visited them was before Covid hit and I remember how food had always been the cheapest thing whenever I was there but the prices they’re telling me now make me sick to my stomach because it wasn’t like that before and watching these videos especially make me realise the level of suffering that some individuals and families are facing there. £35 here in England (I’m defo not in London) have the same value as $35. I know the conversion rate is different but the value is the same but very honestly I’d buy a lot more here for £35 if I’m shopping just for one week. We’re also having a cost of living crisis here but I have to admit it’s nowhere near what’s going on in the States. Thanks for sharing your wonderful recipes ❤.

I accidentally just commented to myself 😂try using those peas up with carrots diced up in a meatloaf, gently fold them in the meat before baking dish…there are no failures just things we don’t care for or like, as long as you’re cooking, it’s the fun of new ideas, whether they turn out or not, you took a chance. I think the Mac & cheese Mac salad might work better if you make the Mac & cheese the usual way, let it chill in fridge or freezer for about 15 mins then fold in ham, broccoli, eggs and try half mayo/mustard with just a tint dab of sour cream not full sour cream and chill it again in fridge for about 5-7 mins. That’s how I have done it and it’s ok, it hits the spot for a cold salad

Maybe after some time not using canned peas, give them a try. PS don’t over cook the frozen ones. I typically add them to a dish - fried rice, one pan pasta dish, etc - at the very end to just warm the peas through. This way I’ve come to enjoy peas. Once you go fresh or frozen, it’s hard to go back to canned. Thank you for all of your content! I love getting creative ideas from your creations! ❤

Ugh, I feel ya on the peas! I've never liked them, and I've tried as an adult to test them out again (I've changed my mind on tomato soup compared to when I was young, only to become allergic to tomato lol). But I just can't with peas, I don't like their taste or texture. 🤢 I hated them so bad growing up, and my mother knew it and still tried to make me eat them. When I was quite young, she wouldn't let me play on our enclosed porch after dinner with my brother and neighbor boy unless I ate those dreaded peas. Since she couldn't see me where she was sitting, I shoved them into the little front pocket of my overalls, eatting a few because she looked in AND smelled my mouth when done to see if I actually ate any. She finally let me out to play, and I opened the porch door and flung the little green boogers out into the yard. LOL

I learn just as much from your fails. I think everyone has something they don't like. There's a lot of different recipes for "mushy peas" however, the original recipe used old peas that are harder than sweet new peas - they soften them by soaking in a little baking soda before frying and mashing. IMO cheap canned/frozen peas are older peas. I have to add onion and garlic to peas. Then I like them. Mash, mixed with a can of diced potatoes, a little shredded carrot and ham (spam, etc) maybe some broth if needed = soup. There's a recipe for tearing up bread, adding water to make a batter for pancakes. I've thought about doing something similar and bake for a cracker? I have no idea if it'd work.

About peas: my daughter has always hated peas. But she loves my creamed tuna on toast. Just a white sauce, can of drained tuna, some peas, canned or frozen. Whatever I have on had. I add onion, garlic powder & celery salt to taste. Poor over toast. Years ago, when she was quite young, she asked me to please leave out the peas. I said ok, but I promise it won’t taste the same. Needless to say, she made me add the peas, she hated it without them! 😂This meal is a family favorite and made at least a couple times a month. Not because it is an economical meal, because everyone loves it, including my grandsons and very simple to make!

Can’t blame you for not liking the canned peas. I like peas but they need to be from fresh or frozen and only cooked a few minutes so they are still a bright green color. If they get overcooked and turn that olive drab color, they’re not as good, in my opinion.

I love to cook and have been told I am a good cook. But at times, since I live mostly alone, I do not want to spend a lot of time in the kitchen. I make an easy fast soup that will give me multiple portions. I cook regular white rice, but when cooking it, I add to it a chopped onion and a couple of garlic cloves. When the rice is nearly ready I add to that a whole can of corn with the liquid, can of peas with the liguid, can of black beans or navy beans, a can of stewed tomatoes that have also garlic, add dry hearbs and let it cook till heated through and the rice is soft. The flavor can easily be altered by using oregano and some Mexican style hot sauce, serving with tortilla chips cracked on top. Alternately, I add italian spice mix and serve with grilled cheese sandwich with Parmesano. The liquids of canned vegetables have salt, but they are much more flavorful than plain water. There is no need to add more salt, just pepper and whatever herbs. Instead of rice, I use at times pasta, just any pasta works, but the smaller size is better in soups. If i have only spaghetti at home, I cut it in my hands to about 2 inch pieces. I make sure I have always canned vegetables as a backup. And we here in the Houston area must always be prepared for hurricanes or severe subtrobical storms, causing bad flooding, especially during El Nino years. Then, after the hurricane season is over, during the winter, the unused cans must be used, so I make quickie soups.

When I was growing up and coming home from school bout to starve, I’d open a can of green peas and heat them up with butter salt and pepper and dip loaf bread in them and chow down 😂😂. I still eat them like that❤

That's a great idea! I need to figure out a way to use them, maybe one day I’ll find a way that I enjoy them

throw the peas with some diced up carrots and onions into a meatloaf as your mixing it, gently add them in so they don’t mush then bake meatloaf! That’s not a budget dinner but just a way to use up veggies @@DollarTreeDinners

I wonder if you had a bit of ranch dressing to put in the pasta salad bowl if it would taste any better and thereby be able to salvage the food and not throw it out..also maybe a bit of crushed up potato chips added to it.
