Get Ready for a Breakfast Sensation that is simple and I make all the time. These HOT, Easy, CHEAP, and Dirty SANDWICHES are completely whole foods and plant based. I’m sure you’ll be able to figure out the oil free version easy enough if so desired but for now we’re going for full on, and it’s still healthier than it’s fast food animal equivalents.
This morning’s masterpiece is not only sizzling hot but also unbelievably easy on your wallet and your taste buds. Introducing a breakfast creation that's as delightfully messy as it is mouth-wateringly delicious. Don't miss out on the WFPB (Whole Food Plant-Based) magic that's about to unfold!
RECIPE:
HOT Delicious, Easy and CHEAP SANDWICHES | WFPB Breakfast
Eggy Tofu and Portabella ‘Sausage Patties’ on English Muffins
Yields: 2 Sandwiches
Ingredients:
1 block (300g) of Tofu, sliced in half lengthwise
2 Portabella Mushrooms
2 English Muffins, whole wheat
2 Slices, Vegan Cheese (optional)
2 TBS of Vegan Butter (optional)
1 tsp of Fennel Seeds
1 tsp of Smoked Paprika
1 tsp of Black Pepper
½ tsp of Chili Flakes
½ tsp of Salt
½ tsp of Granulated Onion
½ tsp of Black Salt
Instructions:
Prep the English Muffins:
Split the English muffins in half and spread butter on each side.
Grill the muffins until they turn golden brown. Set aside.
Prepare the Seasoning Mix:
Grind the fennel seeds, smoked paprika, chili flakes, and salt using a mortar and pestle.
Heat a cast iron skillet over medium heat and add a small amount of oil.
Cook the portabella mushrooms for about 2 minutes on each side until they're heated through. Remove them from the skillet and place them in a small bowl.
Coat the mushrooms evenly with the prepared sausage-flavored seasoning mix. This step can be done a day in advance to enhance the flavor overnight.
When you're ready to assemble the sandwiches, reheat the cast iron skillet and sear the seasoned portabella mushrooms on each side until they're hot.
Make the Eggy Tofu:
In the same hot cast iron skillet, sear each side of the tofu slices for 2-3 minutes or until they turn golden.
Sprinkle the granulated onion and black salt over the tofu slices.
If desired, add cheese on top of the tofu and cover the skillet briefly to melt the cheese.
Assemble the Sandwiches:
Place the seared tofu slices on the grilled English muffin halves.
Top the tofu with the seasoned portabella mushrooms.
Enjoy:
Your delicious and satisfying Eggy Tofu and Portabella Sausage Patty Sandwiches are ready to be enjoyed as a hearty plant-based breakfast!

My Mom is now Vegan and at 82 years old and I’m moving her (and I) over more and more over to primary WFPB, but I love the cross over/transition/options/various combos because honestly if it were up to her, she would just eat English muffins, ice cream and popcorn all day and night, so she appreciates my incorporating those treats into the otherwise healthy recipes I make 🙌😅 And she LOVES MUSHROOMS (something new I’ve learned about her) , so now we watch your videos together to wet our whistles and then I make your recipes (or we watch while we eat your recipes 😆) and we are just loving everything! We Loved your Parmesan!!! ❤️‍🔥 A couple of weeks ago I requested /challenged an entire group of people who invited *me to their* BBQ to make it plant-based (awkward) because I didn’t want to come otherwise, and they shockingly very excitedly agreed! I BBQed Lions Mane, Oyster and Portabello mushrooms the way you do and it was OFF THE HOOK!!! Everyone (including Me!) were blown away and stoked to learn how to make something so amazing and new to them but matching the same taste and texture of BBQ using animals. Game changer for everyone! I’ve ordered 5 of your cookbooks from our local bookstore for gifts (and one for myself 😊) and requested they carry them (Bookshop Santa Cruz). I appreciate you!!! 💪💞🎉

Hi Derek, after watching your video I went straight to the kitchen and made this sandwich. OMG it was freakin delicious. Best breakfast sandwich ever. I’ll be going back to this again and again. It was so quick to make. I had to make a couple of substitutions, only had small Crimini mushrooms but they worked. I was out of English muffins but had another Bap type. I’m originally from Belfast so I love Baps. No fennel seeds, just used everything else. So delicious. I love your creations. Thanks so much. You and Frankie are so lucky to have each other. I love a vegan breakfast sandwich, especially one with a sausagey-mushroom patty. Tofu is my favourite “fried egg”…nobody needs to eat what comes out of a chicken any more! I would add an air-fried hashbrown to this sandwich. Thanks for sharing your breakfast sandwich method, Derek.🤩👍

@@lkaneshiki Hi, I use 1 teaspoon of ground coriander with a small pinch of ground cloves and pinch of chilli flakes this is enough to add to one tin of drained beans when making burger patties along with onion and other add ins. Lovely combination. Gale PS or add to any savory dish.

If you want to kick the addition of fennel seeds to another level and you have some fennel in your garden, harvest the seed heads as soon as the flower part is gone. Amazing.

I made this for brunch today and was surprised by how good and satisfying it was! I used Sichuan chili oil instead of the butter and it was next level 👌🏻 This is going into my regular rotation. Normally I would have used a frozen sausage patty but this is so much better!

One thing I've noticed is that black salt looses quite a bit of it's eggy flavour when cooked, and it's better to put it when you remove it from the fire. Or at least the black salt I consume is like that. Am I using it wrong?

I've just made this. Stunned by how good it tasted and I didn't have the black salt in stock! Don't think I've enjoyed a sandwich in such a long time. Had it with one of my sons, we both kept saying "this is just incredible" I can see this as a weekend feature for sure. The spice mix combo might be getting used on other things, the addition of the fennel seeds just takes it to a different place. Looking forward to delving into more recipes.

I'm not one for writing comments on KZbin, but I made this today and it was absolutely stunning! The taste you get from the spices for the mushroom and the simple egg like flavours from the tofu were incredible, and it was so simple to make. This is easily being added to my meal rotations. Thank you for this recipe, it's delicious!

I just made something similar for meal prep. Skillet fried tofu slices, vegan cheese, on everything bagel rolls, with sundried tomatoes. So meaty, so delicious, so filling. I'd have one for lunch, go home and eat one for dinner, then conk out for the evening.

I've noticed, from watching others' content too, our tofu in America has more packaging. I wish i could find tofu with just the plasic wrap, and not the hard plastic container.

OMG... freakin' phenomenal!! Did not have exact ingredients, but enough... l'd say there was some technique, attitude transference... and btw I've had fennel seed forever, used it once or twice, but not much since... it was sensational with this so now it has a place in my mind's considerations which for me can me 9/10ths... and putting all spices in mortar, usually I use mortar for "special" cases like Saffron or crushing peppercorns or rosemary but now combining all in mortar will be seen as a normal use potential... Awesome videos... Thank You!
