Traditional recipes tell you to use a bottle of superior pickle sauce and a bottle of wine, it’s so salty that my friend wants to throw them away after trying them, of course, you’ve got the ratio wrong.

Step 1
Boil water, add the ginger and spring onion, blanche the pork knuckle, then rinse and wash with water
Step 2
Put the pork knuckle in boiling water, boil for 45 minutes, then turn off the heat and cover the pot and let it bake for 45 minutes, repeat this step for around 3 times, it should take around 4-5 hours until the pork knuckle becomes tender
Step 3
Dip the cooked pork knuckle in ice water
Step 4
Prepare the sauce: superior pickle sauce, Huadiao wine, a reasonable amount of stock and a lot of sugar, mix well and adjust to your taste
Step 5
Take the pork knuckle out and wipe it dry. Put it in a bottle
Step 6
Pour the sauce in and refrigerate until you are ready to serve
