Watched this video and visited his Saint Germain location and sampled his chocolate and it was like a bite out of heaven, no kidding. I bought so much chocolate from him to share with my friends and family. Thank you SO much for this video. Love hearing the history behind it, which gave me a greater appreciation for the chocolates when I was there.

Still one of my all time favorite videos. So inspiring that I visited his store in St. Germain. I only wish you could somehow, someway produce an encore? Merci, David.

I love working with and eating great chocolate. This man this place is at the top. I would like to work there for a week to see how the master and his crew works.

ps During this video, I was pleased to know what you meant when you said Patrick was a MOF pastry chef, as I watched "Kings of Pastry" just LAST NIGHT. It was an amazing film to experience - I even cried a couple of times. Very moving... Anyone adorning the MOF collar has my deepest respect and admiration. "Kings" of pastry? Try near-gods! Cheers...

Acho que todos deveriam usar luvas e tocas de cabelos! Mas os chocolates devem ser maravilhosos!

David, I know you probably hate this, but I'm such a fan. After making MANY, many recipes from The Perfect Scoop, reading My Life..., and following your blog, I feel like I know you on a certain level. A gastronomical one? Ha! Along with being a pastry wannabe, I'm a photographer and this film was so well done - great camera work and DOF! And the subject matter was very nice, of course. Take care & happy holidays!

Making the perfect chocolate is an art, but the art starts with the cocoa plantation. Each variety makes a flavor profile. In the word, probably there is 30.0000 varieties of cocoa, every one makes one special flavor. Learn more about the amazing cocoa world here: kzbin.info/www/bejne/e5LTd614qriCb8k
