Veraniki are the best!! Frying them and having them cold is a favourite for road trips. An easy version of veraniki is just layering cottage cheese with noodles and pouring gravy over.

I grew up in Tennessee and continue to live in this lovely state. For the last several years I’ve grown my own pimento peppers. I roast them and remove the skins. I also chop up bread and butter pickles I’ve made, then add mayo. My mom used American cheese which is highly processed so I use Muenster cheese which is delicious.

Yes I grew up having veraniki and kielke cream gravy and varsht( known as smoked farmer sausage) in the last years we also got introduced to spaetzles almost like kielke but it’s a thin dough that’s put through a course sieve it’s put directly over boiling water,we have a specific tool for speatzle making!

Your Kentucky Derby hats reminded me of the Easter bonnets I grew up wearing as a little girl! lol! Oh I used to love getting dressed up in my Easter finest for Sunday school on Easter Sunday. Sooo looked forward to go shopping with my grandmother and mom and pick out my Easter outfit ( dress, coat, white gloves, white patent leather, Mary Jane shoes and of course, my Easter bonnet!). Your meal plan for the weak looked delicious, especially your Kentucky Derby meal ( sounded delicious! ).

Born and raised Southerner here. You have to have pimento cheese and crackers and it has to be homemade pimento cheese. Chocolate pecan pie and mint juleps, our version of mint julep is iced tea with mint springs and fresh lemon slices and don’t forget the cheese straws and baby pea pasta. Looks like you are doing a great job, Kentuckians would be proud 🫶🏻

My husband has lived his whole life in Kentucky I married into Kentucky 41 years ago. We have never been to the Derby either. Your menu sounds perfect for a Derby party. I fix most every year for the Derby cucumber sandwiches, hot browns and Derby pie. We also drink ALE 8. It’s ginger ale. The ALE 8 is made in Kentucky. I am sure they probably don’t sell it in your area. The hats are awesome!

I like watching your channel and other homestead, home making and home cooking channels on KZbin. Being German, though, I am always surprised by how much meat people still seem to eat, especially overseas. Here in Germany especially younger people seem to refuse eating meat at all. Most of them seem to be vegetarians or even vegans for health and sustainability reasons. But also older people eat less meat. Even the Ministry of Health advises to not eat meat more than once or twice a week. And yes, pizza with salami counts as a meat dish.

I think the key to good pimento cheese is don’t put too much mayonnaise, use sharp cheese if you can and put lots of black paper. I’m so amazed at what all you get done with your big family and a new baby. Love in Christ

Really hope you can change your oil….Seeds oil e.g canola,avocado,sunflower ….Really bad as it caused Inflammation…..hope you can switch to using organic extra virgin olive oil….(i learned my lessons the hard way with seeds oil and now suffering with many health problems..am just sharing)…somehow i am fascinated with how you handle your house chores + kids and surely other responsibilities..all the best

Seed oils are indeed not advised to use, but avocado oil is not considered a seed oil. Extra virgin olive oil and avocado oil are the better cooking oil options.

We grew up mennonite so those are one of our family’s favorite to 😊 you should try adding some cream to your cottage cheese filling, we love it like that, you want to just do 1-2 eggs and about a quarter to half cup of cream😊❤

Hi there! I'm a Kentucky girl but live a little more South now. For the Derby, popular dishes would include the signature "Mint Julep" cocktail, the Hot Brown like you mentioned and pimento cheese as well. I would say totally have fun with it even if the classic dishes have your own spin to them. Maybe try making a Derby Pie using a sourdough pie crust? I truly love your content, it always brings me so much joy :)

mostly they are interchangeable, but avocado oil has a higher smoke point. if you’re cooking with higher temps you should use high smoke point oils!

Hey, Steph, be careful using a lot of sea salt. It often contains heavy metals which are really bad for you, and especially for kids. I think the pink Himalayan salt is quite a bit healthier. My dad is from Canada and grew up on pierogies. They would put all kinds of things in them, including cottage cheese.😊
