I filmed all my lunches for a week last week. The result was lots of quick and tasty vegan recipes. Hope you enjoy!!

INGREDIENTS
#1 Arugula Pesto Toasts
2-3 large handfuls of arugula (115g = 4,05oz)
the juice of half a lemon, more if desired
2 tbsp olive oil
⅓ cup vegan pizza cheese or vegan parmesan (60g)
¼ cup water (60ml)
1 handful of cashews
⅓ tsp salt, more to taste
¼ tsp garlic powder
→ yields enough for about 4 toasts
→ lasts in the fridge for 3 days max
#2 Arugula Pesto Pasta
1 portion of pasta of choice, cooked
oil for the pan
2 handfuls of cremini mushrooms, chopped
1 spring onion, chopped
1 splash of white wine
1 splash of soy sauce
1 handful of cherry tomatoes, cut in half
about ⅓ cup (80ml) of pesto: check recipe #1

#3 Chickpea Pancakes
⅔ cup chickpea flour (60g)
a dash of curry powder
a dash of smoked paprika powder
¼ tsp garlic powder
⅓ tsp salt
½ tsp baking powder
1 ½ tbsp nutritional yeast
½ cup unsweetened non dairy milk (125ml)
1 tsp apple cider vinegar
1 spring onion, chopped
lil bit of oil for the pan
→ serves 1, yields about 7 little pancakes

#4 Salted Date & Tahini Oatmeal
½ cup small cut oats (45g)
¼ tsp salt
2 tsp flax seeds, ground
1 heaping tsp tahini, the runny kind
4-5 dates, chopped (i used deglet noor)
1 cup non dairy milk (250ml)
top with roasted sesame seeds for the top, extra milk, green apple chunks, maple or date syrup ...
→ serves 1

#5 Polenta Veggie Bowl w Tahini Dressing
60g polenta, dry (⅓ cup + 1 tsp)
¼ tsp vegetable broth powder or salt
220ml water (1 cup minus ⅛ cup)
chopped cucumber, bell pepper, smoked tofu
for the dressing:
1 ½ tbsp tahini
1 tbsp nutritional yeast
¼ tsp garlic powder
1 tsp soy sauce
2 tsp white wine vinegar
1 tsp maple syrup
1-2 tbsp unsweetened non dairy milk or water (start with 1 and see if you need more)
if needed: salt, spices to taste
→ serves 1

#6 Cheesy Vegan Panini
!Put together the sandwich on the counter first then add to your preheated pan. Much safer than what I did here!
oil for the pan
bread
a spread or condiment of choice (hummus, ketchup, mashed avo, vegan pesto…)
tomato slices
spinach
a couple heaping tbsp of homemade vegan cheese mix per sandwich
for the cheese mix:
2 ¼ tbsp tapioca starch + 2 tbsp water
then add:
½ cup soy cream (125ml)
1 tbsp nutritional yeast
a generous pinch of salt, or to taste
a pinch of chili flakes
¼ tsp garlic powder, or more to taste
⅛ tsp turmeric for the color
1-2 tsp white wine vinegar
optional 1 tsp miso paste

yields enough cheese for 1 big sandwich or 2 smaller ones

#7 Sesame Rice Balls w spicy hummus sauce
these measurements are all very much eyeballed lol
1-2 cups of cooked and cooled sticky rice (200-400g) (If you cook ½ cup of dried rice (90g) in about 1 cup water you’ll get about 1 ½ cup cooked rice which should be enough to create about 6 rice balls)
if you didn’t cook the rice in salted water, add salt to the cooled rice later
1 tsp rice vinegar, or to taste
optional: 1 tsp sesame oil (very yummy adding the oil, makes it harder to roll these into balls though)
⅓ - ½ cup sesame seeds, toasted in a non stick pan without oil for 2-3 minutes over medium high heat, stirring frequently (45g-70g)
chopped smoked tofu or cucumber, add these pieces to the centre of each ball, press them together tightly before rolling them in the sesame seeds

I thought that vegans are usually mad when people implies that vegan is mostly healthy that it's not the point. The animal rights and environment is.

Das stimmt so auch nicht ganz. Es sind beides Rundkornreissorten, welche einen ähnlichen Stärkegehalt besitzen. Das hat auf jeden Fall meine Recherche ergeben, als ich mich mal schlau gemacht habe^^

@Lieze Heylen Milchreis means rice pudding. (At least that's what my British husband calls Milchreis.) So, yes it should be the rice for rice pudding.

man i aspire, i live in america and ive dreamed of living somewhere in the uk (most likely germany since i’ve family there) because everything is so much closer together. here almost nobody rides a bike places and everyone owns a car since work and shops can be hours away

i don’t know how easy it is to find an older vegan cookbook, but i think it could be interesting if you tested some more vegan recipes from the 80s or so (like the nooch pancakes from a few weeks ago) :) just to see what that looked like in pre-avocado-toast-times!:)

I had a vegetarian cookbook from the 90s, and it was very heavy on tofu and nuts (like nutballs in tomato sauce, nut roast, etc.).

I saw an old vegan cookbook somewhere that had an overcooked whole cauliflower that had some tomato sauce drizzled on top in the cover. Madw me really sad for the past white vegans that this was the pinnacle of their cuisine 🤣 (Saying white vegans coz it looked like from the Facebook page "white recipes that trigger white people" aka seasoning is your friend)

I have an old Cranks book and "The Bean Book" - both quite earnest like the vibe was to FEEEEL THE FIBRE coursing through your veins, which was why I got them as I love pulses and trad whole foods.

So happy to see you use gochujang! One of my fave ways to use it is to make a dip/sauce called ssamjang: 1/4c miso paste (or doenjang), 1 tsp sesame oil, 1 tbsp brown sugar, 1 tbsp gochujang (or to taste), and garlic powder to taste. Just mix it up and it keeps in the fridge for weeks! I dip cucumber spears in it for a spicy sweet refreshing snack, and have it on the side for any meat/rice dishes to enhance the flavor.

Polenta is considered the "food of the poor" in Argentina (such a stupid thought). You have no idea how happy you make me everytime you show you enjoy eating it. Appreciate you so much Mina, thank you for aaall the ideas!

Well but it's actually true. I'm Italian and my grandparents were very very poor. They had chickens of course but for theirs eggs, so no meat, no fish, sometimes even no bread. Polenta was the only thing they can made for themselves cause it's literally just corn flour and water. If they were lucky, some cheese with polenta, otherwise plain.

My favourite quick lunch is cheesey pasta! I boil pasta (never the right amount because does anyone) then drain 90% of the water when cooked. Add quite a lot of nutritional yeast, salt, pepper, garlic powder and chilli flakes to the pot, add extra virgin olive oil and stir. Done! Sometimes I add some mustard too or some vegan cream to make it creamier. So good 😍

I've recently been making vegan egg subsitute with moong dal (split yellow lentils). Usually I use it to make mini omlettes for my cream cheese bagel (+ sriracha mayo). Best way to start a morning if you ask me.

My holy go to meal recipe: (I call it mine because I found it while experimenting but there can be a similar recipe outhere) Cut some peeled potatoes into square pieces then boil it until they get soft enough to eat it. Then put some Olive oil ,a spoon of turmeric, thyme and salt and mix them with potatoes (heating is not neccessary) I prefer to eat it with Rice and lemon juice on top and it is so delicious and cozy in winter 🌻 it is a very verstyle recipe so you can add whatever you want according to your taste ❤

Try having dates with a side dip of tahini (with your coffee cup?10/10). This is my favourite snack especially if you need a big boost of energy! This is also a traditional snack here in Saudi served with Arabic coffee. Sending you love from Saudi 💞💞

You kept making recipes that are very famous in my family and I kept wondering why our recipes were so similar when most people haven't even heard of polenta but then I realized it is because my family is german-argentine so now I know lots of recipes came with my family all the way from Germany.

Please try this salad, this will make you fall in love with arugula: A handful of arugula Cheese from your taste / choice For the dressing: Extra virgin olive oil Garlic Soya sauce Spicy sauce One lemon juice Salt Pepper Pomegranate molasses You can on top the following: Mushroom Apple slices Nuts Bread crumbs Some tofu Some vegan nuggets And you can also make some quinoa and add it to the salad

Adding apple cider vinegar to the tomatoes before putting them on the pesto toast is super yummy too! I usually dice my tomatoes, put them in a bowl with the vinegar, salt and pepper, and then put them on the toast :)

Nein, ist es nicht. Aber ein halbwegs guter Ersatz, da beides Rundkornreis ist. Trotzdem: Die Konsistenz wird mit Milchreis nie genauso gut werden.

I am really interested in veganism. I hardly can imagine myself not eating meat but I really would like to try it for myself. What would you say are the essentials to have in the kitchen to cook vegan meals? Ps: I have been watching your videos for a long time and I just love them! Your voice is so calming 💜

Hi there! I’ve been meat free for over 7 years. My staples have *definitely* changed so much over the years, it truly depends on what you enjoy. I’d recommend Pinterest for ideas! There’s also sooo many vegan KZbinrs. Personally I would recommend keeping a good assortment of spices (garlic, onion, poultry seasoning, Italian), nutritional yeast for that cheesy flavour, tofu if you prefer, soy sauce & broth (good marinades!), tons of frozen veg, some canned beans for when you have no time, dried for when you do, rices, nondairy milks (I get mine bulk from the pantry section at cosco), cashews for recipes, black salt if you want to try tofu eggs, and a bunch of random vegan friendly substitutes! It may seem expensive at first, but that’s because direct substitutes can be pricey. When you first go vegan it’s important you make your transition manageable. Direct substitutes (ex. vegan chicken) can be a less scary start for many, and once you feel confident you can try going more wholesome to lower the costs! I ate vegan substitutes everyday for a while, now I only have them every couple of days (besides like vegan butter and mayo). Some may prefer to go cold (vegan) turkey, haha, or others to slowly transition. It may be a good idea to make a meal plan at first to take away the feeling of being lost. It’s also important to familiarize yourself on the vitamins and nutrients you may be limiting while transitioning (calcium, b12, vit D, iron, omega 3s & 6s). Tons of vegans take b12 supplements or sprays for the ease of it. Personally, I order vegan multi vitamins off of lucky vitamin. Everyone’s journey is different, and I wish you the best on yours! Hi, one of my favorite healthy snacks to have is Greek yogurt with peanut butter, topped off with some chocolate granola. It's really good!

Heeey! So since you like white wine vinegar so much, you should make it yourself! It’s a great way to use leftover wine (both red and white). Just add it to unpasteurized apple cider vinegar and let it ferment for a few weeks with a tea towel or coffee filter as a lid and that’s literally it. You can keep adding the little bits of leftover wine pretty much forever!

I made the BEST tomato lentil spread today, it was super easy :) Saute about 1 small white onion and a clove of garlic then add 1/2 cup dried red lentils (washed) with 1 cup of vegetable stock for about 12-15 minutes until the lentils have absorbed all the water (make sure you stir in the last 5 minutes as the lentils will begin to stick to the bottom of the pan). Just fyi, the lentils go really solid when they cool down, so it might be an idea to let it cool for a bit so you can adjust the mix to get the consistency you like. Add the cooked lentils to a food processor with 1- 1&1/2 tbsp tomato puree, 4-5 sundried tomatoes, 1-2 tbsp nutritional yeast and paprika, cumin, turmeric, lemon juice, white wine vinegar, salt, pepper and mixed herbs to taste :) it would probably be quite nice with a bit of cayenne pepper or chilli too

Oder in Wasser legen und kurz im Kühlschrank zurückstellen dann wird trockener Rucola wieder schön frisch!

Lunch no. 1 hat mich ganz schön neugierig gemacht 😋 Bin eigentlich auch kein Rucola Fan aber Pesto mag ich sehr gerne. Going to give it a try 👩🏻‍🍳

You can use Milchreis as a cheaper alternative for sushi rice, but they aren't the same :-) Sushi rice keeps more bite, while milchreis desolves, and gets "mushier" than sushirice. Apart form that: love your meal Ideas! So many awesome inspirations!

By the way, it is really recommended to let the chickpea dough (pancakes) sit for at least 1hr for better digestion before adding it to the pan
