Italian here, I suggest you try pasta with beans or lentils or chickpeas! Easy, cheap and delicious, I often each these three dishes and they're also part of our food tradition :) the only "problem" is that they need a lot of time to cook (I have a pressure cooker, which reduces the cooking time)

white rice with red lentils and some curry is also cheap and includs all things ur body needs. boil the white rice in water, boil the lentils seperately the way it says on the package. when they are soft and fall apart add some saltan curry. mix together with the rice. nice, simple and tasty

Hey Mina! The korean paste you used is actually ssamjang (쌈장) [second row, last two words on the package], which is often used in kbbq where you use a leaf to wrap rice, a protein, kimchi, etc with a tiny dollop of ssamjang. Ssamjang is made of gochujang, the doenjang you were wanting to use, sesame oil, and lots of other ingredients. Doenjang looks like 된장. (I know there's a lot of words on the package lol). Good luck next time! :)

A really good vegan snack is toast with hummus and pesto with olive oil, red onion, vegan feta and spices - I usually have paprika, salt and pepper. One time I had some olives laying around and they were good on it, also roasted chickpeas are a great addition. You could probably put anything on it!

My favourite "dish" atm, which is super cheap, fast to "cook" and very simple: I put a little bit of vegetable broth powder, 1/2 to 1 teaspoon of miso paste and glass noodles (ramen would also work I think) into a bowl. Then I add boiling water and 1/4 sliced nori sheet to it. If you want to, you can also add some tofu, spring onions or other stuff to it :)

Tried the pumpkin gnocchi - we're veggie not vegan, so added some butter at end, and grated a bit of cheese over top. It was good - and provided the motivation to tackle a pumpkin. It wasn't as bad to peel and cube as I had thought it'd be. Gotta watch the salt as you cook, it's super easy to oversalt when using veggie bouillon, and the sauce condenses as you finish up, making it even saltier.
