Aashe Doogh - A Delectable Yogurt-Based Persian Soup - Episode #29 - Honest and Tasty

Ingredients
½ pound Ground Beef
½ Onion puréed
½ tablespoon Sea Salt plus more to taste at the end
½ teaspoon Black Pepper plus more to taste at the end
½ cup Uncooked Basmati Rice
1 Egg
1 gallon 3.8 liters Doogh (Middle Eastern yogurt drink) If you can’t find this from your local Middle Eastern or Persian grocery store then take plain yogurt and mix with water until it reaches the consistency of milk. And add a big pinch of salt to this if you're making it from yogurt and water, since there is always salt in doogh.
1 large bunch Cilantro rinsed
1 large bunch Parsley rinsed and thick stems removed
1 large bunch Green Onion or Persian leeks rinsed and just the roots removed
15 oz Garbanzo Beans 1 can, rinsed (or if using dry, soak overnight before rinsing)
15 oz White Beans 1 can, rinsed (or if using dry, soak overnight before rinsing)
2 Heads of Garlic cloves peeled and sliced thickly
Instructions
In a food processor, add the cilantro, parsley, and green onion/leeks and chop well. You can definitely chop by hand but of course, it’s not as easy. Set aside.
Combine the ground beef, onion, salt, and pepper by hand. Set aside.
Add the uncooked rice to a small bowl and add the egg to it. Whisk well. Set aside.
Add the Doogh (yogurt drink) to your biggest pot as it can overflow in the first steps if you aren’t watchful. Stove is off at this time. And as mentioned, if you don't have doogh, simply take plain yogurt and mix with a little water until you get it to the consistency of milk.
Add the rice and egg mixture to the doogh in the big pot. Mix with a wooden spatula and turn on the stove to high heat.
Stir the entire time until after it reaches a boil (~20 minutes). Once it boils, continue stirring for 2 more minutes, then turn the heat down to medium. At this point you can stir occasionally.
Next we will add the rest of the ingredients. Make sure nothing is cold going into the soup.
Little by little while stirring, add the chopped cilantro, parsley, and leeks/green onions.
In your palms, ball the beef mixture into small meatballs about the size of a marble. As you form them, drop them into the soup. They will start to pop up and float when they are cooked.
Give a gentle stir with your spatula.
Slowly while stirring, add the rinsed white beans and garbanzo beans.
Allow to simmer for a few minutes and add the garlic a few minutes before serving. To intensify the garlic flavor, add it in, give the soup a stir and serve about 1 minute later. For a more mellow garlic flavor, add it in, allow the soup to boil for a few minutes and simmer on medium/low until you’re ready to serve.

I grew up in Azerbaijan, we call it dowga but never herd of adding beef in it. Also there is a herb called niaxur missing. Looks amazing thou, can’t wait to try it!!!

Azerbaijan region of Iran is where my family hails from. So we are from the southern half of Azerbaijan when it was divided 100 years ago.

I'm a Filipino and I worked in Meshkin shahr, East Azarbaijan during the Shah's reign. Our Iranian neighbor gave us this soup and I loved it. Thanks for the video and I'm gonna try it but without the beef balls. I hope my family will like it also.

Iran was forced to cede its Caucasian territories including northern part of Azerbaijan to Russia in the 19th century after loosing the Russo-Persian wars and signing the treaties of Golestan and Turkmenchay. South part of Azerbaijan remained with Iran, north taken over by Russia, the new border was set between the two at the ''Aras'' River which, upon the Soviet Union's disintegration, subsequently became the border between Iran and todays Azerbaijan Republic.Nevertheless, the number of ethnic Azerbaijanis in Iran far outnumber those in neighbouring Azerbaijan.

Recien hoy descubri tu canal buscando la receta de un "yogurt seco" persa quees seco y en cubitos y luego se deshacen en un mortero pero no encontre esa receta sí la comida parecida en tu canal la sue vi era con arroz pero sin carne. Me gusto este canal y te pido si puedes ayudarnos y nos enseñas esa receta de ese "yogurt" seco pues busqué en mi pais y no lo encontré .Desde ya gracias por enseñarnos a hacer comidas más sabrosas.❤

Help! Thanks for the dovga asi! This soup is an Azerbaijani traditional soup. I’m from Tabriz and we make it all the time. Please don’t call our traditional food as Persian. We’re not Persian, we’re azerbaijani Turks. Respect your heritage and your culture.

Azerbaijanis are Persian. Even the country Azerbaijan was a part of Persia in recent history. I’m Azeri, therefore I’m Persian. I won’t tell you to respect your culture and make the soup non-vegan/vegetarian. Please be respectful here. Otherwise, this isn’t the place for you.

I didn't know Azerbaijan was a part of Iran.....for some odd reason, I thought it was an INDEPENDENT country with its own capital (called Baku).....

+Yeediatable So this is just a matter of quite recent history. Azerbaijan was a region of Iran until after World War I. It was then cut in half, and the top half became known as the country Azerbaijan, yet the majority of Azerbaijani people still live in the southern half, which remains the Azerbaijan region of Iran. Honest and Tasty Oh ...then you should have mentioned the Azerbaijan region of Iran..ahem...sorry...just being a jerk....thank you for the clarification....by the way, carbonated doogh is not as good as non carbonated one...but to each his own....the indian subcontinent has its own version called Lassi....I get easily addicted to it so I avoid it altogether because of the high salt content..they're both yummy nonetheless....anyways, sorry for sounding rude...khuda hafiz.
