My grandma used to make a very similar enchilada sauce. She would say the oil was used to give it that glossy shine otherwise it would be a dull and drab color. That was her story anyways and she always stuck to it!! lol When you pulled out the cauliflower rice at first I thought it was cilantro lime cheese!! Hi Ty! That's amazing that your grandma made a sauce like this! The restaurant guy who sold me the recipe cut this down to 1/20 for me! His family made 15 gallons of it at a time for the restaurant! LOL! But I never could figure out what the oil was for. I get it now! The oil gives a bit of a sheen to an otherwise flat, drab brown sauce. You had a sharp grandma! Thanks for letting me know! Yeah the cauliflower rice was just alright. I wish it had been cilantro lime CHEESE! Mmm! Maybe that's what I'll serve as a side the next time? Try this sauce if you get a chance. Hello my friends. I have never had an enchilada. Wow the sauce looks amazing and so nice that you can freeze the leftovers for future meals. Nice of true chef to sell you the special recipe. I love seeing you out on your boat. The sky was gorgeous. Have you had Miss Lulu take a pic of you out on the water with the pretty sky. That would make a nice portrait. I am run down today from chemo yesterday. But I still cleaned for over two hours. No sleep from steroids. 😔 I road my exercise bike 3.5 miles while watching your video. Brenda, you must, must stop at a Mexican restaurant soon, and order enchiladas with whatever filling you think you'd enjoy the most. I've never met anyone yet who doesn't like them, so I feel confident in recommending them to you. The $100 that I paid for the sauce recipe was worth many times the price. We love it, as you could see! • If ever I could get Ms. Lulu out on the boat (she hates the sun!) I'll set the camera to take our picture remotely! Hi Janine! I could never charge a cent for it! I'm just so happy to spread the word about this chile sauce, it's so good! You'll love it! The restaurant owner cut the recipe down for me by about one-tenth already! Even if you do make it as it's written here, you'll have enough for about 4 extra meals, and you can freeze those! This is right up your way because it's Tex-Mex! The restaurant owners were of Mexican descent and came from Brownsville, TX! Last week my oldest son invited us out to a Mexican restaurant and I tried the bang bang shrimp enchiladas. Hi Anthony! I went fishing this Friday and the results were terrible... I can't always show off the lake's bounty, but it was fun in this video! I love my boathouse! It makes fishing so easy! Sometimes the knife flip goes astray! So, I've been trying to video me doing it on two different fish. I'll choose the one that stays in the sink! LOL! Oh your bang bang shrimp enchiladas sound fantastic! I love bang bang shrimp but never tried them in enchiladas! WOW!!! I can only imagine! I could figure a way to make them low carb, I think. Juanelo 1946 another great video. You never let us down. I got to go out fishing first time on Friday. Went with a couple other guys to Wheatley Ontario & went for the rainbow trout aka steelhead. We ended up 18 nice walleye & 8 rainbow trout. Gonna have some nice meals with those. That sauce looked amazing. But I have a issue with you this time. She loved the sauce & we know she loves cilantro. You had a double love there & should have gone in for a kiss. I think she would have been receptive. Especially since that recipe cost you $100. @@Juanelo1946 What color meat was your steelhead? For some reason they come in two different colors. Red & white meat. Red means they eat mostly crestations & white mostly eat fish. I have had both & zero complaints about either. Both taste great.

OMG! I don't remember, but I think it was white inside and silver outside. It was 34 years ago! LOL! I remember we cut slits in it. I think we seasoned it and drizzled lemon and butter on it. Then we grilled it. I just remember Lulu and I thought it was sensational! Very interesting about the crustaceans vs fish diet!

Hi Mike! I was lucky to get some nice bluegill this day. I haven't caught a crappie in a long time. There aren't that many in the lake, which is a good thing for a pond, say the biologists. But the ones I get are apt to be huge. The raccoons love them! LOL! I'm sure you know lots about enchilada sauce! There are several other ways to do it of course. This one was from a Mexican family originally from Brownsville TX. Their restaurant was our favorite for decades! Pero, déjame decirte, es siempre muy sabrosa! Wonderful, simply wonderful John! I stopped smiling long enough to do a quick analysis of why your shows are so fetching. Of course the content is consistently great, including the excellent Gills, Bass (or whatever else Lake K surrenders) as well as the taste tempting recipes you masterfully prepare at Che K/humble hovel/dilapidated double wide. The underlying reason is that the stories appeal to linear thinkers like yours truly. Hi Stef! Oh no!!! Lulu and I both get so distressed when the power is out, or even when it's just the internet that goes down. So I can feel your discomfort with the situation. I sure hope all is back to normal and stays that way. I knew she was looking forward to enchiladas the week before. I had led her to believe that I might serve them. So this week, I just had to make them. The weather in this video was lovely indeed, but that bright sun and blue sky actually makes fishing tougher. I was lucky to catch what I caught. Sun doesn't bother me too much. My dark complexion makes it more tolerable. On the other hand Ms Lulu hates bright sun. Yes, I do know how to swim, 😊. I'm not very good at swimming per se, I hate getting water up my nose, but I can tread water for hours, which is somewhat comforting. Oh my, that looks so good.... but allergic like crazy to msg.... really... I get all stoved up, can barely breathe and hic-up continuously for about an hour... I am the silliest looking thing you ever seen... sitting there, one hiccup after another as my throat starts to close up... usually a quick couple of glasses of water will calm things down and at worst some Benadryl and all is well... so any thoughts on replacing the tenderizer? lol... That look of love from Ms LULU right at the end and that sweet little laugh just made my day. You two are just a perfect pair. Hope you have a great week sir. Looking forward to next Sunday when you post another video.

Hi Bill! Oh no! MSG is not good then. What you go through sounds awful!! Maybe you could substitute something with a lot of similar umami flavor, like one third or one half cup of soy sauce? With this large quantity of chile sauce, that much soy should be OK, and you probably wouldn't need to add much or any salt to the chile sauce. Aww you're so kind! Hi OutdoorsMan! As you know, I'm doing low carb. This recipe is borderline keto friendly. I used low carb flour to make the sauce. The stuff has only 1/12 the carbs of ordinary flour. I used tortillas with only 3 net grams of carbs each. The onions have a few carbs, but that's it for carbs! You might be OK with this! Hey Pop. Hey Mom. 84 may be hot there but here I would be shivering at that temp. Its starts at 90 at 7 am and by noon it about 115 F. Now that is HOT no matter the Humidity. Feels like walking around in an Oven. Aside from that is is really nice here. People from all over the world work here and we all have the same Mission, to keep our Embassy here in Iraq working at its best. This is a very unique place to be but I actually like it. Almost everything here for me is free. I got a nice room, all the food and drinks I want... I do have to pay for my beer but that is about it. Free washers, dryers, and the like. Work is easy and the pay????? I can't make this money in the US. Just wanted to keep you up to date. Oh, the palm trees they have here a Date Palms. Love you Mom and Pop. Also, since it's tied to one side of the boat, it makes the boat want to turn to that side! LOL! You are darn lucky to make the Enchiladas and keep the promise, Tocayo! There is a hair trigger to the fairer sex, you know :) $100? A bargain at twice the price! That's the same place I buy Mexican chorizo at; Spanish, I have to order online. Beautifully pudgy thick and loaded enchilada rolls, Juanelo. Wow. Just love them! That sauce looked gorgeous ladled on top. Then cheese....yes! Send me a container of that lovely sauce and I will make and video chilaquiles in your honor! I just finished making a six tray dehydrator of beef jerky, so that would be perfection! Oh, the de-foiling was elegant and excellent. Adding more cheese was brilliance! Hi John! To tell you the truth, she was a bit upset when she saw I was making fish again the week before this. She had her heart set on enchiladas! So I just had to make the enchies! Oh yes, I've had the recipe for ten years now, and I've gotten my money's worth many times over! I often see Spanish chorizo here in our local supermarket, but for Mexican, I have to go to Walmart, a bit further away. I wish I could send you a container of the sauce, but it's frozen... and well, you know, I did you one better by giving the recipe! And with your cooking skills, I know you'll improve on it! I'd love to see you make chilaquiles! I have yet to try making that. Mmmm beef jerky! I love that too! Ms. Lulu loved the sauce and the enchiladas. I had her rolling her eyes with delight! You are so welcome! I recently saw a video where they made chilaquiles. Now that's a traditionally breakfast or brunch dish so I assumed it had scrambled eggs and refried beans as a n option on the side. No! Apparently dried, salted beef (aka beef jerky here in the USA) is added in smallish pieces to the chilaquilas in one of their many variations. So, having never heard of that, it intruiged me. I pulled out a chuck roast from the deep freeze and made jerky. I am ready for chilaquiles tocayo! I will probably make them this weekend. All our best to you two!

Great video as always! I was curious if the bluegill usually bite when the lure is falling or when you are reeling the lure back to you. It's difficult to see your fishing technique with all the catching going on. I wouldn't mind seeing a couple complete cast & misses on the video just to see the fishing action. You make the catching look WAY too easy. I suppose you do make up for it by LuLu always getting off the hook. Keep up the good work!

Hi Rashid! The bluegill usually bite when the lure is dropping. You will feel the slightest peck or "tick." That means the lure was sucked into the fish's mouth. But now and then, they'll cross you up and grab the bait as you're reeling and taking in the slack line. Someday soon, I'll show the whole cast from start to end, even though I catch nothing. Some people tune in just for the cooking part (like Ms. Lulu). They don't want to see the misses. Their eyes gloss over even watching me catch a fish! One of these days, I'll hook her for good! Hey Pop. Hey Mom. 84 may be hot there but here I would be shivering at that temp. Its starts at 90 at 7 am and by noon it about 115 F. Now that is HOT no matter the Humidity. Feels like walking around in an Oven. Aside from that is is really nice here. People from all over the world work here and we all have the same Mission, to keep our Embassy here in Iraq working at its best. This is a very unique place to be but I actually like it. Almost everything here for me is free. I got a nice room, all the food and drinks I want... I do have to pay for my beer but that is about it. Free washers, dryers, and the like. Work is easy and the pay????? I can't make this money in the US. Just wanted to keep you up to date. Oh, the palm trees they have here a Date Palms. Love you Mom and Pop. Stay cool and keep on Fishing.
