Always great videos, and this one does not disappoint. Hope you keep trying with Ms. Lulu. I planned to go fishing today, but snow and 18 degree temps kept me in the house instead. What a great enchilada recipe! I keep trying your slip bobber method with my grandsons, but nothing yet. The five-year-old gets impatient, and wants to try something different I will let you know.

I've got a few videos of me fishing in the snow, and it's a bit like torture. 😆 You would love this fish enchilada recipe. I guarantee it! Keep your bobber and bait moving with a twitch now and then. Oh,those beautiful Crappie! Me and Mawgwe just love seeing them. That Perch was a thing of beauty too. We have Crappie moving up the creek channels now. The white pelicans have come. They,re migrating. So pretty. Somebody loaded in eagles here,so they,re pretty hard on the pelicans. We went up in the mountains last week. Theres a church built out of a boulder. The man who built it is buried inside. Theres a mountain town called Mentone,Al. Just love it there. They have boulders right in the road . You have to be real careful driving. Desoto Falls was beautiful too. We made fried chicken today. Our son watches your show with us,and he said,isn,t he going to use peccarino romano? And then you said it. Give that little girl a hug from us.

Exotic Cream Cheese that's imported no less is very hard to find so I knew this recipe was going to be epic! Hi Booger! Haha! A crappy start for sure! You know, crappie aren't my favorite fish, but put into this creamy, cheesy enchilada recipe, they were good! Try this recipe if you ever get a chance, but make sure you use exotic, imported cream cheese! 😆 We camped on a remote island up in Algonquin Park, Canada, long ago. We watched the loons. I'm not that looney. I can't swim, dive, or fish that well. So I'll take her wisecrack as a great compliment, thanks to your positive spin on her words. I love it! She'll be mine very soon. Hahaha, John. It's always a great show when the ending zinger is a doozy! That grub was really good in Lake K and I imagine your water was getting cold on 1 November. It looked to still be stained which is a clue that the fish will still be in fairly shallow water. Nice group of four species too. Oh, my..one and 2/3 pounds of filets with a small number of panfish is excellent. Rachel Ray would be proud of your ability to recreate her enchiladas de pescado masterpiece but I'm guessing yours were even better with the panfish and bass filling. Miss Lulu gave the dinner a great review so she surely understood it was time to recall her nut job comment. Oopsie, you graduated to total loon! Hi Don! I don't remember what the water temperature was this day, but for sure it was cool. So I thought I ought to use one of my hundreds of 2½ inch Shad Grubs. That's the size that attracts all species. Although none of the fish were monsters, the strategy paid off, and I caught plenty for dinner. Yes, the water was a bit stained, more so in the southern half of the lake than the northern half. This was due to heavy rains and runoff from the feeder creek the day before. I have to say that Rachael Ray hit it outta the park with this creamy, cheesy fish enchilada recipe. Her recipe called for halibut, but I think you're right, fresh water fish were at least as tasty here. The next time I seek a second opinion, I will NOT announce my plan in front of Ms. Lulu, lest she provide me with one! Ah, but the hug makes all the abuse worthwhile! Hi Anthony! Luckily the temperatures were still above freezing, so I could fish without problems. The fish don't seem to ever mind the cold. The knife flip has become a fun routine that I dedicate to you. 😊 Crappie seem to have a mushier texture and a drier, mealier taste than the other fish (for me at least). Hi Steven! Please try this recipe if you get a chance. I promise that you'll love it. If you're fishing small ponds, keep your baits small. Try a 1/16 ounce lead jighead and attach a 2" twisty type plastic tail to it. You'll catch fish! It's very nice of you to watch the video and leave the great comment my friend!

Bought my first baitcaster today and my first cast it backlashes and was unable to be fixed. Spent 4 hours respooling and practicing in my backyard. Then what do you know last cast at the lake and a 5lb bass. Love the video and just wanted to share the story!

Another great vid as usual Juanelo you and Lulu always a joy to watch, and I'm jealous of your private lake, it's a beauty! (I write dates on my Cream Cheese too👍 ) I'm gonna try this one for sure. Looks like you were using a pretty sharp knife to do the slicing inside the avocado, great technique btw, may I suggest just a regular blunt table knife to do that job once the 'halving' is done and the pit's removed. I find they do just as well but no danger of a mishap. The ER's actually have coined a term for a common injury called "avocado hand" ...it can get messy real quick. I keep all my cutting knives like razors, (it's kinda like every gun is loaded), but a dull butter knife will do that inside avocado slicing just fine.

Hi R.L.! Often I have more than one box of cream cheese in the fridge, so it's hard to see which one I'm supposed to use up first! 😁 I hope you try this recipe. Rachael Ray hit it outta the park with this creamy, cheesy, rich, fish enchilada dish! Thanks for the great tip on slicing the avocado. I was using an ancient steak knife for this, but even so I could see how it might penetrate the avocado skin and damage my hand underneath it. Just google 'avocado hand' and you'll see right away, it really is a 'thing'. Since you clean fish so well, the images probably won't upset you too much😉.

Recipe looks great! I agree with your assessment of crappie, and the other species...perch #1, then bluegill, bass, and crappie bringing up the rear...really not a whole lot of difference between em, but i think crappie are overrated...i dont understand why so many people rave about em, and put down bass...keep up the great work!👍👊

One guy even called me "unAmerican" for not liking crappie enough. 😁 Crappie are just a bit drier and mealier than the other fish you mentioned, which are more tender-sweet, and that includes bass. What does it look good again friend, have tried so many recipes from you and they are all equally tasty .. I replace the freshwater fish for fish from the sea (my daughter has a fresh fish shop) but we enjoy the food every time we make something ,but we will certainly make this enchiladas .. only I don't like advocado .. what would I be able to swap with zucchini or something? Hi "old" afdb from The Hague! I remember that your daughter has a fish market! That's wonderful! The recipe I found originally called for halibut "or other firm white fish." So of course you can substitute your favorite fish! Rachael Ray created a great recipe when she came up with this fish enchilada idea. It was delicious! The avocado chunks on top were only a garnish, and they could easily be left out. Your enchiladas won't suffer a bit! I appreciate your watching the video and leaving the very nice comment my friend! Hi Stef! I would probably fail to identify those two cheeses correctly in a blindfold test. But they say that pecorino Rrrrrrromano has a stronger bite to it, and is made from sheep's milk as opposed to Parmesan (Parmigiano Rrrrrrregiano) which is milder and made from cow's milk. To me, they're both delicious. I have to say that Rachael Ray hit it out of the park with this fish enchilada recipe! It turned out wonderfully creamy, cheesy and rich. As speechless as she was with my meal, Ms. Lulu managed to gathered her thoughts together well enough to hit me with yet another zinger. Ouch! You be careful in this snow too. lol...She got u, again! ...We r not fans of Rachel Ray, but those enchiladas would be better with corn tortillas. They look a bit bland on top. Could use some paprika in the mix and some pepper or chopped roasted bell peppers or pimentos for some color and flavor. Glad u put in the cilantro. It is getting colder now. Stay warm!

I found this recipe while searching for "fish enchiladas" some years ago, not Rachael Ray. 😊 We loved the recipe because it was creamy, cheesy and rich. I really like your great suggestions! We prefer corn tortillas too, but they're a bit too high in carbs for my low-carb show. The paprika, pepper, chopped pimentos (or peppers) are great additions! It's snowing here now! Brrrr! Hi Amanda! Sorry, no eels. The dominant species in the lake are bass and bluegill. So it's a challenge to target catfish, crappie or perch for a catch and cook. In this winter-like weather we're having now, I feel lucky to catch any kind of fish. Maybe in the spring I can be more picky and consider your suggestion. Hi Curtis! I hope you or your wife try this great Rachael Ray recipe. It's very creamy, rich and delicious! My favorite bluegill lure shows up in several of my videos. It's simply the 1 inch body from the smallest Beatle Spin lures. I hook it on a tiny 1/32 ounce lead jig head. I cast it out, let it fall, and wait for the tap! Hi dinty! It's a matter of taste and therefore difficult to explain. To me they have a drier, mealy taste; whereas bluegill have a tender-sweet taste. In these creamy Enchiladas, the crappie were just fine! 😊
