A lot of fishermen don't know just how aggressive flounder are. I have had the exact same experience as you while fishing as a young man off the jetties off the end of Matagorda peninsula. I had a huge flounder come up from beside the rocks and hit a red plastic I was fishing. After that, I routinely cast around the rocks and caught many flounder like that. Of course, I lost a lot of lures that got caught on rocks too. :)

I love to use a Carolina rig with circle hooks with live bait for flounder! Also if ya want heat...take the peppers and cut out the seeds and the placenta of the pepper. Next take the seeds/placenta an put them in a blender or coffee grinder an add some oil...Olive oil ...With a clove or two of garlic and grind it down... Add that to your veggie mix....Give it a shot... Great video

Thanks for the great video Cooper. Coincidentally I was at mantanzas Inlet today, near St Augustine Florida , and the mullet were in there like crazy. Every cast net throw caught Lots. You can almost catch them with your hands! Tons of birds and things blowing up everywhere. I caught my first two flounder today so kind of weird maybe I'll try that ceviche

Love the videos and enthusiasm. Great flounder catch. Ive fished them for 40 years now. Might want to check recent regulation changes though on that treble hook. They are basically out for game fish now a days. Florida for sure which is where I am. A buddy in Galveston invited me to come fish the run and told me no treble hooks allowed. You mentioned you havent targeted them with hooks and live bait so just looking out for ya.

Next step up from a habanero pepper is a scorpion pepper. I would recommend drying it out, Then grinding it into a powder. It works well with fresh juiced mango. Adds heat and a nice sweet after taste.

Been here for a long time but been a while since I have watched any of your stuff. Getting gear ready for cooler water in NC. Lived in South Carolina in the Charleston area. Carolina rig was the only way I knew to fish for flounder. Ran into a dude fishing rocks old chunks of concrete bridges etc. Look a lot like where you were dropping it right beside the rocks. He showed me how he did it. Certain times those flounders lay sideways on the rocks and in the crevices. Hey do you say Bing split shot and a small orange cork . The type you would use in a farm pond for sunfish. Wait on the bottom cork and mullet or mud minnows, shrimp, bait of some sort. The wait would keep it near the rocks in the court would elevate it up where the flounder were. Certain times. Not all year. In the off times when you’re not too confident. They are there though. Some nice ones sometimes. Used A j Hook but I would switch it up and use a kale or some sort of largemouth bass hook with a little twist in the shank . What is a good technique when nothing else worked During our water temperature or seasons. Take it easy

I heard that the dots on red fish tails are a defense mechanisms against predators. When fish hunt they attack the tail end of the fish to disable them. The dots looks like the eyes so when the preditory fish attacks, it strikes the tought part of the body (head gill plate) increaseing its chance of escape.... i had caught a couple of reds with the same exacte strikes on its body...
