Wish I lived near you, you could teach me all the great Italian peasant foods I never learned growing up in my Italian family. My heritage is Neapolitan and I’m very proud of it. I love your accent, used to it with my aunt Louisa, and miss her greatly. We talked about recipes all the time and she was a wiz at throwing anything together and created a mouthwatering dish. Her accent was just like yours. I cook as much Italian as my waistline allows. I make sauce and fresh pasta, pickled eggplant, cannolis and pastaciotti, etc. I love to cook and bake. I’ll bet people are always wiggling a dinner invitation from you. I always refer to your videos when I want to cook a great Italian meal.

I love Baccala (cod fish), my mother used to make it every Christmas Eve with onions and potatoes and usually only made this dish on the Christmas Eve Fishes Dinner.

This was seriously one of the best dinners I’ve ever made. I paired it with some buttered fettuccine, and topped the fish and the noodles with the sauce and parsley. It was so delicious 🤤 I also made his eggplant parmigiana, which was good too!

We made the Acqua Pazza Recipe (Crazy Water Cod Fish) yesterday and we liked it even better than the Cod in Puttanesca Sauce Recipe that we really enjoyed and have made twice before. We thought it might be too salty but it was not. We also thought 1 tsp. of red pepper flakes would make it too spicy but it did not. Our new favorite cod fish recipe. Thanks Pasquale!

As a former Jersey girl growing up in an Italian neighborhood, Bloomfield NJ, I really miss the "flavors" of my childhood. To me, anyone who had an Italian last name was automatically a family member. Watching Pasquale cook and especially speak with his accent absolutely took me back to happy Childhood Days! Cook on Papa Pasquale! I just found your Channel, sent to me by my half Sicilian daughter who only identifies as Italian. She's a cook, too, so we'll be absolutely cooking some of Pasquale's vegetarian/pescatarian recipes! Mmmm...yummm...
