That poor baby is crying his heart out. 😔 Dear Becky, we dont mind, if you make a cut and go take care of your baby. We will watch whatever you post and it doesnt have to be perfect or cut in to 2 videos, whatever, your baby goes first. I dont even know how you find time to make videos with that small child. So, we are thankfull for ever you post.

As someone who does almost 100% of cooking for me and my bf, I really love it when it is appreciated. I have a regular job, but I work from home, so I am able to fit in some bread making, meat braising, etc. Cooking is my love language and it's just wonderful when this language is understood.

Have you tried freeze-drying half and half to make your own powdered creamer? I think that would be an interesting "experiment." If it works then you also have that on hand for the next pantry challenge

I can recommend that you can can up half and half to make it shelf stable. I have done it and it works fine in an emergency like being snowed in. Also, my Mexican mother in law would dip the tortillas into some of the sauce and cover them with it before putting it in her casserole to make sure they did not dry out. She always said it was worth the step to keep them soft.

Don’t forget Becky to total up the amount of half and half used in 2 months so next year’s challenge you can be prepared. ( I froze mine and it was fine for the challenge although I wouldn’t recommend doing baking or whipping it)

I keep powdered buttermilk and whipping or heavy cream in stock for emergency cooking and baking. I purchase fresh for meal planning and baking etc. Of course I do freeze sour cream etc. as well as shop and use frequently in meals. I freeze butter as well. 😊

@@cynthiafisher9907 I would assume adding freezing moisture would make it even more unstable than it already is ( it doesn’t whip and hold long because of moisture content)

It's so great. She may also be trying to clear prerecorded content from when she had the baby so those recordings may be sprinkled in as well pushing us a bit in time. She's probably trying to get us caught up to real time again. Or it was a slip of the tongue mentioning February and she has spare time while being snowed in. Either way I'm so happy with the extra uploads for now.

Becky.. Thank you for putting yourself out there. Social media can and is a daunting challenge these days, but you navigate it with class ,style and kindness. I am a retired ICU nurse who spent 18 years working in a large PNW teaching hospital, homeschooling my daughter and twin boys, and eventually started teaching Biology and coaching Science Olympiad for our local homeschool ❤co-op. In 2007 I was completely disabled. While I am wheelchair bound, and can’t garden/ preserve food/ or make freezer meals to the extent that you do. That’s ok, I do what works for me and my physical limitations. When I make a recipe that is freezer safe I double it. I made a spice garden in pots on my backyard patio last year. …and just ordered 2 Greenstalks for growing tomatoes strawberries etc, because I realized I could. YAY!!! Thanks again for inspiring me to get out there and do what I love. I may be in my 60’s but you teach me new things almost every episode. Thank you again for sharing this adventure we call life, and for being your genuine self …I feel blessed watching as you and Josh make your homestead into your dream. Blessing!!

Being snowed in here (Michigan) is normal twice a winter for me. I learned from a young age to be prepared. Sometimes the only way we can get around is on a snowmobile or four-wheeler. Every year from November until March is a pantry challenge for us.

Forgive me if I'm wrong, half n half is cream and milk? We dont have it in the UK so might be wrong. Why dont you freeze dry some milk and cream and make your own half n half powder, then you can rehydrate some whenever you need it - no more panic!

Becky you can make all purpose flour into bread flour by adding vital wheat gluten, . Per every cup take out 1/ 1/2 teaspoon add 1 1/2 teaspoon of vital wheat gluten. Take a whicxk & mix it.. No need to buy bread flour.

@acrehomestead anytime you use corn tortillas in casseroles, tacos or tostadas heat them on your cast iron skillet or griddle. Game Changer!😉 This includes flour tortillas. Breakfast burritos heated on a skillet. Wow do half the time in microwave to heat the inside and the second half on skillet. Preheat 😻

Hi Becky, I use Mockmill 100 to grind my flour. It does it with stones and the flour gets nice and fine, or you can also grind the grains coarser if you want.

I have the same and though I don’t use it a lot.. I love it. My psoriasis gets worse when I eat whole wheat products but I can eat fresh ground whole wheat. But alas, the fiber even after sifting it, is hard on me as a colorectal cancer survivor. But I love making the occasional bread or biscuit with freshly ground wheat. It’s so delicious. The only thing about the Mockmill 100 to mention is you can’t grind up certain things that are oily. I think that is the right info. Like don’t grind coffee beans or anything but wheat or barley etc.

@@lbacaterpillar Yes, they don‘t recommend grinding oily things in it, or else it gunks up. It can be easily taken apart to be cleaned though, and grading rice cleans it too. Regarding the bran stuff not being ok for your gut, did you ever try grinding buckwheat, millet, quinoa? The mill does it perfectly fine, and these gluten free grains/seeds might be gentler on your gut. You can make pancakes with it for example. Or even gluten free bread. I don’t know, of course, your dietary restrictions, I myself have some issues with gluten, so I explored other options, like Emmer and Einkorn. I like Emmer better for it’s easiness to work with, and better digestibility. And for gluten free bread, I am experimenting with a mixture of buckwheat, millet and some starch and psyllium husk for binding. And it turns out great. And it is definitely easier un the digestive tract, especially because of the psyllium husk, that has fibres. But I digress. If the fibre from the bran is causing you issues, maybe look into improving the intestinal flora. That is highly underrated and so very important. The yeast and bacteria there feed on that fibre and give us back nutrients and other good stuff. I try to eat as many sources of fermented food like kimchi, sauerkraut, kefir, all homemade. Hi Becky!! Thank you for your inspiration in the kitchen, garden and all around. I just wanted to bring something to your attention. The dough hook for your mixer is starting to lose that enamel coating, I had the same problem and just babied it, not putting it in the dishwasher and washing by hand. My last batch of bread ended up having many different size flakes of that enamel, so I ended up having to through all that bread out much to my disgust. This is not a new issue with the KitchenAid utensils. I have to get a new one. I like the shape of the enamel coated one and have the orginial that came with it, but surprisingly it mixes dough differently. Many continued blessings to you and your family!!

Becky, you can freeze dry some 1/2 and 1/2 for those days when you run out and aren't able to get out. Look at MockMill for your grain mill.

With all the food you have both in the freezer and in your pantry and canned goods you could be able to go 6 to 8 months or longer with out going to the grocery store.

100% suggest rubbing the garlic into the dough before the other toppings or even as you roll it. I make it that way all the time. So excited to see the enchilada casserole! Tempted to try that with chicken and cheese and salsa Verde!

You could make what I call "stirred up stuff", with your leftover sausage and onions, just add peppers, potatoes and scrambled eggs.

Becky, I love watching your shows with my wife. This video is another example why I believe your videos would be so much better with a wireless lavalier microphone. The echo of your voice in your kitchen competes with what you are saying. And when you are close to the camera and there is little or no echo picked up it is so much easier to hear what you are saying. There are so many to choose from and some are quite inexpensive. You might ask your subscribers if they feel this way too but I'm sure it would be well received. You could even make it part of your content and say it's a trial for a week and ask for feedback. Thank you for considering this.

I was just going to make stromboli this week, I make them differently-yours look so easy, I am going to make them that way!! They look delicious!!! As usual, an inspiration!! Never thought of using pesto sauce! And, even though I have 3 freezers, and lots and lots of home canned things, I am not doing a pantry challenge, but I have been motivated by you to definitely "shop" from my food storage!! It has helped immensely and saved us money!!

Have you thought about freeze drying some coffee creamer for next pantry challenge? I know that it's a higher fat product but I'm sure I have seen others do it. It just wouldn't preserve for a long period of time. I should have my freeze dryer in a month or so and will be doing it for myself. So excited!!!!

I have a Mockmill 200 flour mill, and it is AMAZING! I found that there is less dust, and the flour can go directly into your bowl. Less things to clean 😊

Pam here….couldn’t you use evaporated milk for your half & half. I actually love a little sweetened condensed milk in my coffee, I had that in Spain and it was sooo good I make that for a dessert coffee with company…a really good dark roast or espresso and a dollop and SCM…YUM YUM YUM. And both are shelf stable in cans and the SCM will stay for a long time in the fridge because it has so much sugar in.

I decided not to go to the grocery store for a month. I cleaned my freezer out it was so nice to not waste money throwing so much meat out. I normally would go to the grocery store every 2 days because our stores have daily sales but I'd end up buying more than just that.

I use the wondermill grinder. I love it because it has different setting for grinding for bread and for pastry. Have had it for several years and don't regret it!

Becky, Do yourself a favor and buy yourself a replacement dough hook for your tilt head kitchenaid mixer I got the stainless steel “S” hook. It works SO. MUCH. BETTER. than the traditional “C” hook. Trust me. It’s a game changer!! Mixes and kneads so much better

Becky, have Josh look into getting a snowblower for the tractor. We live 1/2 mile down in from the main road up here in Maine and the snowblower is necessary to keep our road open. We do also have a truck with plow, but without the snow blower we wouldn’t be able to keep it wide enough for the winter. 😀🦋

I have a Mockmill 200 and I love it. I store my grains and mill just what I need for a recipe. Grains have a much longer shelf life compared to flour.

My grain mill is almost as old as I am and I can definitely recommend something of high quality because you have it your whole life. A good grinder in particular pays off in the long run. I'm from Austria and I have a Fidibus Classic with a ceramic grinding stone. But be careful, once you put your hands in fresh, home-ground flour, you fall in love.

And this is exactly why everyone lucky enough to have the means should have a deep pantry. I began an emergency pantry/prepping after the Texas debacle, which resulted in hundreds dying of hunger and cold, a situation now being replicated in CA. NPR hosted a program two summers ago about why every single family should have several weeks (months are better) of food put up/stored/frozen for emergencies. Unfortunately, our climate crisis and global strife ensure that such steps are necessary. None of the dozen experts they had on fit the stereotype of the End Days fanatics. These were farmers, agricultural experts, public policy wonks, and historians pointing out that our species literarily survived and thrived because it learned how to store food for lean times. But this was so much fun to see Becky whipping up yet more surprises and extending her already an amazing challenge. Bravo, Becky! You did it in style!

I love my Country Living Mill. I’ve had it for 30 years and it working just as well as when I bought it. This is a manual mill that I motorized.

I love your channel! You are a huge inspiration for me! I have a Nutrimill Harvest Stone Mill, and I love it❤, but others seem to have a learning curve with it and switch. I am looking into adding a Wondermill to my arsenal, lol. Not sure when that will happen, but I have my eye on it! But, I also used to have the kitchen aide mill attachment and hated it! It overheated my kitchenaid and it was so coarse. I am sure you will enjoy any grain mill you get! Can't wait to see what you choose! Thank you for what you do Becky!

Your shelf stable cream has been very handy for you. If (when) you are snowbound again, you could use it in your coffee, straight or maxed with milk.

Hi Becky, I highly recommend the Mockmill 100. I have the Mockmill Lino 100 which my husband chose for how attractive it looks on the counter. I love that it is slim, youcan adjust the coarseness of the grain, and the mess is minimal in that the flour shoots straight into your bowl. I have even ground course salt into a more usable size, as well as soft white wheat berries into a course grain for cream of wheat! Got that idea from Felicia at Grains and Grit, great resource as you experiment with milling wheat. Great job! 👍

Be a good idea to cut Stromboli into thirds before baking, after cooking then cut in half! Happy Anniversary! Made the lasagna today yummy I broken up tostadas that was get old so I broken them up and baked them ,then layered in casserole, which replaced the corn tortillas it was a hit, drying out croissants for bread pudding now! For breakfast in the morning with vanilla sauce!

Just recently bought a nutrimill classic. I really like it. Primary criteria were speed and the ability to grind corn, as I grow my own flour corn. I have an older different brand with stone milling plates and it takes FOREVER to grind a pound of wheat. Very happy with the nutrimill.

I also extended my pantry challenge but for another reason. Since it is only 2 of us and I work out of the house during the week, my dinners tend to last at least for 2 nights or more. So I will be going until I have gotten at least 60 meals. I have forty so far so 20 more to go. With all the good suggestions in this challenge and mark it march, I still have some additional meals to try and make to get to 60. I have been using dehydrated fruit for my smoothies and oatmeal.

We do over on the north central Washington side. Mission Ridge Ski resort is going to extend season due to the extremely heavy snowfall this year. I think by listening to Becky she has mostly experienced rain rather than snow at the former home. This altitude and growing zones change very noticeably in just a few miles maybe. ? I live in the Wenatchee Valley. It is almost always a good amount of snow here.

I've learned so much from watching your channel and I'm very thankful for you! :) I have a KoMo Fidibus XL mill and I absolutely love!! I decided on the Fidibus XL due to the higher wattage motor. Since I started using whole berries, I've been baking 5 out of 7 days per week simply because I'm trying different berries and learning how to handle them. We have several friends that I drop baked goods to in order to get feedback, because we can't eat all of it lol. From my dent corn to my wheat berries, everything comes out great. Keep up the great work and congratulations on your baby!!

You should try cashew cream for your decadent coffee habit… (raw cashews and water1:1… mix it up in a vitamix). No nut milk sediment … no straining … etc. it’s a great option I love when I’m out of soy milk.

Many comments on freeze drying half and half. It freeze dries well but don’t put powder directly into coffee. Reconstitute some first using warm water and a blender. I’ve used my vitamix but an immersion blender works well and less clean up.

Hello Becky from Northampton England. It is Mother's day here today (19th March) so Happy 1st Mother's Day to you. You have been an inspiration to me for the passed couple of years and this is my second go at pantry challenge. This year I have come to realise where the gaps are in my store cupboard and what I just don't need to store so much of to the extent that I have extended this challenge to the end of March! I am getting very creative with recipes thanks to your input. On another note please please show us more of the snow when you get it. Here in Northampton we rarely get snow of any quantity. I will be 60 this year and snow never fails to bring the child out in me........quick get the sledge.......I saw a snowflake!

​@@sharonhernandez3555I have freeze dried half and half, buttermilk, and whole milk in my pantry right now. It freeze dried perfectly well. Due to the higher fat content, it won't be as shelf stable as other things, but it goes into coffee okay (I have to blend it into my coffee to get the texture right when reconstituted, but it ends up frothing it at the same time, which makes me feel fancy).

Hi Becky, love ur videos! FYI: u may want to replace ur dough hook 4 ur kitchen aid. The paint seems 2 b coming off & as a fan of the channel I know when baby acre is able 2 eat solid food u will b making home made items. Just a little “food for thought”. you know what i dont really understand the rules of pantry challenge but i have surplus of stuff in the freezer and cabinet and im going to see how long i can go without grocery shopping for food. all we bought this week is cat food and drinks for us im kind of excited about it!

I think I see a snow blower attachment in the future for Josh's John Deere tractor! What we midwesterners do for snow removal here in the Minnesota/Wisconsin region is clear our driveways and roadways repeatedly throughout a snowfall, like at about every 4 inches of accumulation until it stops. Then we clear it one last time at the end of a snowfall. I'm sure it sounds tedious, but this is the best way to stay on top of it. I worry what you would do if you had a health emergency, like with your new baby if you could not get through three feet of snow. Or if you got stuck in the snow attempting to get out. Especially with your long driveway. Don't let yourselves be put in that position. ❤️

That is a good idea, I will tell my husband about it. He had to snow plow 4 feet and he is 70 and is getting too old for such heavy work.

Becky fyi I have the same kitchen aid mixer. The mixing attachments have been linked w lead and they chip. I read about this online and opted to replace mine with their metal ones for safety reasons as the chipping made me nervous that they would get in my food

Sidenote your dough hook for your KitchenAid has the enamel coming off of it which is not safe if I remember correctly They will replace it with a stainless steel one for free! I watch another channel's cooking videos and they explained The process I just can't remember who it is. Thanks again for taking us along in your kitchen and on your journey 👩‍🍳😊💕

I highly recommend a Country Living mill for grinding flour. They’re a little on the pricey side, but well worth the investment. They’re kinda heavy though if you aren’t able to keep it affixed to a surface, but otherwise imo worth it. We grind wheat berries a lot with ours. Your Stromboli looks amazing! My husband was asking when I plan to make some. Lol I think I’ll make some tomorrow. Thank you for giving inspiration in the kitchen and taking us along with you on your cooking adventures. :) we love watching your videos!

Seal your grout. It must periodically be done. Properly sealded grout will drastically ease clean up.

Thank you for the video Becky. I've learned so much about cooking and saving money. I'm not able to participate in the pantry challenge but I have been doing freezer meals myself which has been interesting and very tasty. I can relate to your snow situation since I previously lived in rural community in CA with 4000 feet elevation. Hang in there it will get better eventually. My husband said the snow blower may be your best option due to how your driveway is situated. Take care and happy anniversary!!!!

Becky, put your half n half in ice cube trays and after it's frozen put the cubes in plastic bags. You can thaw them out quickly and only what you need.
