My friend wanted to give me a shower when I was expecting twins and was on bed rest (so I couldn't be cooking). So I asked for a freezer meal shower and it was so helpful especially with 6 weeks bed rest and 2 weeks of nicu.

I discovered that splitting a recipe into bread loaf pans or similar size to freeze/bake later or quart size baggies or even quart or pint jars (if I was refrigerating it for use in 3 days) to cook in a smaller crock pot or instant pot meal made just enough for a hearty meal and lunch leftovers for 2-3 of us. Dollar Tree has 3 square plastic lidded freezer containers for $1 or $1.25 that also work well and stack or I bought bulk single/double serving size plastic ware online. I reuse the plastic containers until they crack. I'm trying to switch to glass freezer dishes, but cost...I check yard sales & resale shops and slowly am building my glass supply.

I’m just here to tell you how much respect I have for you! I’m a mom and a nursing student and was losing the “what’s for supper?” game almost every night. I decided to prep 20 meals after getting inspired by you and Holy. Cow. You make it look so effortless! I did the smashed chicken and honey mustard chicken marinades last night, and tonight I made your beef stroganoff, sweet and sour meatballs, and chicken and a biscuit and I am worn out! It actually didn’t take that long though, just a lot of leg work, and I’m so happy I’ll have all that time back, plus some not having to worry about supper for the next month.

We have a special nurse who comes for 8 days to take care of baby and momma and mine always made soup and prepped veggies so we only needed to turn on the stove to cook it. She also cleaned our beds, and made sure the house was clean/hygienic. They were the best and made recovery so much smoother. After those 8 days my husband would take two weeks off to spend time with us and take over those tasks

For meatballls you could also use rice instead of oats. When using rice they're called porcupine meatballs and are a family favorite! We do a tomato soup esque sauce and they are delicious.

I am so glad I am not the only one who has issues in the kitchen :P Most youtubers don't say, I just melted a bag of pasta (they usually edit it out). Your authenticity is the reason why I watch this channel. My family member at christmas time put her food processor into a cold oven to "hide" the mess while people were over. She forgot about it when and turned on the oven.....She literally melted her food processor.

We think the same. We are retired. I always make our favorite meals and divide them into freezer containers for future meals. I have a nice stack of meals to enjoy each with two portions. I can have five or six different kinds of meals to enjoy. I love to cook, but not every day. I hope that people will start doing this no matter where they are in their journey of life. Thanks for pointing this out. We have never eaten out several times a week. We can enjoy our favorites with these freezer meals. I dislike having to rush a quick meal when I'm tired from working out or in my garden. It's encouraging to know that I have one of your good freezer favorites ready when we are finished with work for the day. Taking a few hours to get these made and stored surely changes my mood!

For the first time ever (I'm 59 years old), I had my food processor out and made pie crust (loved it), but since it was out, I had 6 pounds of onions, so I peeled and cut them into chunks, and chopped them in the food processor! I carmelized some, and froze the rest, and I've already used almost all of them! In the past, I would have just used minced onion. I RARELY used fresh, because I thought it was too much trouble. Thank you for showing us, that with a little planning, we can prep onions and peppers, and a lot of veggies, to use in meals when we wouldn't normally have time to do it all the night we need to make something for dinner. Between you and Kim, from THE WADS, you've inspired me to do extra when the mess is already made, to save time and a mess that needs cleaned up later, doing the exact same prep again. In other words, do it once, and benefit from it many times! Thank you for your excitement in cooking. It's contagious, and we don't need a vaccine for that! LoL!

Congrats on the new niece!! That's what I do. If I make certain things I double up and freeze one. Sometimes we split something in half and freeze half. I only do it with some things, not everything. It's nice having a few backups when life gets busy. My dad always says (when you can't find something), "If it was in your ear you'd know!" 😂

You can reuse the sliced open vanilla beans you have. I made two quarts of vanilla 2-3 years ago and when one quart gets about 1/3 used, I fill it with rum and put it behind the other, and start using that one for awhile. I haven't gotten new vanilla beans during that time, and I've given small bottles away as gifts, so I've gone through a lot, but the beans still work (I can tell because I use white rum, which is clear, and it turns brown! You have a lot of vanilla beans in your bottle, so I'm sure you could reuse them several times! They're so expensive, so I feel they shouldn't be wasted. You may be surprised how long they last, especially if you get two bottles going, and keep topping off the alcohol, and rotating bottles, when it gets about 1/3 used.

Oh and the vanilla pods you are using at the min when you finish it if you put pods on tray in oven on a low temp (80 deg c) and dry them out. Put in spice grinder and then you have vanilla powder. Great for use in cakes and bakes

DO NOT get rid of the vanilla beans. Just keep topping off. Add alcohol to the bottle and keep adding beans as you use them. I know someone that has been replenishing the same bottle for aver 20 years could be closer to 30.

I save small jars for sauces/dressings and such for that very purpose, along with aluminum bakeware they can recycle without having to worry about dishes. My family has been doing the pantry/freezer challenge. We had an unforeseen costly surprise recently and grocery shopping has been placed a few weeks out. So we are doing what we can. It’s crazy how creative you can get with the items you have on hand vs items needed for recipes. Can’t wait for fresh veggies and fruits. Those are very missed in my home. I’m a family of four and have teens so therefore we always an extra mouths to feed. Whether it’s friends or boyfriend/girlfriend. It’s been interesting to say the least. Thanks for the inspiration.

Fasting heals. I recommend a lot of research before going over 24 hours, though, if you wish to try it. It can also be dangerous. The biggest concern is having the discipline to start very slowly once you begin eating again. The temptation to eat everything in sight is very real and very hard to resist. Up to 24 hours, you won’t hurt yourself, but longer fasts require some knowledge and care.

May I recommend that you save your old vanilla beans? Just add more alcohol. Gently shake every day. I let mine age 2 to 6 months before use. I've re-used my vanilla beans about 6 times, now. It's the gift that keeps on giving. I make a huge bottle. I call mine Double Bourbon Vanilla because I distill them in Bourbon instead of vodka. And my beans are the Bourbon vanilla beans. Love you!

The Kneady homesteader has a video on vanilla and how to keep using the same beans over and over until they just dissolve. She adds more beans and vodka or what ever type of alcohol she uses. It only gets better everyone says. I have read where some people have had the same bottle going for over 30 years. They just keep adding beans and vodka. I started mine a year ago, and I am going to start a second bottle and just run them both that way. What a nice gift for your sister. The recipes look delicious. Thank you.
