A perfectly reasonable answer for most of the critter banners: blood moons. Remember, most critters (namely bunnies, goldfish, and penguins, not sure if there are more but you get the point) become corrupt versions of themselves and attack the player. The banner defense and attack would still apply to them, as far as I know. A bit too late at night for me to test it at this time, but it's my reasoning on the critter banners.

A long time ago when I used to play terraria on my iPad, I had already pretty much much been placing every banner I got in my base as long as it was unique from the last- plus if I remember correctly It was just filled with clutter and built with dirt. So I just spawned in a giant "building" made from dirt that was filled to the brim with crafting structures and banners.

Actually in calamity, you don't need to go to the abyss, if you favorite king slime lore item it removes 3 defense, so without anything you can get to negative defense

Probably when you break an altar, the game will look at a random spot and see if it has stone that can be replaced with ore; if not, it tries another spot, but after too many tries, it gives up. So in a world with almost no blocks in it you'd need to be extremely lucky for the ore to actually appear. (Luck buff wouldn't help either)
