Southern Family Supper | Pork Chops & Onion Gravy

Pork Chops & Onion Gravy
Ingredients:
For the Pork Chops:
oil for cooking
6-9 boneless pork chops
1 TB salt
1 1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp ground sage
For the Gravy:
Drippings left from cooking chops
1 onion, diced
1 15oz can beef broth
1/2 cup sour cream
2 tsp spicy brown mustard
1 to 2 TB all purpose flour
Directions:
Heat 2 to 3 TB oil in a large skillet over medium heat.
In a small bowl mix the salt, pepper, garlic powder, and sage to season chops.
Season pork chops on both sides.
Add to skillet and cook 3-4 minutes per side, turning down heat when needed, until pork chops are cooked through.
Set pork chops aside and start the gravy.
In the same skillet add the onion and cook 2 minutes.
In a bowl mix the sour cream, mustard, and flour.
Add the beef broth to the skillet and bring to a simmer.
When it begins to simmer add the sour cream mixture.
Let simmer 2-4 minutes and then turn down to low heat.
Serve gravy over pork chops!

We are here in Central Florida and about 49 miles northeast of Tampa and right now it looks as if we may get a cat 3 by late tomorrow afternoon or early Thursday morning. Many in our great state have evacuated. We have family in Tampa and also on Treasure Island but they have evacuated. We are here at home as we live in a lil higher area n we have supplies, generator and our pets are safe too. Fallon I have the perfect pork chop recipe for you to try! It’s so easy, cool your pork chops whatever seasoning you want, keep drippings in pan, sauté a purple onion with some sugar, add 2 cups of whole milk or heavy cream stir in a packet of Turkey gravy add pork chops back it’s so yummy! I cut small yellow potatoes in half boil til soft, drain the water & add a stick of butter and parsley we have that with the pork chops. Delicious!

Yogurt tastes like a gum wrapper metal taste and yogurt leaves a similar after taste. So I wonder if making that gravy with milk instead of sour cream would still be good. 🧐 I thought that was a drying rack! Clever use for it too. The profession I retired from I managed a project for Toyota in which they were setting up a new facility. One aspect of that portion of the project to make the code for the caller ID read Toyota and not just the number. It was super interesting to learn what all goes into that coding. It took two weeks for it to be written and another two weeks plus to work the bugs out of the code. Definitely not as easy a job as one might think. And, girl, it’s not a cheap endeavor by any means also. It’s about $150 an hour per developer to write the code. There was a team of three dev folks and approximately eight weeks worth of work. Adds up so quick.
