Dakouin is a typical Beninese dish, more precisely from the Mono region. This is the dish par excellence of the "Great Fishermen" of Grand Popo.
The ancients tell that the fishermen leaving for fishing took with them a charcoal stove, some condiments, gari (cassava semolina) as well as Sodabi (Palm brandy). After fishing, they prepared the Dakouin on the high seas after having taken the best catches for their meal.
This practice defines the recipe and explains the name which invites you to prepare "Da" and pour the whole "Kouin" in order to "eat at the same time on the spot".
During the low fishing season, but not only for people moving away from the sea and also amateurs, the fish is ideally replaced by the land crab, called "Agoglan".
The Cassava semolina paste prepared for the Dakouin has the particularity of being prepared with the broth in which the fish or crab were cooked. A technique very popular with gourmets and which is now done with other seafood such as lobsters, prawns and cuttlefish.
The cassava semolina should be poured over the warm broth, and not at full boil, to have a less elastic texture.
Equally important, you should prefer a « big fish » and especially « keep your head for the fisherman or the householder ». It is said that « one does not discuss the fish head with a Popo ».
Popo (whose precise meaning and origin is still uncertain) is the name given by Portuguese merchants to the locality and in the 17th century it gave way to “Grand-Popo”.

Le Dakouin est un plat typiquement Béninois, plus précisément de la région du Mono. C’est le plat par excellence des « Grands pêcheurs » de Grand Popo.
Les anciens racontent que les pêcheurs partant pour la pêche emportaient avec eux un foyer à charbon, quelques condiments, du gari (de la semoule de manioc) ainsi que du Sodabi (Eau-de-vie de Palme). Après la pêche, ils préparaient le Dakouin en haute mer après avoir prélevé les plus belles prises pour leur repas.
Cette pratique définit la recette et explique le nom qui invite à préparer « Da » et verser le tout « Kouin » afin de « manger en-même temps sur place ».
En période de basse saison de pêche, mais pas seulement pour les populations s’éloignant de la mer et aussi les amateurs, le poisson est idéalement remplacé par le crabe de terre, appelé « Agoglan ».
La pâte de semoule de Manioc préparée pour le Dakouin a cette particularité d’être préparée avec le bouillon dans lequel a été cuit le poisson ou le crabe. Une technique très appréciée des gourmets et qui se fait aujourd’hui avec d’autres fruits de mer comme les langoustes, gambas ou encore seiches.
La semoule de manioc doit être versée sur le bouillon tiédit, et non en pleine ébullition, pour avoir une texture moins élastique.
Également d’importance, il faut préférer un « gros poisson » et surtout « réserver la tête au pêcheur ou au chef de famille ». Il est dit qu'« on ne discute pas la tête de poisson avec un Popo ».
Popo (dont la signification et origine précise est encore incertaine) est le nom donné par les marchands portugais à la localité et au 17ème siècle il a laissé la place à « Grand-Popo ».
